Easy Grilled Filet Mignon image

If you're new to grilling steaks, then this filet mignon recipe is for you. It only requires a few basic seasonings and a few minutes on the grill.

2 teaspoons sea salt (or other coarse salt)
2 teaspoons coarse ground black pepper
4 filets mignons (about 1 3/4-inch thick)
1 tablespoon grapeseed oil (or avocado oil)

Steps:

  • Gather the ingredients.
  • Preheat the grill to high heat.
  • Combine the salt and black pepper in a bowl and rub onto both sides of the steaks.
  • Oil the grill grates using a high smoke point oil, like grapeseed or avocado oil; add 1 tablespoon oil to a folded paper towel, and using a pair of tongs, rub the oiled towel over the grates.
  • Place the steaks on the grill.
  • Cook the steaks 5 to 6 minutes per side or until they almost reach the preferred doneness , up to 9 minutes per side for well done. (The meat will continue to cook as it rests.)
  • Remove from the grill and let the steaks rest for 5 minutes under foil.
  • Plate with your favorite sides and a sauce or butter and enjoy.

1 (8 oz) bottle zesty Italian salad dressing
4 teaspoons water

Steps:

  • Pour the salad dressing into a shallow pan, place the steaks in the pan and let them marinate for 3 to 4 hours. Prepare a fire in a charcoal grill. Wrap a strip of bacon around each steak, securing it with a toothpick or kitchen twine. Grill the steaks over hot coals for about 8 minutes per side (5 minutes per side for rare). Baste with a mixture of steak sauce and water. For perfect steaks, turn them only once.

garlic powder
fresh thyme sprig
1/4 cup salter butter
4 tablespoons extra virgin olive oil
2 tablespoons minced garlic
1/3 cup bourdeaux wine

Steps:

  • Generously salt, pepper filets, add garlic powder. Refrigerate until 30 minutes before cooking. Allow filets to come to room temperature, about 30 minutes, before cooking. This is an important step!
  • Place enough EVOO in cast iron skillet to sear 2 steaks. Heat oil to HIGH.
  • Place steaks in oil and sear on both sides on HIGH for 2 minutes each side.
  • Once seared, add 2T butter, minced garlic and thyme to pan.
  • Transfer skillet to oven preheated to 450 degrees. Cook, without turning for 3 minutes, or until rare/ med-rare (130 - 140 degrees).
  • Remove skillet from oven, return to stove top on medium heat. Add more butter, thyme, garlic and some red wine. Just enough time to baste.
  • Place on plate and allow to rest 5 minutes.

Filet Mignon...even the name sounds intimidating. Not to fear though, we will show you how easy it can be with step by step directions.

1 Beef filet mignon steaks (at least 1.5 inches thick)

Steps:

  • Seasoning.You paid a lot for this filet, give it some credit that it is going to hold it's own in the taste department. The only seasoning I recommend to help this steak out is some fresh ground black pepper. Save the course salt for the end, some say it draws out juices. I doubt it does, but why take the chance?
  • Leave it alone!In order to reduce grilling time and ensure consistent cooking throughout the steak, we must bring the filet to room temperature. This is your easiest step, once it's seasoned just leave it on the kitchen counter. Your patience will be rewarded, trust me...just let it get into the "zone" by itself and move onto these next steps. Let it sit for at least 45 minutes. Go on, leave it alone, move on to the next step!
  • Fire it up!We are going to use direct heat to grill this delicious steak, so fire up your grill and set it and leave it at the highest temperature setting. You will know she is ready when you can't hold your hand 2 inches above the grates for more than 5 seconds (don't try and be tough, you know it hurts...). If you are a charcoal griller, follow this guide for lighting a charcoal grill and set up your grill for hot, direct grilling by creating a pile 2 coals high.
  • Sear in those juices!Ok, the moment of truth, your steak has been getting itself ready on the counter and now it's game time! Using TONGS (remember, don't EVER puncture that beautiful steak's flesh!) place your steaks on the grill and do NOTHING for at least 2 minutes. The only exception to this rule is if you have to play firefighter and splash a little water on a pesky flame. A little flare up is fine, but if a flame burns for more than 30 seconds, splash a tiny bit of water on it to put it out.
  • Grill marks!All we are doing here is creating those cool looking grill marks. After about 2 minutes (for medium-rare, a little more for Medium), lift, turn your steak 90 degrees and then set it back down for another 3 minutes (again, for medium-rare, a little more if you have to have it more done).
  • Flip once!After a total of about 5 minutes, it's time to flip that steak for the one and only time. Gently lift, flip and set it back down in the same spot and leave it alone again for about 2 more minutes.
  • Rotate againThis is getting easy, you know what is next. Repeat Step 5 on this side now!
  • Check itNow it is time to check your steak for the perfect doneness. The very best way to ensure proper doneness is by using an instant-read meat thermometer.   • Remove and rest. Take it off the grill now, you are done with the heat section! Remove it and set it on a plate or platter and leave it alone.
  • Your beautiful filet has been through a traumatic experience. It went from refrigerated to room temperature to a HOT grill. This plays havoc on the juices inside so we need to give it some time to collect itself. Now that it is on the platter, let it rest again for 2 - 3 minutes (which will now seem like 2 hours!). This allows the juices to re-distribute, so they don't all run out when you slice into that beautiful hunk of beef.

