Steps:
- Preheat oven to 350˚F (175˚C).
- In a medium bowl, season hash browns with salt, pepper, and paprika. Toss until fully incorporated.
- In a medium skillet, cook six slices of bacon until crispy. Set bacon aside and remove excess fat from the pan.
- Heat oil in skillet, then spread hash browns so they take the shape of the pan and form a nest.
- Cook hash browns for roughly 7 minutes on medium so that the bottom forms a crispy crust.
- In a medium bowl, whisk eggs, milk, chopped bacon, and cheddar cheese.
- Pour egg mixture over hash browns and spread evenly.
- Bake for 20 minutes, or until the surface is golden brown and eggs are cooked through.
- Sprinkle fresh chives, slice, and serve while hot. (This dish is delicious with ketchup or hot sauce, but that's optional.)
- Enjoy!

CHEESY CREOLE BREAKFAST SKILLET
Steps:
- For the Creole sauce: Whisk together the mayonnaise, mustard, Cajun seasoning, paprika, pickle, hot sauce, Worcestershire sauce, garlic and chives in a small bowl until combined. Cover and refrigerate until the skillet is done.
- For the skillet: Preheat the broiler. Toss the shrimp with the House Seasoning in a small bowl and set aside.
- Melt the butter in a large (12-inch) cast-iron skillet over medium heat. Add the onions and green and red peppers and cook, stirring occasionally, until the onions begin to turn translucent, about 5 minutes. Add the shrimp, andouille and garlic and cook, stirring constantly, until the shrimp are opaque and the sausage is heated through, about 2 minutes.
- Add the eggs and milk and slowly scramble the mixture with a silicone spatula, scraping up large curds from the bottom of the pan. As soon as the eggs are almost set, but still a tiny bit runny (about 2 minutes), remove from the heat and sprinkle with the Cheddar.
- Broil until the cheese melts, 10 to 15 seconds. Remove the skillet from the oven, drizzle with some Creole sauce, and sprinkle with the green onions.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.
BREAKFAST SKILLET
Steps:
- Heat 1 tablespoon oil in a skillet to medium heat, add ground chuck and chorizo, cook until brown, breaking it up as it cooks. Season with salt and pepper, to taste. Add potatoes, onion and 1 more tablespoon oil, if needed. Stir to incorporate, then let cook 8 minutes, undisturbed to form golden crust. Stir potatoes, then let cook undisturbed another 8 minutes. When potatoes are almost totally cooked through, mix in garlic, rosemary, and red pepper. Form 4 pockets in the hash to put the eggs. Add a little more oil in the pockets, if necessary, so the eggs don't stick. Carefully pour an egg into each pocket, cover pan and turn heat to low. Cook until eggs are set to desired doneness, about 2 minutes. Remove to a serving platter or place on individual plates and garnish with parsley.

- Brown sausage in skillet, set aside and chop into pieces.
- Add veggie oil to the skillet and cook hash browns on high until brown, flipping once. Take out and set aside.
- Add green pepper and sausage to the skillet, stir and cook for a few minutes. Once peppers are slightly softened, lower heat to medium and crack in eggs. Stir well.
- Add cheese and let melt.
- Serve warm, adding hot sauce to taste.

CHEESY SKILLET TACO MAC
You may be familiar with that one-skillet macaroni dish that comes in a box where all you have to add is ground beef? Well, this is my version, with a little Tex-Mex twist. The whole family will eat it up, and it's so easy to put together.

Steps:
- Heat the oil in a large cast-iron skillet over medium heat. Add the onion, garlic, ground beef and House Seasoning. Cook until the veggies begin to soften and the beef is slightly browned and no longer pink, about 7 minutes. Stir in the tomato paste, chili powder, cumin and beef stock.
- Increase the heat to medium-high and bring the mixture to a rolling boil. Reduce the heat to low and cook until the sauce reduces, 5 to 10 minutes. Add the pasta and continue to cook, stirring constantly, until the liquid starts to slightly absorb. Add the cheese and remove from the heat. Season with salt and pepper.
- To serve, top with the sour cream and sprinkle with the green onions, if using.
- Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
BREAKFAST SKILLET
Inspired by a dish I enjoy at a restaurant. You can add or substitute other veggies you have around, or toss in some cooked crumbled bacon or sausage, etc.

- Preheat oven to 350°F.
- Combine potato cubes with cumin and black pepper.
- Drizzle olive oil over potatoes, and mix well.
- Place on a baking pan and bake for 30 minutes, until browned and crispy.
- When potatoes are about halfway through baking, spray a saucepan with nonstick cooking spray and saute the green pepper, onion, and mushrooms.
- Remove from heat, add tomato, and set aside.
- Prepare the eggs any way you like (I like them over-medium).
- When potatoes are done, mix well with veggies.
- Sprinkle with cheese.
- Place eggs on top and enjoy!

- Brown sausage in large nonstick skillet on medium heat.
- Drain.
- Add potatoes and tomatoes, cook 5 minutes or until the potatoes are browned.
- Top with Velveeta.
- Mix eggs and milk; pour evenly over ingredients in skillet; cover.
- Reduce heat to Low.
- Cook 10 to 12 minutes or until eggs are set and cheese is melted.
- Let stand, uncovered, 5 minutes before cutting into wedges to serve.
