A fast and zesty take on frozen broccoli. Can also use fresh broccoli. Great summer dish. Can be served hot or cold.

- In a large skillet, combine the butter, water, lemon juice, cayenne pepper, salt and pepper. Bring to a simmer over medium heat. Add the broccoli to the pan, stir to coat, and cover with a lid. Cook for 10 to 15 minutes over medium-low heat, stirring once, until broccoli is tender but still bright green. Serve warm, or refrigerate and serve cold.

- Trim broccoli and cut into florets.
- Steam the broccoli until just tender-crisp.
- Drain and transfer to a serving plate.
- Thoroughly combine the sauce ingredients and pour over the broccoli.
- Garnish with chives and serve.

ASIAN SESAME BROCCOLI SALAD
Steps:
- Blanch the broccoli: Bring a large pot of water to a boil and add in a generous pinch of salt after the water boils. Boil the broccoli florets for 1 minute and then place the broccoli into a bowl of ice water or run it under cold running water to stop the cooking process. This helps brighten the color and retain the crunchiness of the broccoli while removing some of the raw taste. Drain the broccoli very well from the ice bath and set it aside. Excess water will dilute the dressing.
- Make the dressing: In a small pot, heat the minced garlic and olive oil until the garlic starts to sizzle and becomes fragrant. Remove it from the heat and add in the sesame oil, soy sauce, rice wine vinegar, black and white sesame seeds, and chili pepper flakes.
- Mix the broccoli with the dressing and season it with salt and pepper. The longer the broccoli sits in the dressing, the more flavor it will absorb. This tastes the best after about an hour. Serve chilled or at room temperature.

BROCCOLI WITH CHEDDAR CHEESE SAUCE

- Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
- Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
- Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. Slowly add the cheese by handfuls and stir with a wooden spoon until melted and smooth.

- Cut and discard the lower third of the broccoli stem. Cut off the broccoli florets and break into 1-inch pieces. Peel the remaining stem and cut into ½-inch pieces.
- In a medium stockpot with a lid, place a steamer over, but not touching, boiling water. Put the sliced broccoli stems into the steam, cover and steam for 1-2 minutes. Add the florets, sprinkle with salt, and re-cover. Steam a further 3-4 minutes or until the broccoli florets are bright green and are tender, but still crisp.
- Drain the broccoli in a colander, plunge into cold water if eating cold. Drain well and pat dry with paper towels. Transfer to a serving dish, drizzle with sesame remoulade sauce and toasted sesame.
