1 pound orecchiette
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
2 cloves garlic, finely chopped
2.5 cups low-sodium chicken broth
0.13 teaspoon crushed red pepper
1 bunch broccoli rabe
4 tablespoons butter, cut into pieces
1 cup grated Parmesan (4 ounces)
Kosher salt and black pepper

Steps:

  • Cook the pasta according to the package directions. Drain and return it to the pot.
  • Meanwhile, heat the oil in a large saucepan over medium heat. Add the sausage and cook, breaking it up with a spoon, until it's no longer pink, 5 to 6 minutes.
  • Stir in the garlic and cook 1 minute.
  • Add the broth and red pepper and bring to a boil. Add the broccoli rabe and simmer, covered, until tender, 3 to 4 minutes.
  • Stir in the butter and Parmesan and cook, uncovered, until the sauce thickens slightly, 1 to 2 minutes.
  • Toss the pasta with the sausage mixture and ¼ teaspoon each salt and pepper.

1 pound broccoli rabe
3 garlic cloves, minced
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1 cup chicken broth, divided
1/4 cup minced fresh parsley
1/4 cup shredded Parmesan cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, trim 1/2 in. from broccoli rabe stems; discard any coarse or damaged leaves. Rinse broccoli rabe in cold water and cut into 2-in. pieces; set aside., In a large skillet, saute garlic in oil for 1 minute. Add the broccoli rabe, salt, pepper, pepper flakes and 1/2 cup broth. Bring to a boil., Reduce heat; cover and cook for 3-5 minutes or until broccoli rabe is tender. Drain linguine; add to the pan. Stir in parsley and enough remaining broth to moisten the linguine. Sprinkle with cheese.

1 (16 ounce) box penne pasta
1 pound hot Italian sausage links, cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon crushed red pepper flakes
1 pound broccoli rabe, cut into 1 1/2-inch lengths
2 tablespoons grated Parmesan cheese
½ cup pasta boiling water
¼ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, reserving 1/2 cup of the water.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir the sausage pieces, garlic, and red pepper flakes in the hot pan until the sausage is no longer pink on the outside, about 4 minutes. Stir in the broccoli rabe and 2 tablespoons Parmesan cheese. Pour in the reserved 1/2 cup of pasta boiling water. Cover, and cook until the sausage is no longer pink in the center and the broccoli rabe is tender, 5 to 7 minutes.
  • Stir the cooked pasta, broccoli rabe, and 1/4 cup Parmesan cheese together until evenly mixed. Season to taste with salt and pepper to serve.

Coarse salt and freshly ground pepper
1/2 pound broccoli rabe, trimmed and washed
2 tablespoons olive oil
4 garlic cloves, crushed and peeled
2 shallots, crushed and peeled
8 ounces sweet Italian sausage, casing removed
1 1/2 cups canned low-sodium chicken stock
1/2 pound pasta, such as campanelle
1/8 teaspoon crushed red-pepper flakes
1/2 cup freshly grated Grana Padana cheese

Steps:

  • Bring a large pot of water to a boil. Prepare an ice-water bath; set aside. Add salt and broccoli rabe to the boiling water. Cook until just tender. Drain, and transfer to ice bath. When cool, drain, and set aside.
  • Heat oil in a 10-inch skillet over medium-high heat. Add garlic and shallots; cook until just golden. Add sausage; saute, breaking up with the back of a spoon, until cooked through. Add broccoli rabe and stock. Cook until heated through.
  • Into the same large pot, add pasta; cook according to package directions until al dente. Drain.
  • Add pasta to skillet; toss to combine. Season with salt, black pepper, and crushed red pepper. Sprinkle with cheese; toss to combine. Serve immediately.

This Broccoli Rabe Orecchiette Pasta recipe is a classic example of how simple ingredients come together perfectly to create a great Italian pasta dish.

