GRILLED SALMON WITH CILANTRO-GINGER SAUCE
Ginger, fish sauce and honey combine to create a delicious basting sauce in this easy grilled salmon recipe. Look for Thai red chiles in the produce section of your grocery store, or use a green or red jalapeño instead. Not only is this salmon dish delicious, it also takes just 25 minutes to prepare, making it the ideal centerpiece for a healthy weeknight dinner.

- To prepare sauce: Whisk oil, lime juice, cilantro, fish sauce, chile (or jalapeño), ginger, honey, and garlic in a small bowl. Reserve 1 Tbsp. of the sauce in a separate small bowl to use for basting.
- To prepare salmon: Preheat grill to medium-high (see Tip). Pat salmon dry with paper towels. Rub oil all over the salmon. Sprinkle both sides with pepper and salt. Place the salmon on the grill, skin-side up. Grill until the salmon lifts from the grates without sticking, about 6 minutes. Flip the salmon and brush with the reserved 1 Tbsp. sauce. Cook until the salmon lifts from the grates without sticking and flakes with a fork, 1 to 2 minutes more. Serve with the remaining sauce.

- Preheat the oven to 400°F/ 200°C / Gas Mark 6
- Prep the fish - Wash, clean, and pat dry the fish. Season with salt, pepper, and lemon juice.
- Prepare marinade - Blend the marinade ingredients - cilantro, garlic, ginger, onions, salt, pepper, and oil into a food processor, blender, or mortar and pestle.
- Pan - Line a baking tray with parchment paper or aluminum foil for easy clean-up. Spray or brush with oil to prevent the fish from sticking. Pro tip - make sure the fish is dry otherwise the marinade will slide down the fillets as soon as they are in the oven.
- Marinate the fish - Place the fish on the baking tray and spread the marinade over the fish fillets evenly. Top each with a slice of lemon.Pro tip - Alternatively, you can add the fillets to the marinade bowl and leave them to marinate for an hour on the counter or overnight in the fridge
- Bake - Bake in the preheated oven on the middle rack for 15 minutes or until the fish is cooked.
- Cool - remove from the oven and let sit for 5 minutes before serving.Pro tip - Use a large flat spatula to pick and transfer the fish without breaking.

BROILED FISHCAKES WITH GINGER AND CILANTRO
Very tasty and relatively low fat fishcakes via Mark Bittman. These are a tad spicy and are great served on greens or a bun with a mayonaise of your choice, sliced onion and cucumber and a fruit salsa. They can be made in a counter top grill like a George Forman, adjusting cooking time for the fact that both sides are cooked at once.

- Boil the potato in salted water until tender but not mushy (or bake the potato until tender but not overly soft).
- Place the fish in a skillet which can be covered and cover the fish with salted water.
- Bring to a boil over high heat, turn off the heat, cover the fish and let it poach in the water for ten minutes.
- Transfer the fish via slotted spoon to a bowl.
- Peel the cooked potato and add it to the fish and mash the two together.
- Preheat the broiler.
- Add the seasonings and salt and pepper to taste to the fish/potato mixture and work the mixture with your hands until well blended.
- Shape into 8 equal burger-shaped patties.
- Brush the patties on both sides with the oil and place on a non-stick or foil covererd cookie sheet.
- Broil about 4" from heat source until nicely browned on top--about 3 minutes; then turn and brown the other side.
- Serve hot garnished with lime wedges and additional cilantro.

BROILED SALMON WITH CILANTRO AND LIME
This is really delicious! I love the combination of the fresh cilantro, lime, and garlic. And to top it off, this recipe is lowfat!

