TUNA PASTA SALAD
Steps:
- Combine the minced onion and lemon juice in a small bowl and allow to marinate while you prepare the rest of the salad.
- Cook the pasta according to the directions on the package. Drain and rinse with cold water until the pasta is no longer hot.
- Finely dice the bell pepper so that the pieces are not much bigger than the corn and peas you'll be adding.
- Combine all the ingredients, including the marinating diced onions, in a large bowl (or in the pot where you cooked the pasta) and mix well. Add a tablespoon or two of additional Greek yogurt or mayonnaise, if you need more dressing. Season with additional salt, pepper, or lemon juice, if desired. Serve immediately or refrigerate and serve chilled.

Steps:
- Cook the pasta in water with a dash of salt.
- Combine all other ingredients in a large bowl with a lid.
- When pasta is cooked through, drain and rinse in cold water.
- Add pasta to other ingredients & mix thoroughly.
- Let sit in fridge for several hours before serving.
- May be served over a garden salad, baked potato, with crackers. This recipe is versatile & can be tweaked to your taste. Could be made gluten free if use gluten free pasta.

- In a large bowl, combine the lemon zest, lemon juice, and red onion. Let pickle for about 15 minutes.
- Remove the stems from the yellow and red bell peppers. Cut off the sides of the peppers, keeping the seeds and tops intact in the centers, then slice into strips and dice into small pieces. Transfer the bell peppers to the bowl with the pickled onion, along with the diced celery, grated carrots, tuna, and pasta. Toss to combine.
- Make the herb mayo dressing: In a small bowl, combine the cumin seeds, turmeric, white vinegar, Dijon mustard, Hellmann's® Mayonnaise, salt, red pepper flakes, black pepper, basil, chives, and carrot tops. Whisk until smooth.

TUNA PASTA SALAD
My own recipe for a delicious, cold salad made with multicolored rotini, canned tuna, onions, celery and carrots. It's wonderful in the summer as a light dinner served with blueberry or pineapple muffins. The secret is to used canned tuna in vegetable oil rather than water--it makes a more moist, delicate salad overall.

- In a large 3 qt pot, mix can of chicken broth with enough water to cook pasta. Add 2 t. salt to pot. Put in package of rotini and follow package directions for MINIMUM cook time. Drain pasta immediately and flush with cold water until all pasta is cool and has stopped cooking entirely. Set aside.
- In a large mixing bowl, combine mayonnaise with dill, pepper, and lemon juice.
- Add pasta to mayonnaise mixture.
- Drain can of tuna completely and add to pasta.
- Add chopped onions, celery, and carrots.
- Stir well until everything is combined.
- Refrigerate for at least two hours; add salt to taste and stir.
