SWEET AND CRUNCHY BROCCOLI SALAD



Sweet and Crunchy Broccoli Salad image

4 cups chopped broccoli in 1/2-inch pieces (from about 2 heads)
8 ounces pancetta, cut into 1/3-inch dice
1/2 cup mascarpone
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/2 cup dried cranberries
1/2 cup walnuts, toasted, chopped
1/2 cup crumbled aged gorgonzola

Steps:

  • Bring a large pot of salted water to a boil. Set up a bowl of ice water alongside. Add the broccoli to the pot and blanch for 1 to 2 minutes, just until bright green and crisp. With a slotted spoon, remove the broccoli to the ice water to shock. Drain well.
  • Place the pancetta in a medium skillet over medium heat. Cook, stirring often, until crispy and browned, about 10 minutes. Drain on paper towels, reserving 1 tablespoon of the fat.
  • Meanwhile, in a large bowl, use a rubber spatula to mix together the mascarpone, mayonnaise, cider vinegar and salt. Add the broccoli, pancetta, reserved fat, cranberries, walnuts and gorgonzola. Toss well to coat and combine.

  • Microwave 5 cups broccoli florets and 1 tablespoon water in a bowl, covered, 2 minutes. Combine 1/4 cup cider vinegar, 1/2 thinly sliced shallot and 1 teaspoon sugar in a small bowl; set aside. 5 lbs broccoli, cut into bite-sized pieces and roasted ((see notes))
5 1/2 oz smoked gouda cheese ((about 1 cup grated))
1/2 cup Greek yogurt
3/4 cup milk or buttermilk
1 tbsp fresh parsley, chopped
1 tbsp freshly squeezed lemon juice, or more to taste
Pinch cayenne ((add more for a bigger kick))
Salt and black pepper to taste
3 tbsp pine nuts, toasted ((optional))

Steps:

  • Roast the broccoli (directions linked above), then let it return to room temperature before assembling salad. You can also roast the broccoli ahead and chill before serving for a colder salad.
  • Grate the smoked gouda cheese, or cut it into chunks and place it in the food processor, then process into very fine bits. Combine gouda in the processor with Greek yogurt, milk, fresh parsley and lemon juice. Process until smooth, scraping down the sides of container with spatula as needed (it will take several times scraping down the sides and reprocessing to achieve a salad dressing consistency). Add more salt, pepper, cayenne or lemon juice if desired to taste. Dressing should be cold; chill if needed.
  • To assemble salad: In a large mixing bowl, toss the roasted broccoli with the salad dressing and toasted pine nuts. Alternatively, for a prettier presentation, you can plate the salads individually and drizzle the dressing over the top.

There are equal amounts of cheese and broccoli on this flatbread, but it's the smoked Gouda that grabs your attention. Its buttery and lightly smoked flavor is accentuated by the scallions, which sweeten and brown as they roast. These are super speedy with the help of store-bought flatbread, naan or pocketless pita, but because the breads vary in size, adjust the quantity of topping to cover yours. (If you have extra toppings, make a melt on toast). Feel free to adapt with what you have: Swap out Gouda for another melting cheese like Cheddar or fontina; and for the broccoli, substitute spinach, kale, thinly sliced brussels sprouts or another quick-cooking vegetable.

Steps:

  • Heat the oven to 450 degrees and place a rack in the lower and upper third of the oven. In a large bowl, combine the Gouda, broccoli, scallions and oil. Season with salt and pepper, and stir to combine.

¼ cup butter
1 onion, chopped
¼ cup all-purpose flour
1 (10.5 ounce) can chicken broth
2 cups milk
1 ½ cups grated Gouda cheese
2 cups chopped broccoli
1 pinch ground nutmeg
salt and pepper to taste

Steps:

  • Melt butter in a large pot over medium-high heat. Cook and stir onion in the melted butter until tender, 5 to 7 minutes.
  • Sprinkle flour over the onion; continue cooking 2 to 3 minutes, stirring often.
  • Pour chicken broth and milk into the pot; reduce heat to medium, and bring the mixture to a simmer. Stir shredded Gouda cheese into the liquid; cook and stir until the cheese melts completely.
  • Place broccoli into a microwave-safe dish; cook in the microwave until softened, 3 to 5 minutes.
  • Stir broccoli into the soup.