2 pounds broccoli rabe (approximately 2 bunches, trimmed and washed)
1 pound orecchiette pasta (dried)
⅓ cup olive oil (extra virgin )
4-6 garlic cloves (sliced or chopped)
2 anchovy fillets (chopped)
pinch red chili pepper flakes
¼ cup Parmigiano-Reggiano Cheese (grated)
¼ cup Pecorino Romano Cheese (grated)
salt and pepper to taste
grated cheese to garnish top

Steps:

  • Over high heat, bring a large pot of salted water to a rolling boil.
  • Add the broccoli rabe and cook until tender. This should take 4-5 minutes.
  • Strain and gently squeeze out excess moisture. Coarsely chop and set aside.
  • Bring a large pot of salted water to a rolling boil. Please note that you can use the same water to cook your pasta. My preference is to start with a fresh pot of water.
  • Add the orecchiette slowly and stir. Cook according to package directions or until almost al dente.
  • While the pasta is cooking, heat the oil in a large frying pan over medium-low heat.
  • Add the chopped garlic and 2 anchovy fillets. Do not allow the garlic to brown.
  • Mash the anchovy with the back of a spoon for about 1-2 minutes.
  • If using, add red pepper flakes and stir for 30-60 seconds.
  • Carefully, add the cooked broccoli rabe and stir to combine. Adjust seasonings and heat through.
  • Add 1 ladle of pasta water and stir occasionally for 4-5 minutes. Add more water if the mixture dries out.
  • When pasta is almost al dente, drain, reserving 2-3 ladles of the water.
  • Add pasta to the pan along with some pasta water and continue to cook. Taste for doneness.
  • Turn off heat. Add the grated cheeses and toss everything together.
  • Continue to shake the pan back and forth for a few minutes, until a sauce forms.
  • Plate and garnish with more grated cheese, if desired.
  • Serve immediately.

1 pound shaped pasta, such as campanelle or orecchiette

1/2 cup dry white wine or chicken stock
1 (15-ounce) can chickpeas or other white beans, rinsed and drained
2 tablespoons unsalted butter
1/2 cup grated Parmesan or pecorino, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Roughly chop the broccoli rabe, add it to the pot, and cook for 3 minutes. Use a sieve or slotted spoon to lift the broccoli rabe from the water and place it in a colander to drain.
  • Bring the water back to a boil. Cook the pasta according to package instructions until al dente, reserve 1 cup pasta water, then drain pasta.
  • Meanwhile, in a large Dutch oven or deep, 12-inch skillet, heat the olive oil over medium-high. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 3 to 5 minutes. (Don't worry if the sausage is not completely cooked through.) Add the garlic and cook for 30 seconds.
  • Add the wine and cook, scraping any bits from the bottom of the pan, until the wine is reduced by half, about 1 minute.
  • Add the broccoli rabe, chickpeas, 1 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook over medium heat, stirring often, until the sausage is cooked through and the broccoli rabe is very tender, about 3 minutes.
  • Add the pasta and 1/2 cup of the reserved pasta water, toss well, and cook over low heat until the sauce comes together, about 1 to 2 minutes. Add additional pasta water, a few tablespoons at a time, if needed for moisture.

3 cloves garlic sliced thin
3 tablespoons extra virgin olive oil divided
1/4 teaspoon crushed red pepper flakes (optional)
1/2 pound spicy hot Italian sausage removed from casing
1 bunch broccoli rabe cut in 2 inch pieces
8 ounces chicken or vegetable stock
1 19-oz can cannellini beans drained
1/2 pound dried pasta such as rigatoni
1 teaspoon kosher salt or to taste
1/2 teaspoon freshly ground black pepper or to taste
1/3 cup Parmesan cheese grated for topping

  • To prepare broccoli rabe for cooking, cut leafy portions into 2 inch pieces. Peel the stem and cut to 2 inch pieces. In large deep skillet saute onion in oil for 5 or 6 minutes until translucent, then add garlic and crushed red pepper (if using) for an additional 2 minutes. Push onion and garlic to side of pan or set aside in small dish. Using same skillet, saute sausage , mashing with a fork, until lightly browned. 1 pound of broccoli rabe (1 bunch)
1/4 cup extra virgin olive oil
5 large garlic cloves, peeled and finely chopped
1/4 teaspoon crushed red pepper flakes (or 1/2 teaspoon Aleppo pepper flakes)
1 pound Italian sausage, (3-4) a mix of sweet and hot, to your taste, casings removed, cut or chopped into bite-size pieces.
1 cup of broccoli rabe water - reserved from when you blanch the broccoli rabe
Salt and black pepper, to taste
I pound of dried orecchiette pasta
Pecorino Romano cheese, freshly-grated

