Broccoli rabe can take whatever you throw at it and still shine. Its mild but distinctive bitterness dominates almost anything you cook it with - but what's wrong with that? So a pasta sauce that features it teamed with garlic and chili flakes is a natural. Add bread crumbs for crunch and the dish is a real winner. You can use the same pot for cooking the broccoli and the pasta; you can use the same skillet for toasting the bread crumbs and finishing the dish. The whole thing will be done within 20 or 30 minutes, and it will showcase broccoli rabe beautifully, as it deserves.

1/2 cup extra virgin olive oil, more as needed
3 or 4 cloves of garlic, peeled and slivered
1 cup bread crumbs, preferably homemade
1/4 teaspoon red pepper flakes, or to taste
About 1 pound broccoli rabe, trimmed and washed
1 pound spaghetti, linguine or other long pasta
Freshly ground black pepper
Freshly grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil and salt it. Put 1/4 cup olive oil in a large skillet over medium-low heat. When oil is warm, cook garlic just until fragrant, 1 to 2 minutes. Add bread crumbs and red pepper flakes and cook until bread crumbs are golden, 5 minutes or so. Remove and set aside.
  • Cook broccoli rabe in boiling water until it is soft, about 5 minutes. Remove with a slotted spoon, drain well and chop. Cook pasta in same pot.
  • Meanwhile, add remaining oil to skillet over medium-low heat. Add broccoli rabe and toss well; sprinkle with salt and pepper. When it is warm add garlic and bread crumbs and mix well.
  • When pasta is done, drain it, reserving a little cooking water. Toss pasta in skillet with broccoli rabe mixture, moistening with a little reserved water if necessary. Adjust seasonings and serve with freshly grated Parmesan.

1-2 cups Fresh Chopped Broccoli
2 tbsp extra virgin olive oil (replace with water if wanted)
2 cloves chopped garlic (If you are concerned about too much of a garlic flavor, slice the garlic thinly instead of finely chopped. )
Romano cheese (For sprinkling on top when serving (optional))
2 tbsp water (if needed for steam even if using olive oil)

Steps:

  • Clean and cut fresh broccoli into medium size heads (shave off the sides to the stalks and chop them small if you want to use everything)
  • Heat 2-3 Tablespoons extra virgin olive oil in a medium frying pan over low heat
  • Crush the garlic and chop fine or in thin slices and add to the olive oil
  • Simmer the garlic for a few minutes until fragrant (about 2-3 minutes)
  • Add in the broccoli pieces and cover with lid to trap any steam.
  • Add a little bit of water to promote steam and let cook about 5 to 10 minutes or until the broccoli is bright green and is still firm. You don't want overcooked broccoli!
  • When done remove from heat and set aside until ready to serve.
  • Top with grated Italian Romano cheese for additional flavor if preferred.

  • Preheat oven to 400 degrees F.

1/2 lb (220 grams) short pasta shapes (fusilli, penne, rotini...)
1 lb (450 grams) broccoli, cut into small florets (cut in half the big ones)
3 Tbsp olive oil or extra virgin olive oil, plus more to finish
2 large garlic cloves, minced
4 Tbsp breadcrumbs, toasted
1/2 lemon, juice (optional)
1/4 tsp chili flakes
salt and pepper to taste

Steps:

  • Split the broccoli into medium-small florets. Pare away the tough skin from the stalk and cut it into thick strips or small bites. Wash them.
  • Put pasta in a large pot of boiling salted water. When the water return to a boil, drop broccoli into the pasta water and leave the burner high enough to keep a rolling boil.
  • Cook pasta until al dente.
  • Meanwhile, in a large frying pan, over a low flame, warm 1 Tbsp of olive oil and gently fry the breadcrumbs and a pinch of salt, stirring constantly for about 5 minutes until crisp and golden. Spoon onto a plate and wipe the pan clean.
  • In the same frying pan, over a low flame, warm the rest of the olive oil and fry gently the garlic and chilli flakes for 2-3 minutes (do not let it burn or it will be bitter).
  • Drain broccoli and pasta, add them to the pan adding gradually the reserved cooking water as much as you need to combine everything.
  • Mix well stirring with a spoon and allow to stew over medium heat for a further minute, during which time broccoli will break up taking on an almost creamy aspect. Add a swirl of olive oil, taste and adjust the seasoning with extra salt and black pepper if needed.
  • Transfer to a serving bowl, sprinkle with toasted breadcrumbs, and freshly squeezed lemon juice to lighten up the dish (optional). Add extra chili flakes and a drizzle of olive oil. Serve immediately.

