EASY BREAKFAST STRATA
We start this breakfast casserole the night before so it's ready for the oven the next day. That way, we don't have to deal with the prep and dirty dishes first thing in the morning! -Debbie Johnson, Centertown, Missouri

- Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. With a slotted spoon, place sausage mixture over bread. Sprinkle with cheese., In a large bowl, whisk together eggs, mustard and milk; pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats., Bake, uncovered, until a knife inserted in center comes out clean, 30-35 minutes. Let stand 5 minutes before cutting. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

MOM'S BREAKFAST STRATA
This strata makes breakfast less hectic because all the prep work is done the night before. The quantities of mushrooms, onions, and green peppers can be varied to suit the tastes of those who will be eating this dish.

Steps:
- Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. Top with remaining bread pieces, then layer with the onion and ham. Sprinkle with remaining cheese. Whisk together eggs and milk; pour over the entire pan. Cover with aluminum foil, and refrigerate for 12 to 24 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake covered for 35 minutes, then remove foil and bake for an additional 15 minutes, or until top is evenly brown.

- Heat a skillet over medium-high heat with a spoonful of high-heat oil or butter. Add your diced onions and saute until fragrant and gaining some color, about 3 minutes. Add minced garlic, salt, and kale or whatever greens you are using. Saute until cooked through and wilted. (This will take a few minutes longer for kale, short for spinach).
- Optional: Add the bread cubes to the skillet and toss with onions and greens. If your skillet is too crowded, you can add the bread cubes and greens to your baking dish, and give everything a toss there instead. Add about half the cheese and mix that as well.
- In a large bowl, whisk together your eggs, milk, mustard, salt and pepper. Pour eggs over mixture in your baking dish. Use the back of a spoon to push everything down and make sure all your bread pieces are wet. Top with remaining cheese.

- Heat the oil in a large nonstick skillet over medium heat. Add the onions and garlic and cook for 5 minutes. Add the asparagus for another 4-5 minutes, then the spinach just until wilted.
- In a high-speed blender (or food processor), combine the tofu, nutritional yeast, flour, turmeric, sea salt, and blend until nice and smooth.
- Pour the tofu mixture in the large bowl with all the other cooked ingredients. Combine and pour overtop the diced bread in the casserole dish. Decorate with tomato halves and shredded cheese. Bake in preheated oven for 35-45 minutes until edges are golden and the top feels set.

- In a large skillet, over medium-high heat, melt the butter and add the sausage. After about 3 minutes, stir in the potatoes. Cover the skillet and cook the potatoes and sausage until the sausage is brown and the potatoes begin to sweat and soften (about 8-10 minutes). Add the spinach to the skillet and continue to cook the greens, uncovered, for about 2 minutes until wilted. Stir in the chopped green onions.