Steps:

  • To blanch the broccoli rabe, fill a large bowl with ice water and set it aside. Bring a large pot of salted water to a boil. Cut away a couple of inches of the thicker tough stems of the broccoli rabe, leaving the tender stems, buds and leaves. Cut or pull the leaves off the stems and tear the leaves into large pieces. Boil broccoli rabe for 2-3 minutes until it's bright green and the stems are crisp-tender. IMPORTANT: Reserve one cup of the cooking water. Drain broccoli rabe in a colander and quickly plunge it into the ice water to stop the cooking process. When cool, drain and set aside.
  • To make the pan sauce, heat olive oil in a large heavy skillet over medium high heat. Add garlic, red pepper flakes and sausages and sauté, stirring often, until the sausages are cooked through and browned in spots.
  • Add the broccoli rabe to the skillet, along with the cup of broccoli rabe water, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Turn heat to high and cook, stirring, until sauce is hot.
  • Meanwhile, cook the orecchiette per package instructions, until al dente (cooked through but still firm to the bite.)
  • Drain Orecchiette and return it to its cooking pot. Add 1/3 of the sausage-broccoli rabe sauce and toss over high heat. When combined and hot, remove from heat and mound onto a platter or into individual bowls. Top with remaining sauce and a generous sprinkle of Pecorino cheese.

2 heads broccoli rabe
1 head garlic
3 dried hot peppers
1/2 cup extra virgin olive oil
1/2 tablespoon extra virgin olive oil
salt
3 -4 vegetarian Italian sausages
1 lb pasta (penne works well)

Steps:

  • Cut Broccoli Rabe all the way down to end of stems. Cut in about 1/2 inch sections on top and get smaller as you go down. When stems get very tough towards bottom stop cutting and discard.
  • Wash thoroughly and drain.
  • Place in large pot cover with water add salt.
  • Bring to boil uncovered and then reduce heat.
  • Simmer until all is soft about 45 minutes.
  • Drain when cooked set aside.
  • At the same time Broccoli is cooking, cook pasta in rapidly boiling salted water.
  • Drain when cooked and put aside.
  • While Pasta and Rabe are cooking fry the sausage in about 1/2 tablespoons Olive Oil until brown. Set aside.
  • Chop Garlic.
  • Place Olive Oil in Pan heat and then add garlic.
  • When you SMELL the garlic (not brown) add the Hot Pepper and slowly add Brocoli Rabe.
  • Toss oil and garlic through all Broccoli Rabe.
  • Toss in Pasta and Sausage.
  • Cover with generous sprinkle of Parmasian Cheese.
  • Serve.

1 large bunch broccoli rabe (washed and 2" trimmed off stems)
1 lb lean chicken sausage (removed from casing)
1 tsp olive oil
5-6 cloves garlic (chopped)
10 oz orecchiette pasta (wheat or gluten-free)
1 cup less sodium chicken broth
1/4 cup grated Parmigiano Reggiano
crushed red pepper flakes (optional)

Steps:

