started with a basic recipe from the back of a sausage package, and over the years we have altered it until we got this version. Everyone loves it!!

2 packages regular flavor pork sausage (works well with deer sausage or one package reg and one hot)
2 chopped onions
1 (15 ounce) can tomato sauce
2 (15 1/2 ounce) cans pinto beans
1 cup water
1/2 cup chili powder
2 alarm chili seasoning mix (everything except the Masa)

Steps:

  • In large saucepan, cook sausage and onions over medium high heat, stirring frequently until meat is thoroughly cooked and no longer pink.
  • Add remaining ingredients; bring to a boil.
  • Cover and reduce heat to low; simmer for 30 minutes, stirring occasionally. If you are in a hurry and don't want to wait for it to thicken up, use the Masa from the 2 Alarm box.
  • Add salt and pepper to taste.
  • Makes 6-8 servings.

1 tablespoon vegetable oil
2 pounds Andouille, or other spicy, smoked link sausage, cut into 1/2-inch pieces
2 cups chopped yellow onions
1 tablespoon minced garlic
2 tablespoons chili powder
1 tablespoon Essence, recipe follows
2 teaspoons ground cumin
1 (12-ounce) bottle dark beer
1 (28-ounce) can whole tomatoes, crushed, and their juices
1 (28-ounce) can whole tomatoes, crushed, and their juices
3 tablespoons tomato paste
1 teaspoon sugar
6 cups cooked red kidney beans, drained and rinsed
Salt and freshly ground black pepper
1 cup grated cheddar cheese, garnish
1 cup finely chopped green onions, garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large heavy pot, heat the oil over medium-high heat. Add the sausage and brown on all sides, about 5 minutes. Add the onions, garlic, chili powder, Essence, and cumin and cook, stirring often, until soft, about 4 minutes. Deglaze the pan with the beer and cook until the foam subsides, about 1 minute.
  • Add the tomatoes, tomato paste, sugar, and kidney beans to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot. Season with salt and freshly ground black pepper, to taste.
  • Remove from the heat and transfer to a thermos. To serve, ladle into bowls or thick cups. Sprinkle each serving with grated cheese and green onions, and serve hot.
  • Combine all ingredients thoroughly.

2 tablespoons pure maple syrup
1 teaspoon salt
1 teaspoon dried sage
½ teaspoon onion powder
½ teaspoon ground black pepper
½ teaspoon red pepper flakes
¼ teaspoon ground marjoram
¼ teaspoon ground coriander
1 pinch ground cloves
1 tablespoon olive oil

Steps:

  • Combine pork, maple syrup, salt, sage, onion powder, black pepper, red pepper flakes, marjoram, coriander, and cloves in a bowl; mix well. Form into 10 small patties.
  • Heat olive oil in a large skillet over medium heat. Working in batches, add patties, and fry until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C).

A delicious, easy casserole with sausage, eggs, sour cream, cheese and green chiles--make ahead the night before for a easy, "you'll-want-seconds" meal. This recipe must be prepared the night before it is to be baked.

½ cup salted butter, divided
5 slices white sandwich bread, or as needed
1 pound bulk pork sausage
12 large eggs
⅓ cup sour cream
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chilies

Steps:

  • Butter the bottom and sides of an 8 1/2x11-inch baking dish with butter.
  • Use remaining butter to coat 1 side of each bread slice. Place bread butter-side down in the prepared pan until entire bottom is covered in a single layer.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned, crumbly, and almost fully cooked, about 5 minutes. Sprinkle sausage over bread in an even layer.
  • Beat eggs, sour cream, and pepper with either a whisk or electric beater. Pour evenly over sausage.
  • Mix Cheddar cheese and green chiles together in a separate bowl. Sprinkle evenly over the egg mixture. Cover and put in the refrigerator for 8 hours, to overnight.
  • To bake: Do not preheat the oven. Place, uncovered, in an oven and set to 350 degrees F (175 degrees C). Bake until brown on top, about 1 hour.

We came up with these as a variation to use what we had to make a great breakfast! We make the first half without the green chilis for the kids then add them in for the balance of the batter.

1 lb ground sausage, cooked (we like the bacon sausage)
4 large potatoes, shredded or 4 cups frozen hash browns, cooked
1/2 cup onion, shredded
1 1/2 cups baking mix
2/3 cup milk
1 teaspoon butter
3 eggs
1/4 teaspoon black pepper
1 cup shredded cheddar cheese (or more)
4 large cooked green chilies, such as New Mexico Hatch
cooking oil

Steps:

  • Sausage and potatoes should be cooked already.
  • Mix all the rest of the ingredients except cooking oil.
  • Fold in sausage and hashbrowns to mix.
  • Heat oil in a pan.
  • Drop mix into pan by large spoonfuls and flatten with the back of the spoon. Cook until browning around the edges and then use your spatula underneath and back of the spoon on the top to flip them over. Continue cooking until brown on second side.
  • Serve with a little syrup to sweeten them up or sour cream and hot sauce to go savory!

I realized when I was trying to explain to folks what I had changed that it took longer than to just say what was in it. So, based on that excellent recipe, here's one that builds on it and I think is even better. Thanks to Marty Hugo for the original recipe! This recipe becomes much better on the second and third days. So make it over the weekend and enjoy it all week, or make it a few days before your event!

1 lb ground beef
2 1/2 lbs mild Italian sausage (or substitute with your favorite sausage)
1 large onion, chopped
4 garlic cloves, minced
1 (15 ounce) can tomato sauce
2 (15 ounce) cans diced tomatoes
2 cups water
1 (12 ounce) bottle dark beer
2 teaspoons ground cumin
1 teaspoon paprika
1 tablespoon chili powder
red pepper flakes
1 teaspoon oregano and salt or 2 teaspoons adobo seasoning
1 teaspoon pepper
2 teaspoons Worcestershire sauce
2 (15 ounce) cans chili beans
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
2 green bell peppers
shredded cheddar cheese
sour cream
Fritos corn chips

Steps:

  • Brown ground beef, set aside.
  • Cook sausage whole, lightly burning the skin on all four sides.
  • Remove sausage from pan, Slice into relatively thick (1 cm) slices, and then slice those in half. Return to pan and cook until each piece is lightly burnt.
  • Saute onions and garlic until onions are slightly wilted.
  • Add all ingredients to a large stew pot, simmer for 2 hours, stirring occasionally.
  • Serve with cheddar cheese, sour cream, and fritos as desired.
