BRIE WITH WALNUTS AND HONEY
Brie served with honey and walnuts can be a dessert or appetizer. This is our favorite way to enjoy brie cheese.

Steps:
- Unwrap the brie and place it on a platter. Cut it in half or into triangles if you like.
- Pile on the chopped walnuts.
- Drizzle generously with honey. Serve with water crackers.

BROWN SUGAR WALNUT BAKED BRIE
Steps:
- Cut top rind off of brie; discard.
- In a large mixing bowl, combine remaining ingredients and stir.
- Spoon brown sugar mixture over brie; place in shallow baking dish.
- Bake at 350° for 20 minutes or until cheese is bubbly.
- Serve with bread, apple slices, or crackers.

BRIE AND WALNUT CAKE
This is a mixture of goat cheese, Gorgonzola, and walnuts inside a wheel of Brie, sliced into two disks. Before serving, spoon red grapes in port syrup over the cake.

- In the bowl of an electric mixer fitted with the paddle attachment, beat goat cheese and blue cheese until mixture is softened and smooth.
- Using a sharp serrated knife, carefully slice Brie in half horizontally, gently easing the two halves apart. Spread 3/4 cup goat-cheese mixture on one half; sprinkle with walnuts. Place other Brie half, cut side down, on top of walnuts.
- Using an offset spatula, spread remaining goat-cheese mixture over top half of Brie. Chill two hours or overnight.
- Up to one hour before serving, combine port, honey, and two sprigs thyme in a medium saucepan. Bring to a boil over medium-high heat, cook until reduced by half, about six minutes. Add grapes; cook 30 seconds more. Using a slotted spoon, transfer grapes to a bowl; let cool. Reduce remaining liquid until thickened, about six minutes. Remove from heat.
- Just before serving, place cake on a platter, and arrange grapes on top of goat-cheese mixture. Drizzle with port syrup. Garnish the platter with walnut halves and thyme sprigs.

BAKED BRIE WITH HONEY AND WALNUTS
An easy baked brie recipe with honey, walnuts, and fresh rosemary

Steps:
- Preheat oven to 350F degrees. Place the brie into a small oven proof dish or pan. Place into the oven and bake for 5-10 minutes, until softened. I like mine oozy so go a few extra minutes. If you just want the brie soft, check at 5 minutes.
- Meanwhile toast walnuts by placing them in a skillet over medium heat. Stir occasionally until the nuts are fragrant and toasted. This will take 3-4 minutes.. Watch carefully as the walnuts can burn quickly. Remove from heat.
- In a small bowl, combine toasted walnuts, chopped rosemary, dried cranberries if using and the honey. Stir until completely combined.
- Remove brie from oven and spoon over the walnut mixture over the top. Sprinkle with a generous pinch of sea salt and serve immediately.
- Serve brie with your choice of crackers, pita chips, grapes, apples, or crostini. They're all delicious choices!
GIANT BAKED BRIE WITH APRICOTS AND WALNUTS
This is a simple and impressive baked Brie for a crowd. A quick apricot and walnut compote nestled in the pastry along with the warm cheese makes an elegant but easy party starter for any gathering.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Melt the butter in a small skillet over medium heat. Add the walnuts and cook, tossing occasionally, until lightly toasted, 1 to 2 minutes. Add the thyme, season lightly with salt and toss. Stir in the brandy and remove from the heat. Transfer to a small bowl and stir in the dried apricots and preserves. Let cool to room temperature.
- Place the Brie on the center of the prepared baking sheet and cut off the rind on top. Spread the apricot compote evenly over the top of the Brie.
- Unroll the puff pastry sheets on a floured work surface. Brush a 2-inch strip down the long edge of one sheet with the egg and line up the second sheet with the first, overlapping the edge brushed with egg so that the two stick together. Flour the pastry well and roll with a floured rolling pin to make a 14-inch square. Trim the corners from the pastry to make a circle (you want to make the largest circle possible). Reserve the trimmings. Transfer the pastry to the baking sheet and cover the Brie. Tuck the edges underneath the Brie.
- Reroll the pastry scraps and cut out five or six 2-inch leaf shapes, then score them with the back of a butter knife to create simple veins in the leaf. Brush the pastry-wrapped Brie with the egg. Arrange the leaves decoratively on top of the Brie and brush with the egg.
- Bake the brie until the pastry is puffed and deep golden, about 40 minutes. Let stand about 20 minutes before serving with apple and pear slices and crackers.
CRANBERRY AND WALNUT BAKED BRIE
This is ideal for parties etc and is fairly simple to make. It can be prepared in advance and then baked when needed. I use the cranberry orange sauce from Recipe #274069 which is very easy or you can buy it ready made. For the pastry i use all shortening since it gives a more flaky pastry, if you like a more flavorful pastry you can use half butter.

- Pastry: Try to keep all ingredients as cold as possible, rub the fats into the flour and salt. until you get a bread crumb consistency.
- Add just enough iced water to make a dough that comes clean away from the bowl.
- Roll out on a floured surface to a narrow strip.
- Fold in three, give a quarter turn so one of the open ends is towards you and roll out again. Repeat three times.
- Cover pastry and leave to rest in fridge 20-30 minutes. Take care to roll away from you and do not break the air bubbles that will rise.
- Spread the cranberry sauce over the pastry and place brie on top and top with walnuts.
- Bring the edges of the pastry together at the top of the brie in the center and pinch together.
- Bake at 375F for 10-15 mins or 350F for 25-30 minutes Take care not to overbake or the brie will become liquid and leak out of the pastry.

- Thaw puff pastry.
- Preheat oven to 450F.
- In a large, flat bottomed pan, heat oil and butter over medium heat. Add onion and sugar,stirring occasionally for 20 - 30 minutes or until caramelized and golden brown. Stir in walnuts and cranberries. Remove from heat and set aside.
- On a lightly floured surface, roll out pastry into 12" x 9" rectangle. Spread the mustard along the middle third of the pastry.
- Spoon onion mixture over the mustard. Top with brie and pear slices.
- Starting at the left top corner of the outside long edge of pastry, make diagonal cuts 1" apart, almost to the filling (like the left side of a V).
- Repeat on the right side in the opposite direction. Alternating strips from side to side, fold over filling to resemble a braid, brushing each strip with beaten egg to secure. Brush top with beaten egg.
- Transfer to parchment lined baking sheet. Bake in preheated oven for about 25 minutes, or until pastry is golden and pears are tender.
- Remove baking sheet from oven and let cool slightly. Cut into 8 pieces.
- May be made ahead up to 4 hours. Loosely cover with foil and set aside. Reheat in a 350F oven for 8-10 minutes and serve.