  • Cut broccoli rabe in quarters.
  • Bring a large pot of water to boil. When it comes to a rolling boil, add broccoli rabe.
  • Blanch for about 1 1/2 - 2 minutes, drain and set aside in a colander.
  • Re-fill pot with water and salt for the pasta and bring back to a boil.
  • Add pasta and cook according to package directions for al dente.
  • In a large deep sauté pan, brown sausage on medium heat, breaking up into small pieces as it cooks.
  • When completely cooked through set aside in a dish or a bowl.
  • Increase heat to medium high, add olive oil to the pan; when hot add garlic and cook until golden (don't burn).
  • Return broccoli rabe to the pan, mix well with the garlic and oil, season with salt and pepper and cook about a minute. Return cooked sausage to the pan and mix well.
  • Drain pasta and add to the broccoli rabe. Reduce heat and stir for about 30 seconds.
  • Add chicken broth, parmesan cheese and red pepper flakes if using.
  • Adjust salt and pepper to taste and toss another 30 seconds so that everything is mixed well and the pasta is coated with the sauce.
  • Remove from heat and add to a large pasta dish or divide equally between 6 pasta bowls. Serve with additional grated cheese if you desire.

1 pound of sweet Italian sausage
1 bunch of broccoli rabe
1/4 cup extra-virgin olive oil
3 large garlic cloves, sliced thin
salt & pepper to taste
1 pound orecchiette pasta
grated parmagiano-reggiano cheese for serving

Steps:

  • Remove the sausage from the casing and crumble into small pieces.
  • Wash the broccoli rabe under cold water and pat dry with paper towels. Cut off and discard about one inch off bottom of stems. Cut remaining broccoli rabe with leaves into about 2 inch pieces.
  • Bring a large pot of liberally salted water to a boil.
  • In a large saute pan or skillet, heat the olive oil over medium-high heat. Add the crumbled sausage and cook stirring and breaking up the sausage until cooked through and lightly browned.
  • Using a slotted spoon remove the cooked sausage from the pan and set aside, leaving as much oil behind as possible to saute the garlic and broccoli rabe in, if needed add an extra tablespoon of olive oil.
  • Drop the broccoli rabe into to the pot of boiling water.
  • At the same time add the garlic to the saute pan and cook until lightly browned, about 1-2 minutes.
  • Immediately remove the broccoli rabe from the pot using a mesh strainer or tongs (do not strain the whole pot, because you will be cooking the pasta in the same boiling water), shake excess water out and add to the pan with the garlic. Season with Salt and pepper. Cook stirring until broccoli rabe is tender, 3-5 minutes.
  • Add the sausage back into the pan and toss to combine. Remove pan from the heat.
  • Meanwhile add the orecchiette to the pot of boiling water that the broccoli rabe was cooked in. Cook until pasta is al dente, and strain.
  • Place the pan with the broccoli rabe and sausage back over medium-high heat, and add the oricchiete. Toss together until well combined.
  • Dish out the pasta to warm plates and serve with cheese on the side for sprinkling.

SAUSAGE AND BROCCOLI RABE' OVER PASTA

For the pasta, use something substantial, like a GOOD oriccheti, or frozen cavetelli. (p.s. this recipe doubles or triples easily for crowds... and it is a CROWD PLEASER!)

1 lb sausage (Sweet Italian)
1/2 lb rapini (broccoli rabe')
1 lb frozen pasta (such as cavetelli or orichetti)
1 -2 garlic clove
3 tablespoons olive oil
3 tablespoons locatelli cheese, grated
1/2 teaspoon red pepper flakes (optional)
salt & pepper

Steps:

  • Bring two large pots of salted water to a boil.
  • While the water is heating, remove sausage from casings (if you can't find Italian sausage bulk)heat a large frying pan over medium heat and place sausage in the pan, breaking into bite sized pieces while cooking.
  • Cook sausage till nicely browned, (reserve).
  • Cut off stems from Broccoli Rabe and place in boiling water.
  • Boil your pasta of choice only cut back on time from the package directions by 1-2 minutes.
  • Thinly slice 1-2 cloves of garlic, and place in a small sauce pan with the olive oil (and pepper flakes if desired).
  • Cook garlic till lightly toasted (be careful! Don't burn it).
  • When broccoli rabe is tender resesrve about 1 cup of the cooking liquid and drain the broccoli.
  • Use the cooking liquid from the broccoli rabe to deglaze the frying pan with the sausage.
  • Return the drained broccoli to the pot, add the sausage and the cooked pasta.
  • Add Olive oil with garlic and the cheese and toss together.
  • simmer all ingredients together for about 1-2 minutes (to allow flavors to marry).
  • serve with extra cheese for sprinkling.

