PHYLLO BAKED BRIE BITES WITH CRANBERRY AND PROSCIUTTO image

yummy baked brie bites made from phyllo shells with cranberry and prosciutto

Number Of Ingredients 8

2 packs of Athens Classic Phyllo Shells
1/2 pound of brie, rind removed and cut into cubes
12 whole fresh cranberries, sliced in half
1 tsp lemon juice
1 tbsp sugar
3-4 slices of prosciutto, sliced and rolled
2 sprigs of thyme
Drizzle of honey

Steps:

  • Start by preheating your oven to 350 degrees.
  • Cut some of the rind off of your brie. Then, cube the brie into 1 inch squares and place in phyllo cups on a nonstick cookie sheet.
  • Cut a slice of prosciutto and elegantly roll it and place it on top of the brie.
  • If you prefer a tart appetizer, top it with a whole fresh cranberry. If you'd prefer it to be less tart, just use a half of cranberry, that's been tossed in lemon juice and sugar.
  • Tuck in a bit of fresh thyme, then bake in the oven for about 13-15 minutes.
  • You'll know they are done when the cheese is melty, the prosciutto starts to crisp a bit and the cranberry begins to blister.
  • Finally, add a drizzle of honey to the top of your phyllo appetizer and serve!

1 1/2 cups cranberry sauce (use homemade or store-bought cranberry sauce)
1 puff pastry sheet
1 brie triangle, chilled

Steps:

  • Preheat oven to 375 degrees F.
  • Thaw puffy pastry sheet flat. Cut puff pastry sheet into approximately 3-inch squares and place them into mini muffin tins, pressing them into the shape of the muffin hole. Place a 1-inch slice of brie in the center of each puff pastry and then top it with approximately 1 tablespoon of cranberry sauce.
  • Bake 10 minutes or until puff pastry corners are toasted light brown. Let cool 5 minutes before serving.

cooking spray
1 sheet frozen puff pastry, thawed
½ cup cranberry sauce
⅓ cup finely chopped walnuts
sea salt to taste

Steps:

  • Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
  • Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
  • Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

  • Grill for a few mins to melt the cheese and crisp the prosciutto. Sandwich each croissant together with a handful of rocket leaves.

1/2 lb brie cheese, cut into 18 pieces
1/2 cup prepared cranberry sauce
18 fresh small fresh thyme sprigs

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper, set aside.
  • Place pastry on a clean work surface and cut into 36 squares. Brush all squares with egg wash, then place one square on top of the other to make 18 stacks, each with 2 squares of pastry.
  • Place on prepared sheet, about 2 inches apart, and bake until puffed and golden, about 13-15 minutes.
  • Remove baking sheet from oven and top each puffed square with a piece of brie cheese. Return to oven and bake until cheese melts, about 3-5 minutes.
  • Place on a serving platter and top each with a small spoonful of cranberry sauce and a small sprig of thyme for garnish.
