LIGHT MAI TAI TIKI POPS

These rum-spiked frozen treats take the flavors of a well-known Tiki cocktail - the Mai Tai - and turn it into a fruity (and boozy) ice pop.

1 container (6 oz) Yoplait® Light Fat Free piña colada or Key lime pie yogurt
1/4 cup canned coconut milk, well stirred (not cream of coconut)
1 teaspoon dark rum
1 fresh mango, peeled, pitted and cubed (about 1 cup)
3 tablespoons sugar
3/4 cup mango nectar, chilled
2 tablespoons dark rum
2 tablespoons light rum
2 tablespoons fresh lime juice
1 tablespoon orange liqueur
1 teaspoon amaretto liqueur

Steps:

  • In small bowl, beat coconut colada layer ingredients with whisk until smooth. Divide mixture among six 5-oz paper cups. Cover with foil; insert craft stick (flat wooden stick with round ends) through foil into center of pop. Freeze 2 to 3 hours or until frozen.
  • Meanwhile, in blender, place mango mai tai layer ingredients. Cover; blend on medium speed about 45 seconds, stopping frequently to scrape sides, until smooth. Cover and refrigerate while waiting for first layer to freeze.
  • When first layer is frozen, remove foil from pops. Pour mango mixture over frozen layer. Return foil to pops to help support sticks. Freeze about 8 hours or until frozen before serving. Store remaining pops covered in freezer.

The Mai Tai originated in California and was introduced to Hawaii in the 1940s, where orange and pineapple juices were added to create the Royal Hawaiian Mai Tai. This is Ree's favorite version of the famous drink.

6 ounces light rum
3 ounces dark rum
2 ounces lime juice
2 ounces orange liqueur
2 ounces almond syrup (like for coffee)
4 ounces orange juice
5 ounces pineapple juice
1/4 cup maraschino cherry juice, plus a few cherries for garnish
4 small wedges fresh pineapple, for garnish
Fresh mint leaves, for garnish

Steps:

  • Combine the rums, lime juice, orange liqueur, almond syrup, orange juice and pineapple juice in a mason jar and secure the lid. Shake well. Fill 4 rocks glasses with ice and pour over the mixture.
  • Add a splash of cherry juice to each glass. Garnish with the cherries, wedges of fresh pineapple and mint leaves.

Treat yourself to a mai tai cocktail, with the flavours of rum and orange curacao. This recipe serves one, but it's easily multiplied for a party

25ml golden rum
1 tbsp orange curacao
2 tsp orgeat syrup
25ml lime juice
2 tsp sugar syrup
ice cubes
crushed ice
25ml dark rum
wedge of pineapple, a lime wheel or a cocktail cherry (or all three!)

Steps:

  • Pour the golden rum, curacao, orgeat, lime juice and sugar syrup into a cocktail shaker with a handful of ice cubes. Shake until the outside of the shaker feels really cold.
  • Fill a tumbler with crushed ice then strain the cocktail over it. Slowly pour the dark rum over the top so it stains the top of the drink a rusty gold.
  • Garnish with fruit like pineapple, lime and cocktail cherries if you like.
