BACON WRAPPED SALMON
Bacon Wrapped Salmon is a delicious and easy way to cook up salmon fillets. This salmon recipe is pan fried and then finished off in the oven. Bacon wrapped salmon with a maple glaze.

Steps:
- Start by seasoning your salmon with salt and pepper, and sprinkle with lemon zest.
- Next take bacon and wrap around the salmon fillets. I did 2 pieces of bacon per piece of salmon. Depending on how large or small your salmon fillets are the bacon can be adjusted.
- In a skillet on medium-high heat you will pan sear your bacon salmon for 2-3 minutes. Then flip the fillet over and cook the other side.
- Preheat the oven and once the bacon is done searing cook in the oven broiling on high for 3-4 minutes or until the salmon reaches 145 degrees F.
- Now, you can flip the bacon salmon over half way through cooking in the oven. That will ensure a more even cook on the bacon.
- Once the bacon wrapped salmon is done, you can remove from the oven and brush with the maple syrup if you want. It will add a nice sweetness to the salmon.

A delicious use of some of my favorite things - bacon and salmon! The salmon stays really moist from the bacon, and the skin helps protect the bottom from cooking prematurely.

- Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
- Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
- Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

BROCHETTE OF SALMON WITH BACON

- Preheat a charcoal grill or oven broiler to high. Soak 8 wooden skewers in cold water to cover until ready to use.
- Cut the salmon into 1 1/2-inch cubes. There should be 24 pieces. Sprinkle the pieces with salt and pepper.
- Cut away and discard the pepper core and veins. Discard the seeds. Cut the pepper into 16 pieces of equal size.
- Cut the bacon into 16 rectangles of equal size.
- Cut the onion into 16 1/2-inch cubes. Put any remaining onion to another use.
- Heat a nonstick skillet and add the bacon pieces in one layer. Scatter the sweet pepper and onion cubes over the bacon. Cook, shaking the pieces and stirring for about 1 minute. Drain and let cook slightly.
- Drain the bacon mixture.
- Arrange the various foods on each of the skewers as follows: 1 sweet pepper cube, a piece of bacon, 1 piece of salmon, a cube of onion, a piece of salmon, a cube of onion, a piece of bacon, a piece of salmon and a cube of pepper.
- Brush brochettes all over with olive oil. Sprinkle with salt and pepper.
- If the brochettes are to be cooked under the broiler, arrange them on a rack. Place them about 4 inches from the source of heat and leave the door slightly ajar. Cook 3 minutes on one side and turn the brochettes to the other side. Cook 2 minutes. If the brochettes are to be cooked on a charcoal grill, place them on the grill and cook 3 minutes. Turn and cook on the other side about 2 minutes.
- Meanwhile, heat the butter and add the lemon juice and basil. Stir and pour or brush the sauce over the brochettes.

BROILED SALMON FILLET WITH BACON, WILD MUSHROOMS AND OYSTER SAUCE

- Pre-heat broiler. Season the salmon fillet well with salt and pepper. Wrap 3 of the bacon slices, evenly spaced, around the salmon filet. Place fillet on roasting pan, and place under broiler. Cook until just done (about 10 minutes).
- Meanwhile, prepare the sauce. Cut the remaining two slices of bacon into small squares. Place in a heavy saute pan over high heat. Cook until medium-brown, about 2 minutes. Spill out all but 1 teaspoon of the bacon fat. Lower heat to medium-high. Add the shiitake mushrooms, stir well, and saute until mushrooms become golden-brown, about 3 minutes. Turn heat down to medium, and stir in garlic and parsley. Cook for one minute. In a bowl, combine the oyster sauce with 1/4 cup of hot water. Blend, and add to saute pan. Cook one minute over medium heat. Season well with nutmeg.
- To serve, remove the wrapped bacon from the salmon (you may discard the bacon, or use it as a garnish). Delicately slice the salmon along the natural separations, and divide among 4 plates. Top each with a quarter of the sauce, and with a flat parsley leaf for garnish.

PANCETTA-WRAPPED SALMON

- Heat oven to 200C/fan 180C/gas 6. Boil the potatoes for 5 mins. Drain and tip into a bowl - they will be slightly underdone. Toss with the tarragon, lemon zest, butter and seasoning to taste. Pile in the centre of a foil-lined baking tray.
- Season salmon with black pepper and wrap the pancetta or prosciutto around the fillets. Place on top of the potatoes and roast for 15-20 mins, or until the fish flakes easily and the pancetta or prosciutto is golden. Serve with steamed green beans.

PRAWN AND BACON BROCHETTES
The Spanish love bacon, which we cure and air-dry in the same way as our famous jamon. This combination of prawns and bacon is inspired and very popular, and can be found at most Tapas bar, as well as in many banquets and receptions. It is an ideal treat for your guests when having a party at home! Found on-line at Spain recipes and posting for ZWT5. Although this was found on a Spainish Recipe Site, prawns/shrimp are common in many areas of the world, especially in the tropical islands.

- Cut the bacon (or jamon, if using it) into pieces which will wrap generously round the prawns. Place the wrapped prawns down flat on a board and skewer them through the fattest part and the tail, making sure the jamón is firmly fixed. Season generously and drizzle with the oil.
- On a high heat, griddle, grill or barbecue the prawn and bacon brochettes for 2-3 minutes on each side, so the jamón crisps up. Alternatively , roast in a hot oven (425ºF) on an oiled baking tray for 8-10 minutes. Squeeze over the juice of the lemon wedges and serve immediately.

- Heat broiler.
- Season salmon with salt and pepper; place skin side down in a broiler pan or cookie sheet. Cover with bacon strips.
- Brush salmon and bacon with 1 T. of the balsamic vinegar.
- Broil until cooked through and bacon is crisp, about 8 minutes, basting with remaining 1 T. vinegar halfway through cooking.