3 ounces crumbled Gorgonzola cheese
3 tablespoons grated Parmesan cheese

1 pinch lemon pepper

Steps:

  • Pour heavy cream into a saucepan and bring to a boil over medium heat. Reduce heat and simmer until the cream has reduced by half, stirring occasionally, about an hour. Remove from heat and whisk in the Gorgonzola cheese and Parmesan cheese, salt, pepper, and nutmeg, until the cheese has melted.
  • Season the beef tenderloin with lemon pepper, garlic powder, onion powder, salt, and pepper. Set aside. Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Cook the steaks until they start to firm, and are reddish-pink and juicy in the center, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steaks from the grill and tent with foil to rest for 5 to 10 minutes. 2 Filet Mignon ( about 1 1/4 to 1 1/2 inch thick. They will be about 6-8 oz each.)
7:2:2 seasoning or just coarse salt and pepper

Steps:

  • Start with quality filets. I like a 1 1/4 to 1 1/2 inch thick that will be 6-8 ozs. each.
  • One of the most important steps is resting the filets at room temperature. Get at least 10 minutes but better if you can do 30 minutes. This raises the temperature of the meat, making getting your desired internal temperature much easier.
  • While the filets are resting, get your grill surface temperature about 450° (500° max). About medium-high on most gas grills. Please be sure the surface temperature is correct. This is the most common source of errors. See A Beginners Guide to Grill Temperature on a Gas Grill for details if you are not sure. Of course, clean and oil the grill.
  • Give the filets a light coat of the seasoning of your choice. Do it just before grilling. I use a nice sprinkling of my 7:2:2 seasoning, but just a nice sprinkle of coarse salt and pepper will do.
  • Place the filets on the grill. Close the lid.-grill on the first side for about 5 minutes (less for rare). Rotate half the way through for these nice crossed grill marks. Flip and grill until you reach the correct internal temperature for your taste. For me, I do another 7-8 minutes (with the rotation) and get 140°-145° internal temperature.
  • Remove and rest for 5 minutes minimum. A light foil tent is a good idea here. Remember, the internal temperature will rise a few degrees during the rest.

No-Fuss Broiled Filet Mignon image

This recipe is easy for people of any cooking level to accomplish right in their own kitchen.

4 8-10oz filet mignon from Chicago Steak Company

4 tbsp butter, cut into 1 tbsp pieces (optional)

Steps:

  • Remove the filets from the refrigerator and place on a cutting board at room temperature 30-40 minutes before cooking. Salt the filets generously on all sides.
  • Preheat the broiler. Make sure the rack you'll be using is about five inches from the broiler. Spray the pan you'll be using for the filets with a thin layer of cooking spray or brush with olive oil. Place the pan in the oven while the broiler preheats.
  • Sprinkle pepper on both sides of each filet. Lightly brush filets with olive oil on all sides.
  • Remove the preheated pan from the oven and place the filets on it. Add the pan back to the oven under the broiler on the top rack.
  • Allow the filets to broil for four minutes, or until a golden-brown crust forms on the top. Then, flip the filets to the other side using tongs and put them back under the broiler. Cook for another four minutes until the top side crisps.
  • Check that the internal temperature reaches 130-135 degrees for medium-rare. Place back in for another minute or two to reach the desired temperature (medium requires 140-145 degrees).
  • Place filets on a clean cutting board tented with foil to rest for 5-10 minutes before serving. Just before serving, add a pat of butter to each filet, if desired.

Filet mignon, the most tender beef cut of all, is an expensive cut of meat often reserved for special occasions. A lean steak measuring up to 2 inches thick, filet mignon comes from the tenderloin of the beef, located between the sirloin area and the ribs. Tender cuts such as filet mignon and porterhouse and T-bone steak are best cooked to medium-rare, using high-temperature cooking methods such as broiling.
Thaw frozen filet mignon. Refrigerator-thawing, which may take up to 24 hours for thick steak, is the safest method. If you don't have time to thaw filet mignon in the refrigerator, thaw it in cold water: Place the meat in an airtight package, then submerse the package in a bowl of cold water. Pour out the water and replace it with fresh water every 30 minutes. Thawing in cold water takes 2 to 4 hours, depending on the thickness. Never defrost filet mignon at room temperature.
Remove the steak from the refrigerator 20 minutes before cooking to allow the steak to warm to room temperature. Don't allow the steak to remain out of the refrigerator any longer, as bacteria may develop. Warming the steak to room temperature promotes even cooking, especially with thick cuts of meat.
Place an oven rack about 4 to 6 inches below your oven's heating element. Turn the oven on broil and allow the oven to preheat for at least 15 minutes.
Place a heavy cast iron skillet or a broiling pan in the oven and allow it to heat.
Rub the filet mignon generously with extra-virgin olive oil, then sprinkle the meat with freshly ground black pepper.
Remove the hot pan carefully from the oven. Place the meat carefully in the pan.

Steps:

  • Return the pan to the oven, then broil the meat quickly for 3 to 4 minutes on each side. Turn the meat with tongs, as using a fork allows meat juices to escape. Turn the broiler off, and then set your oven temperature at 500 degrees F without removing the pan from the oven. If you prefer a rare filet mignon, use a meat thermometer to ensure the center of the meat reaches a safe temperature of at least 135 degrees F, which takes from 1 to 5 minutes, depending on thickness. For medium, cook filet mignon for 2 to 7 minutes -- until the meat reaches a temperature of at least 140 degrees. For a steak cooked medium-well, cook filet mignon for 4 to 9 minutes -- to a temperature of at least 150 degrees. Turn the filet mignon once about halfway through the cooking time. Remove the filet mignon from the oven and place it on a carving board. Cover the meat loosely with aluminum foil, then allow it to rest for 5 to 10 minutes. Carve the meat, and then transfer it to a warm serving platter. Sprinkle the filet mignon with sea salt or kosher salt, and then serve.
