STEAMED BROCCOLI WITH BROWN BUTTER SAUCE

Steps:
- Place the broccoli florets in a vegetable steamer basket.
- Pour about 3/4-inch water into a large saucepan. Place the steamer basket in the pan, bring the water to a simmer over medium-high heat, and cover. Steam for 5 minutes, or until the broccoli is crisp-tender. Transfer to a serving bowl and season with salt and pepper.
- Meanwhile, place the center of the bread into a food processor and pulse to make bread crumbs. In a small saucepan, heat butter on medium high until butter turns a nutty brown color. Add the bread crumbs and toss in the butter. Pour the buttered crumbs onto the broccoli and toss to coat.
BROCCOLI WITH PECAN BROWN BUTTER

- Bring a large pot of salted water to a boil over medium heat and add the broccoli. Blanch until tender-crisp and bright green, about 3 minutes. Drain well and set aside.
- Melt the butter in a large skillet over medium heat. Add the shallots, garlic, and pecans, and saute until the shallots and garlic are tender, about 3 to 4 minutes. Season with salt and pepper, to taste. Keep stirring until the butter begins to brown, another 3 minutes. Add the red pepper flakes and the broccoli. Using tongs, toss the broccoli with the butter and pecans. Cook, while tossing, until the broccoli is heated through, about 5 to 6 more minutes. Remove from heat and transfer to a serving bowl. Sprinkle with the lemon juice and season with salt and pepper, to taste.
BROCCOLI WITH GARLIC BUTTER AND CASHEWS
A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

- Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
- While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

- Remove broccoli floweret clusters from stems.
- Separate flowerets.
- Peel stems, then cut into ½ inch thick slices.
- Steam broccoli until crisp-tender.
- Cook butter with garlic in large skillet over medium-low heat until foam subsides and butter is nut-brown.
- Immediately remove from heat and discard garlic.
- Stir in lemon juice.
- Add broccoli and toss to coat.
- Season and serve.

BROCCOLI WITH INFUSED BUTTER
Steps:
- Set up a steamer. Steam the broccoli florets for 3 to 5 minutes, until just slightly tender.
- In a separate small saucepan, heat the orange juice over medium-high heat. Reduce to 1/4 cup. Remove juice from heat and add butter, stirring to melt and combine thoroughly.
- Pour over the blanched broccoli and toss. Serve with the orange zest over the final served dish.
SPAGHETTI FACTORY BROCCOLI, BROWNED BUTTER & MIZITHRA CHEESE
This was something my kids (4 and 2) just loved so much at the restaurant that they gobbled up the whole dish. I did get to try a few bites and figured it was easy enough to try at home. It is very simple and if you can't find Myzithra cheese (it's a Greek goat or sheep cheese) I guess you could sub with Parmesan. The amounts are approximate, please adjust to your taste or amount of broccoli being used! For the butter you can always throw in another chunk to melt if it doesn't look like it's enough for your broccoli. Same with the cheese. If you use unsalted butter you can throw in a tiny pinch of salt. Please use real butter for best results!

- Cut up into small chunks and melt in a heavy saucepan. Stir the butter or swirl the pan so that the butter doesn't burn. Remove from heat when butter turns light brown and gives off a nutty aroma.
- Drizzle over steamed broccoli.

- Trim bottom inch off broccoli stalks and discard. Cut each stalk crosswise into 3 pieces.
- Cut topmost piece of each stalk into small flowerets. Cut remaining pieces into fine julienne. Put all into cold water for at least 1/2 hour to refresh them.
- Bring suitably large steamer of water to boil, add all broccoli and steam, covered, for 5 minutes, tossing from top to bottom a few times.
- When just barely tender, remove to collander, spray liberally with cold water and drain.
- When ready to serve, melt butter in skillet and toss broccoli with salt and pepper to taste, until heated through.

- Bring large pot of salted water to boil. Add broccolini; stir to separate and cook 2 minutes. Drain. Transfer broccolini to paper towels to drain. Cool. DO AHEAD: Can be made 1 day ahead. Wrap broccolini in several layers of clean paper towels; enclose in resealable plastic bag and chill.
- Melt butter in extra-large skillet over medium heat. Add shallots and garlic, then pecans; sauté until shallots are soft, about 3 minutes.