- Place fish on plate.
- Combine cilantro, garlic, lime juice, oil and salt in a bowl.
- Set 2 tablespoons aside in a separate bowl.
- Pour the cilantro mixture over the fish (do not use the 2 Tbsp reserved marinade).
- Cover and let it sit 10 minutes.
- Spray broiler rack with nonstick cooking spray.
- Place salmon on rack and brush with 1 tablespoon marinade.
- Broil 6" from heat about 3-4 minutes.
- Turn steaks over and brush with remaining tablespoon of marinade.
- Broil 3 more minutes or until cooked through.
- Note: I have used two very thick salmon steaks instead of the four 3/4 inch thick ones that the recipe calls for, and I have used the same amount of marinade.
- However, since thicker steaks will take longer to cook, the marinade can burn.
- To compensate for this, I add a little bit of marinade at a time.
- For example, if the salmon steaks are 1- 1 1/2 inch thick or more, they can take around 10 minutes to cook.
- So I brush the salmon steaks with less marinade, around 1/2 tablespoon.
- I then remove them from the broiler after 2 1/2- 3 minutes, and add a little more marinade, reserving enough for two more applications.
- Then I broil for another 2 1/2 minutes.
- I then turn the salmon over and add more marinade, still reserving a little.
- I broil another 2 1/2 minutes.
- I then add the remaining marinade and broil the remaining 2 1/2 minutes or until cooked through.
- This may seem tiresome, but it's well worth it.
- The marinade is great and you definitely don't want it to burn!

HEALTHIER OVEN-BAKED FISH CAKES

- Place cubed potatoes in cold, salted water and bring to the boil. Reduce heat to a simmer and cook until just cooked, about 10 minutes. Then drain and allow to dry, before mashing.
- In the meantime (if not using left-over baked/ grilled fish), poach the fish. Place fish in a pan and cover with salted water. Bring to a gentle boil, and allow to simmer for about 5 minutes (depending on the thickness of the fillet) until just cooked. Drain the fish from the water with a slotted spoon, remove skin and, using a fork, flake into large chunks. Discard any bones.
- Place the fish, potatoes, chili, scallions, and cilantro in a bowl, add a squeeze of lime and season with salt and pepper. Use your hands to combine the mixture. Then divide and shape mixture into 4 to 6 even-sized fish patties and place on baking sheet lined with foil
- To bake: Pre-heat oven to 400°F (200°C). Bake for 25 to 30 minutes until golden-brown and crisp. Midway through, turn over and brush tops with a little more olive oil.
- To broil: Pre-heat broiler. Place baking sheet about 4 inches below the heating element. Broil for 5 to 6 mins each side until nicely brown on both sides and hot through. After flipping, brush top with more olive oil.
- Serve with lime wedges.
COD CAKES WITH GINGER AND SCALLIONS
Steps:

- Panfried Fish Cakes: Increase the oil to 1/3 cup, or more if necessary. Heat about 1/16 inch oil in a large skillet over medium-high heat. When it is hot (a pinch of the fish mixture will sizzle immediately), add the cakes. Cook, turning once, until brown on both sides, about 10 minutes total.
- Substitute minced garlic, shallot, scallion, or onion for the ginger and parsley for the cilantro.
- Season with a grating of nutmeg or a teaspoon or more of curry powder (in place of the seasonings in the original recipe).
- Add 1/4 cup or more sour cream and a little butter to the potato as you mash it.
- Add minced yellow or red bell pepper to the mix.
- Serve with Mayonnaise (page 305) or tartar sauce (page 306), Worcestershire sauce, or any other condiment

- Thaw, drain, and wipe the fish. Then, cut into smaller pieces. Set aside Tip - it is very important that you don't have excess moisture in the fish or the mixture will be difficult to shape

- Fish cakes: Before weighing out fish, press out any excess moisture, cut out any bones, and then pat fish dry. Cut fish into coarse chunks. Refrigerate if not making fish cakes immediately.
- In a bowl, mix cornstarch, soy sauce, lime juice, and chili sauce until smooth. Stir in garlic, ginger, egg white, and half of the fish. Transfer mixture to a food processor and process for about 20 seconds, until coarsely pureed but not a paste. Add the remaining fish, chopped cilantro, green onion, and carrot, and pulse in just to mix evenly but with some of the fish texture still remaining. The recipe can be made to this point and then covered and refrigerated, for up to 4 hours, before portioning.