Steps:

  • Preheat oven to 450 degrees.

The bowl will be empty before you know it!! If you love garlic and pasta like I do, you'll love this. It's a very light flavored pasta.

3/4 cup olive oil
1/2 cup butter
5 -6 garlic cloves (chopped or minced)
1/2 teaspoon basil
1/4 teaspoon oregano

Steps:

  • Combine the spices. While your noodles are cooking start warming a little of the olive oil and the garlic on low heat until the garlic has cooked (don't over cook or burn the garlic) and the flavors are released. Add a little butter and a little of the spices and let simmer on low for about a minute while stirring. Keep repeating the steps until everything has been added. The slower you add and the longer you let simmer the better the flavor.
  • Once the noodles are done drain and toss together. We keep it in a crock pot to keep it warm or to take to work for pot luck days!

1 pound orecchiette
1 large head of broccoli
6 cloves garlic
1/3 cup olive oil
1/4 cup extra virgin olive oil
1/2 cup pecorino cheese
1/2 tsp chili flakes
2 cups pasta water

Steps:

  • Bring a large pot of salted (2 Tbsp kosher salt per gallon) water to boil. Remove and discard lower stems from broccoli and break into bite size florets. Add florets to boiling water and cook for 8 minutes until tender. When finished, set cooked broccoli aside making sure to not drain boiling water.
  • Cook pasta in boiling water to al dente. While pasta cooks, in a large pan saute 6 cloves of chopped garlic in a 1/3 cup of olive oil over medium-low heat until golden. After golden (about 2-3 minutes) add 1/2 tsp of crushed red pepper flakes to oil.
  • Add the precooked broccoli to the pan and continue to saute for 2-3 more minutes to further soften broccoli. Before draining pasta reserve at least 2 cups of pasta water.
  • Add 1 cup of pasta water to the pan to make the broccoli sauce and cook for 1 minute. Add the pasta into the pan along with a 1/2 cup of grated pecorino. Stir to thoroughly combine and continue to cook for 1 more minute.
  • Taste test the pasta and adjust salt and pepper if necessary. Also, add more pasta water if required to achieve a loose consistency. Remove pan from heat and drizzle the 1/4 cup of extra virgin olive onto the pasta. Serve with more pecorino cheese, crushed red pepper, and extra virgin olive oil. Enjoy!

1 large bunch broccoli, cut into about 4 cups florets and 1 cup thinly sliced stems from close to the base
Kosher salt
Ice
1 pound spaghetti
1/2 cup extra-virgin olive oil
2 teaspoon red pepper flakes
6 cloves garlic, minced
Juice of 1/2 lemon
1 cup freshly grated Parmigiano-Reggiano

Steps:

  • Add the broccoli florets to a large pot of boiling, salted water and cook until al dente, 3 to 4 minutes. Prepare a bowl of ice water. Remove the florets from the pot, reserving the cooking water. Stop the cooking process by shocking them in the ice water. Remove the florets and pat dry.
  • Add the spaghetti in the same pot of water. Cook until al dente, about 8 minutes.
  • Meanwhile, add the oil, sliced broccoli stems, red pepper flakes and garlic to a large skillet over medium-low heat and sprinkle with salt. Cook until the garlic is lightly toasted and fragrant, about 8 minutes. Add the florets, toss to coat and warm through.
  • Drain the pasta in a colander set in the sink, and add the pasta to the skillet. Increase the heat to medium-high. Toss the ingredients and adjust the seasoning if needed. Transfer the pasta to a large serving bowl. Squeeze the lemon juice over the top and sprinkle with the Parmigiano-Reggiano. Serve.

GARLIC OIL SAUTEED PASTA WITH BROCCOLI

2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

  • Drain the pasta, reserving about 1/2 cup of cooking water. Add the cooked pasta to the broccoli rabe in the skillet and stir in the ricotta cheese. Add most of the cooking water to moisten, using all of it if needed. Serve with Garlic Bread Crumbs sprinkled on top.