This delicious Gluten-free Broccoli Rabe + Sausage Pasta is one of our family favorite dinner recipes. It is easy to prepare and a healthier version of the classic pasta dish and it is so flavorful.

1lb ground sausage of choice
1 small onion
2 garlic cloves
2 tablespoons avocado or olive oil
1 large bunch broccoli rabe (trim about 2 inches from the bottom)
10 ounces gluten-free pasta
15-ounce can cannelloni beans, rinse well from can
1 cup bone broth or vegetable broth
Red pepper flakes and parmesan cheese for topping

Steps:

  • In a large skillet, cook the ground sausage on medium heat for about 5-7 minutes or until fully cooked
  • Remove sausage from skillet (I put mine on a paper towel lined plate/bowl to absorb the excess oil/fat)
  • Bring a large pot of water to a boil and cook the broccoli rabe in the pot for about 5 minutes as you cook onion and garlic
  • Add the oil, onion and garlic to the skillet from the pork and cook on medium high heat as the broccoli rabe cooks
  • After 5 minutes of the broccoli rabe boiling in water, remove and add directly to the skillet with onions and garlic and cook for about 10 minutes on medium heat, stirring occasionally
  • As that cooks, boil fresh water in the pot and cook pasta per instructions on package
  • Add the bone broth, cooked pork and beans to the skillet and simmer for a few minutes
  • Add in the strained pasta to the skillet and mix well
  • Serve while warm and sprinkle some red pepper flakes, fresh squeeze of lemon juice and cheeses on top and enjoy!

3 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage
Kosher salt to taste, plus 1 1/2 teaspoons
2 pounds broccoli rabe, stems trimmed
1 pound orecchiette pasta
4 cloves garlic, sliced

Steps:

  • Heat oil in a large skillet over medium heat. Add sausage, and cook, turning occasionally until browned, about 10 minutes. Remove sausage to a plate and reserve pan and sausage drippings.
  • Meanwhile, bring a large pot of cold water to a boil over high heat. Add a large pinch of salt and broccoli rabe and cook, uncovered, until broccoli rabe is bright green and tender but still slightly crisp, about 5 minutes. Immediately transfer broccoli rabe using tongs to a colander (reserve boiling water) and rinse under cold running water. Chop into bite-sized pieces and set aside.
  • Add pasta to reserved boiling water and cook, stirring occasionally, until al dente (tender but not mushy), about 12 minutes. Meanwhile, heat reserved pan and drippings over medium heat. Add garlic and cook, stirring frequently, until it is golden brown, about 5 minutes. Add broccoli rabe, pepper flakes, and 1 1/2 teaspoons of salt; increase heat to medium-high, and cook, continually stirring, until broccoli rabe is hot and tender, about 5 minutes. Slice sausage into 1/4-inch thick coins and add to pan and mix well cook until sausage is warmed through, about 5 more minutes.
  • Drain pasta in a colander in sink, reserving 1/4 cup of cooking liquid. Toss pasta and liquid with broccoli rabe mixture. Transfer pasta to a serving dish or individual bowls, garnish with Parmesean and serve.

Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Steps:

  • Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
  • Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
  • While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
  • When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
  • If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.

2 lbs of sausage (hot and sweet sausage each)
2 bunches of broccoli rabe
2 tablespoons of minced garlic
1 can of diced tomato
1 lb of orecchiette pasta
Olive oil
Salt, pepper, parmesan and red pepper flakes as you like

Steps:

  • Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
  • Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
  • Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
  • Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.

1 cup water
17 ounces chicken broth (I used bone broth)
1 teaspoon Italian seasoning
1 tablespoon olive oil
1/2 lemon
Freshly grated parmesan cheese, to taste

Steps:

  • Preheat oven to 400 degrees
  • Pour pasta into 9×13 baking dish followed by broccoli rabe, sausage, water, broth, seasoning, oil and juice from the lemon and mix well
  • Bake in oven for 40 minutes (I stir around the 20 minute mark)
