PEANUT BUTTER BALLS
My mom helped me post this recipe. These candies are like Reese's Peanut Butter Cups and are fun for kids to make because you don't have to cook them. My mom and I made these together.

Steps:
- In a large mixing bowl, combine all ingredients.
- Use a rubber spatula to mix the ingredients until fully combined. Cover bowl with plastic wrap and place it in the refrigerator for 30 minutes - 1 hour. This allows the mixture to firm up enough to form into balls.
- Remove chilled oat mixture from the refrigerator. Use damp hands to form into balls that are approximately 1″. Enjoy immediately or store in the refrigerator or freezer.

GRANOLA PEANUT BUTTER BALLS
I have a chef friend, Nancy Russman in Louisville Kentucky, who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she's very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party and a visit to my favorite goat cheese maker, Judy Schad, in nearby Greenville Indiana. This is one of Nancy's kid-friendly recipes that the kids can help make.

KIDS CAN MAKE: HEALTHY PEANUT BUTTER BALLS
These super easy fiber-packed treats are perfect as an after-school or camp-day snack. (Bonus: they don't need to be refrigerated.) For a more grown-up version, roll them in banana flour (made from freeze-dried bananas) or a little cocoa powder. For little and big kids: Let them help measure ingredients and roll the balls.

Steps:
- Process the raisin bran and brown rice cereals, peanut butter, maple syrup, cherries and 1 tablespoon water in a food processor until the mixture is finely chopped and comes together in a big ball. Roll some into a small ball; if it seems too dry and crumbly, add 1 more tablespoon water.
- Scoop the mixture into slightly mounded tablespoons, then roll them into smooth balls. (Dampen your hands with a little water to help you roll.)
- If using the bananas, pulse them in a food processor until finely ground. Pour them into a small bowl. Roll each truffle in the banana dust until coated. If using the cocoa, pour it into a small bowl, then roll each truffle in it until coated.
- Store the balls at room temperature in an airtight container for up to 2 days.

- Process the oats, flaxseeds, peanut butter, vanilla powder, salt (if using), and maple syrup in a strong food processor. Everything will start off very crumbly, but then it should start to come together a bit. Scrape down the sides as needed.
- When everything is well pulsed, try to pinch a bit of the mixture together and see if it holds together. If it is too crumbly, add in a bit of water about 1/2 a tablespoon at a time. Different peanut butter brands vary, which affects how much water you need, if any.
- Roll into balls about 1 tablespoon in size. Store covered in the refrigerator. You may need to separate layers with parchment paper.
