6 large potatoes, cubed
2 (10.75 ounce) cans condensed cream of broccoli soup
2 ½ cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon Dijon-style prepared mustard
1 cup crushed saltine crackers

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 3 quart casserole dish.
  • In a large bowl, mix together cream soups, cheddar cheese, sour cream, and mustard. Stir in potatoes and broccoli. Spoon into prepared casserole dish. Top with crushed crackers.
  • Bake for 45 minutes to 1 hour, or until potatoes are tender.

5 1/2 Tbsp butter (, divided)
1 1/3 cups chopped carrots ((about 3))
1 cup chopped celery ((2 stalks))
1 cup chopped yellow onion ((1 small))
2 cloves garlic (, minced)
3 cups low-sodium chicken broth
3 1/2 cups peeled and cubed russet potatoes (, cut 1/2-inch to 3/4-inch thick (2 large))
3 cups chopped broccoli florets ((from about 2 heads))
1/4 tsp dried thyme
Salt and freshly ground black pepper
6 Tbsp all-purpose flour
3 cups milk ((preferably 1% or 2%))
1/2 cup heavy cream
2 cups shredded sharp cheddar cheese ((8 oz))
1/3 cup finely shredded parmesan cheese ((1 oz))

Steps:

  • In a large pot over medium heat, melt 1 1/2 Tbsp of the butter. Add carrots, celery and onion and saute 3 - 4 minutes. Add garlic and saute 30 seconds longer.
  • Stir in chicken broth, potatoes and thyme and season with salt and pepper to taste. Bring to a boil over medium-high heat, then reduce heat to medium, cover with lid and cook 15 minutes. Stir in broccoli and cook 5 minutes longer or until veggies are tender.
  • Meanwhile, melt remaining 4 Tbsp butter in a medium saucepan over medium heat. Stir in flour and cook, whisking constantly 1 minute. While whisking vigorously, slowly pour in milk (whisk well until no lumps remain).
  • Cook stirring constantly until mixture begins to thicken, stir in heavy cream. Remove from heat and once all veggies are tender pour into the soup and stir. Remove from heat and stir in cheddar and parmesan cheese until melted. Serve warm.

½ cup bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan, melt 2 tablespoons butter. Stir in flour and salt. Add milk and stir until bubbly. Add cheese, and stir until all of the cheese is melted. Stir in potatoes and heat thoroughly.
  • Pour half of the mixture into a 10x6 inch baking dish.
  • Cook broccoli according to package instructions; drain well. Layer broccoli over the potatoes in the baking dish. Pour the remaining potato mixture over the broccoli. Sprinkle the bread crumbs and 1 tablespoon melted butter over the top of the casserole.

2 tablespoons canola oil, divided

  • Toss broccoli with 1 tablespoon oil in a large bowl. Spread out on a baking sheet and roast, stirring once halfway though, until just soft and browned in spots, about 15 minutes.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add beef and onion and cook, breaking up the beef with a wooden spoon, until the beef is browned and the onion is softened, 10 to 12 minutes. Stir in Worcestershire, garlic powder and 1/4 teaspoon salt. Set aside.

Steps:

  • Discard tough lower third of broccoli stem. Peel remaining stem and finely chop. Cut remaining broccoli into very small (1-inch) florets. Cook florets in a large pot of boiling salted water until just tender, 2 to 3 minutes. Transfer with a slotted spoon to a bowl of ice water to stop cooking, then drain. Reserve 3 cups cooking water for chowder.
  • Peel potato and cut into 1/2-inch cubes. Cook potato, onion, bell pepper, broccoli stems, and garlic in butter in a 3- to 4-quart heavy pot over moderate heat, stirring occasionally, until onion is softened, 8 to 10 minutes.   • In large pot or Dutch Oven, melt butter over med. heat. Mix in flour, stirring constantly until a thick paste forms. Remove from pot, and set aside.
  • In same pot, combine water, bouillon cubes, chicken, broccoli, potato, green onions, salt and pepper. Bring to a boil over high heat. Reduce heat to medium low, and simmer for 45 minutes.
  • Stir in flour mixture a little bit at a time until soup thickens. Simmer 5 minutes. Reduce heat and stir in cream and sour cream. Mix in cheese, one cup at a time and stir until melted.
  • * 2 heads fresh broccoli, cut into florets can be used instead of the frozen broccoli.
  • Note: You can easily omit the chicken - it won't be missed. But add another potato in its place.

1 small yellow onion- diced
1 can(s) evaporated milk
water
1 c broccoli florets
4 slice cooked bacon- crumbled
1 c fat free half and half
4 oz reduced fat cream cheese- cubed
1 can(s) campbell's broccoli cheese soup
1/2 c shredded cheddar cheese
4 medium scallions- diced

Steps:

  • 1. In dutch oven; add diced pototoes, onion and evaporated milk. Add just enough water to completely cover potatoes. Bring to a boil stirring constantly until potatoes are tender. Reduce heat to medium and add broccoli. Continue cooking until broccoli is crisp tender.
  • 2. Meanwhile, cook bacon and drain on paper towel. Crumble and add to pototoes. (I have also used left over diced ham)
  • 3. Add cream cheese and stir until completely melted into soup. Add half & half and broccoli cheese soup (undiluted). Continue stirring over medium heat until all ingredients are well incorporated and soup has thickened. Feel free to add more half & half to your disired consistency; as some of the liquid may evaporate during the cooking process.
  • 4. Remove from heat. Top with shredded cheese and scallions. Add salt and pepper to taste! Important note: By adding the soup and cream last keeps this soup from scalding on the bottom while potatoes are cooking.
