SPAGHETTI WITH BROCCOLI RABE, TOASTED GARLIC AND BREAD CRUMBS
Broccoli rabe can take whatever you throw at it and still shine. Its mild but distinctive bitterness dominates almost anything you cook it with - but what's wrong with that? So a pasta sauce that features it teamed with garlic and chili flakes is a natural. Add bread crumbs for crunch and the dish is a real winner. You can use the same pot for cooking the broccoli and the pasta; you can use the same skillet for toasting the bread crumbs and finishing the dish. The whole thing will be done within 20 or 30 minutes, and it will showcase broccoli rabe beautifully, as it deserves.

- Cook broccoli rabe in boiling water until it is soft, about 5 minutes. Remove with a slotted spoon, drain well and chop. Cook pasta in same pot.
- Meanwhile, add remaining oil to skillet over medium-low heat. Add broccoli rabe and toss well; sprinkle with salt and pepper. When it is warm add garlic and bread crumbs and mix well.
- When pasta is done, drain it, reserving a little cooking water. Toss pasta in skillet with broccoli rabe mixture, moistening with a little reserved water if necessary. Adjust seasonings and serve with freshly grated Parmesan.

- Drain broccoli and pasta, add them to the pan adding gradually the reserved cooking water as much as you need to combine everything.
- Mix well stirring with a spoon and allow to stew over medium heat for a further minute, during which time broccoli will break up taking on an almost creamy aspect. Add a swirl of olive oil, taste and adjust the seasoning with extra salt and black pepper if needed.

GARLIC SPAGHETTI
When Gramma passed away, my mom was given the job to make this garlic spaghetti for every family get together. It's so easy and cheap to make I decided I'd give it a try and it's awesome. The bowl will be empty before you know it!! If you love garlic and pasta like I do, you'll love this. It's a very light flavored pasta.

Steps:
- Combine the spices. While your noodles are cooking start warming a little of the olive oil and the garlic on low heat until the garlic has cooked (don't over cook or burn the garlic) and the flavors are released. Add a little butter and a little of the spices and let simmer on low for about a minute while stirring. Keep repeating the steps until everything has been added. The slower you add and the longer you let simmer the better the flavor.
- Once the noodles are done drain and toss together. We keep it in a crock pot to keep it warm or to take to work for pot luck days!
- I'm sure you can add any other spices you like or add more garlic. Serving size depends on if you are using this as a side dish as we do.

Steps:
- Bring a large pot of salted (2 Tbsp kosher salt per gallon) water to boil. Remove and discard lower stems from broccoli and break into bite size florets. Add florets to boiling water and cook for 8 minutes until tender. When finished, set cooked broccoli aside making sure to not drain boiling water.
- Cook pasta in boiling water to al dente. While pasta cooks, in a large pan saute 6 cloves of chopped garlic in a 1/3 cup of olive oil over medium-low heat until golden. After golden (about 2-3 minutes) add 1/2 tsp of crushed red pepper flakes to oil.
- Add the precooked broccoli to the pan and continue to saute for 2-3 more minutes to further soften broccoli. Before draining pasta reserve at least 2 cups of pasta water.
- Add 1 cup of pasta water to the pan to make the broccoli sauce and cook for 1 minute. Add the pasta into the pan along with a 1/2 cup of grated pecorino. Stir to thoroughly combine and continue to cook for 1 more minute.
- Taste test the pasta and adjust salt and pepper if necessary. Also, add more pasta water if required to achieve a loose consistency. Remove pan from heat and drizzle the 1/4 cup of extra virgin olive onto the pasta. Serve with more pecorino cheese, crushed red pepper, and extra virgin olive oil. Enjoy!

SPAGHETTI WITH BROCCOLI RABE, TOASTED GARLIC & BREADCRUMBS
This is a quick and easy dish where just a few ingredients come together in a delicious and impressive dish. Another great recipe from Mark Bittman, printed in the New York Times (April 2009). Bittman recommends making homemade breadcrumbs by tearing up stale bread, then pulsing the pieces in a food processor to make coarse crumbs (nothing approaching a powder). You can use the same pot for cooking the broccoli and the pasta; and the same skillet for toasting the bread crumbs and finishing the dish.

Cut the stalks on the diagonal into 1-inch pieces (with the leaves attached). Boil the pasta according to the package directions until al dente, about 10 minutes.
- Heat the oil in a large skillet over medium-high heat. Saute the garlic and pepper flakes until fragrant, 1 to 2 minutes. Avoid browning the garlic. Add the broccoli rabe, 1 teaspoon salt, lemon juice and 1/4 cup water. Cook, stirring frequently, until the broccoli is just tender, 4 to 5 minutes. Remove from heat.
- Drain the pasta, reserving about 1/2 cup of cooking water. Add the cooked pasta to the broccoli rabe in the skillet and stir in the ricotta cheese. Add most of the cooking water to moisten, using all of it if needed. Serve with Garlic Bread Crumbs sprinkled on top.

- Put up a pot of water for the pasta. Steam the bag of broccoli 1 minute less than the directions dictate. Begin the steps below, however, whenever the water boils, add the spaghetti.
- In a large saute pan, heat the olive oil on medium heat. When warm lower the oil to medium low and wait about 1-2 minutes, then add the garlic, salt, and pepper. Let the garlic cook low and slow for about 8-10 minutes. The garlic should turn golden and light brown, but never look like it’s burning (see photos above).
- Using half the bag of broccoli, begin to slice the larger pieces lengthwise using the stems as your guide in where to cut so that the broccoli pieces stay together. Set aside.
- Add the chicken broth to the oil and stir well. It may separate and that’s ok. It will all come together. After about 2-3 minutes, add the broccoli. Let cook for 1 minute and remove from heat.

- Preheat oven to 400 degrees. Toss the broccoli with the 2 tablespoons olive oil plus salt and pepper to taste. Place the broccoli in the oven, and roast 25 to 30 minutes. The broccoli should be starting to brown and be easily pierced with a fork when it is ready. When done, set aside to cool a bit.
- Start the water boiling for the pasta shortly after the broccoli goes in the oven. Plan to add the pasta to the water after the broccoli has been roasting for 15 to 20 minutes.
- Heat the 1/4 cup extra virgin olive oil in a small sauté pan on medium low heat. When it starts to get warm after a few minutes, add the garlic. Cook for one to two minutes, letting the garlic briefly sizzle a bit and release that garlicky aroma. You want the garlic to just start to turn golden, but remove before it gets brown. When the garlic is done, remove the pan from the heat.
- Drain the pasta when cooked to your liking, following package instructions. Toss immediately with the garlic olive oil mixture, followed by the broccoli. Stir in the cheese, with a bit more olive oil if you like. Add salt and pepper to taste, and parsley if you are using it. Serve and enjoy!
