BLUEBERRY, WALNUT AND BRIE TARTLETS
Another Bunco Group hit! I adapted this recipe from one of the cookbooks that you purchase in the grocery store while checking out. These are easy and simple to make with store bought miniature phyllo tartlets. In a pinch, you can make your own phyllo cups using phyllo sheets and a mini muffin pan.

Steps:
- Preheat the oven to 300 degrees. Put the grapes and kosher salt in a food processor and pulse until the grapes are coarsely chopped. Transfer to a strainer; let sit for a least 10 minutes. Mix the green onion, vinegar, oil, rosemary, garlic and pepper together in a small bowl. Add the grapes and mix well. ASSEMBLY: Arrange the shells on a baking sheet and fill each with 1/2 teaspoon walnuts, 1/2 teaspoon Brie, and 1/2 teaspoon grape salsa (use a fork to transfer the salsa to the shells to avoid capturing too much liquid). Bake until cheese begins to melt, about 5 minutes; do not overbake.
CRANBERRY-BRIE TARTLETS
My family hosts a holiday drop-in each year, and that's where these crescent tartlets made their first appearance. They're easy to make, but look like a gourmet treat. -Cindy Davis, Bonita Springs, Florida

Steps:
- Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Unravel a sheet of filo pastry onto a chopping board, covering the rest of the filo with a damp tea towel so it doesn't dry out. Brush the filo sheet liberally with some of the melted butter, then cut into three strips lengthways.
- Spoon ½ tsp cranberry sauce over the top right-hand corner of each pastry strip and place a piece of brie on top. Fold the pastry over the filling to create a triangle, then continue to fold the pastry over itself down the length of the strip. Brush with more butter to seal, then sprinkle over the poppy seeds and place on the lined baking tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the fridge for up to a day or frozen for up to three months.
- Bake for 15-20 mins (or 20-25 mins from frozen) until deep golden brown. Leave to stand for 5 mins before serving with some extra cranberry sauce.

Estimated Reading Time 3 mins
- Preheat oven to 400° F (204°C). If your puff pastry is thicker than ⅛ inch, roll it out to make it slightly thinner. Dust some flour on a work surface. Unfold or roll out puff pastry dough. Dust it with some flour and roll to ⅛" thickness. Using a round cookie cutter or glass slightly larger than the muffin tin, cut out rounds of dough. Place a round into the muffin tin and push down to create little tartlets. Repeat cutting and making tartlets to fill the pan.
- In a small bowl, combine the diced dates, walnuts, balsamic, thyme and vinegar. Season with the salt. Fill each tartlet halfway full with diced brie. Top with a little of the date mixture.
- Bake for 10-12 minutes or until light, golden brown. Push back in any filling that overflows out of the tartlets. Allow to cool for 5 minutes before removing from the pan. Garnish each one with a few fresh thyme leaves and serve warm.
