BROCCOLI-CHEDDAR POCKETS

Steps:
- Bring a saucepan of lightly salted water to a boil. Add the broccoli and cook 1 minute. Drain and rinse under cold water until cool; pat dry. Mix the broccoli, cheddar, sour cream and chives in a bowl until combined, then squeeze the mixture together with your hands to make it compact.
- Preheat the oven to 425 degrees F and brush a baking sheet lightly with vegetable oil. On a floured surface, roll out the dough and fill the dinner pockets. (See Cook's Note for step-by-step directions.)
- Place the pockets seam-side down on the prepared baking sheet. Beat the egg and 1 tablespoon water in a small bowl; brush the pockets with the egg wash. Bake until golden brown, about 15 minutes.
SAUSAGE AND BROCCOLINI PIZZA POCKETS
Steps:
- Preheat the oven to 500 degrees F.
- To a medium skillet over medium heat, add the olive oil and heat until it begins to shimmer. Then add the sausage, cooking and breaking it up into crumbles with a wooden spoon until it begins to brown, about 5 minutes. Transfer the sausage to a medium bowl with a slotted spoon and set aside to cool slightly.
- Add the garlic to the skillet. Stir to combine, being careful not to burn it (reduce the heat if necessary). When the garlic is fragrant and just translucent, add the broccolini and toss to coat in the garlic and olive oil. Cook until just tender, about 7 minutes. Set aside to cool slightly.
- Meanwhile, to the medium bowl with the cooked sausage, add the mozzarella, ricotta, Parmesan, lemon zest and black and crushed red pepper to taste. Stir to combine.
- Divide the pizza dough into four equal parts and roll into balls. On a lightly floured work surface, flatten them into circles, about 1/4 inch thick. Spread them each with one-quarter of the cheese mixture, sausage and broccolini, leaving a 1-inch border around the edges. Fold them in half to make a calzone shape, pinch the edges to seal and then transfer the pizza pockets to a pizza peel, pizza stone or baking sheet, 2 inches apart. Bake until lightly browned on top, 10 minutes. Let cool slightly and serve with warm marinara sauce.
CHEESY BROCCOLI POCKETS
These make a nice lunch or snack. If you have leftover fresh broccoli, chop enough to make 2 cups and use instead of frozen broccoli in this recipe.

Steps:
- Preheat oven to 375 drgrees.
- Grease 2 baking sheets.
- Cook broccoli according to package directions; drain well.
- In a medium skillet, heat oil over low heat.
- add garlic; saute for 2 minutes.
- Add broccoli; cook stirring until moisture has evaporated, about 3 minutes.
- Remove from heat; cool slightly.
- In a medium bowl, combine broccoli mixture, mozzarella, Parmesan, roasted peppers, oregano, salt ans pepper; mix well.
- On a lightly floured surface, divide dough into 8 pieces; roll out each piece to form a 6-inch circle.
- (for easy shaping, dust hands with flour before forming dough into rounds. Then, roll out each round with a rolling pin.) Spoon an equal amount of broccoli mixture in the center of each circle.
- Fold dough over filling to form a half circlr.
- Press edges with a fork to seal; prick a few holes in pocket.
- Place pockets on prepared baking sheets.
- Bake until golden, about 25 minutes.
- Serve Immediately.

GRILLED BROCCOLINI PACKETS
This is so, so simple and so, so good. NOTE: the instructions may look long, but I promise the prep should take no longer than five minutes. Then you just slap the packets on the grill and, bam, you're done! UPDATE: this recipe is great over linguine. Just be sure to add lemon juice, more garlic and olive oil, and plenty of Parmesan to the pasta!

- Lay out two sheets of foil. Each should be roughly 16 inches long.
- Chop the stalks of broccolini so that none is longer than one inch. Divide the pieces evenly between the foil sheets.
- Scatter the garlic evenly across the broccolini, ditto the the olive oil and salt.
- Now it's time to make the packets. Take one of the pieces of foil, and bring up its sides, then double fold its top and ends to seal. Repeat with the other foil sheet. (Don't forget to leave a little room inside each packet for heat circulation inside.).
- Grill for between 15 and 30 minutes, depending on the heat of your grill. Be sure to keep the packets away from the fire.
