1 pound roll of breakfast sausage
4 eggs
1 cup sharp Cheddar cheese (shredded)
1 cup Bisquick baking mix

Steps:

  • Preheat the oven to 350F degrees. Grease a 12-cup muffin pan with non-stick cooking spray; set aside.
  • Crumble the sausage into a skillet over medium-high heat and cook until no longer pink. Drain off the fat and set the sausage aside to cool slightly.
  • In a large mixing bowl, lightly beat the eggs. Add the shredded cheese, Bisquick, and the fully cooked sausage; mix well.
  • Fill the prepared muffin cups about ¾ full with the mixture. Bake for 18-20 minutes, or until golden brown on top.

Number Of Ingredients 13

1 1/2 cups crumbled browned sausage
4 tablespoons olive oil
1 1/2 cups all-purpose flour, sifted
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 cup buttermilk, room temperature
1 large egg, room temperature
1/4 cup unsalted butter, melted (if you like a lot of salt, you could use salted butter)
8 ounces shredded sharp cheddar cheese (about 2 1/2 to 3 cups)
1/2 cup chopped green onions
4 cherry tomatoes, sliced no thinner than 1/8″ (optional)
Sea salt and black pepper

Steps:

  • Preheat oven to 375°.
  • Grease and flour muffin pans.
  • Preheat olive oil in skillet over medium heat. Take skin off sausage (if any) and break into smaller pieces. Once skillet is heated, add crumbled sausage and cook until nicely browned, stirring occasionally. As sausage is browning, break into smaller pieces if necessary. Set aside.
  • (Optional: While the sausage is cooking, you can slice your cherry tomatoes into slices about 1/8″ thick. You don't want them any thinner than that. Lay the slices on a paper towel and then lay another paper towel over the slices and blot away any moisture. The seeds will probably fall off and that's okay. The idea is you don't want water from the tomatoes getting in your batter.)
  • In large bowl, whisk together flour, baking powder, sugar, and salt.
  • In medium bowl, whisk together buttermilk, melted butter, and egg.
  • Pour wet mixture into dry mixture and stir. Before the mixture is completely mixed together, add the sausage, cheese, and green onions. Stir all ingredients together, making sure the additions are evenly incorporated. Try not to over-mix it.
  • Divide batter into muffin pans.
  • If using tomatoes, add one slice to the top of each muffin.
  • Lightly sprinkle sea salt and fresh ground pepper over the tops of the muffins. (I used a medium coarse setting for the pepper to give it an extra spicy flavor.)
  • Bake for 20-25 minutes until golden brown or until toothpick test comes out clean. Remove from oven and cool muffins in pan for 15 minutes before removing them.
  • Best served warm. But I found that you could leave them out for a brunch and they taste just fine at room temperature.

1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 cup shredded cheddar cheese
2/3 cup water
3 cups biscuit/baking mix

Steps:

  • In a large skillet over medium heat, cook sausage until no longer pink; drain. In a large bowl, combine the soup, cheese and water. Stir in biscuit mix until blended. Add sausage. Fill greased muffin cups three-fourths full. , Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 pound ground country sausage
4 English muffins, halved and torn into bite-sized pieces
1 cup diced onion
1 cup diced bell pepper
1 cup shredded Cheddar cheese
8 eggs, beaten
1 ¼ cups milk
1 teaspoon dried basil
½ teaspoon black pepper

Steps:

  • Cook ground sausage in a large skillet over medium-high heat, stirring often, until browned and cooked through, about 5 minutes. Drain excess grease.
  • Spread torn English muffin pieces along the bottom of a 9x13 baking dish. Layer cooked sausage, onions, bell peppers, and Cheddar cheese over English muffin pieces.
  • Combine eggs, milk, basil, and pepper in a bowl; whisk until well combined. Pour egg mixture into the baking dish. Gently press down on top of the casserole mixture with a spatula. Cover and refrigerate 8 hours to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Uncover casserole and bake in the preheated oven until casserole is set and eggs are cooked, about 35 minutes. Check by inserting a knife. Let cool for 15 minutes before eating.

1 cup sharp Cheddar cheese (shredded)
1 cup baking mix (recommend: Bisquick)

Steps:

  • Preheat the oven to 350 degrees. Grease a 12-cup muffin pan and set aside.
  • Cook the sausage in a skillet over medium-high heat until no pink color remains. As the sausage cooks, break it up using a potato masher or large fork so that it is crumbly and loose. Drain as much fat as possible from the cooked sausage.
  • In a large mixing bowl, combine the eggs, shredded cheese, cooked drained sausage and baking mix. Stir until thoroughly combined.
  • Fill muffin cups about 3/4 full. Bake for approximately 20 minutes or until golden brown on top.

6 plain English muffins
2 tablespoons olive oil
1 pound bulk hot or sweet breakfast sausage or Italian sausage
1/2 cup thinly sliced scallions, white and green parts (about 3 scallions)
Kosher salt and black pepper
12 large eggs
2 1/2 cups whole milk
2 cups shredded sharp Cheddar cheese, lightly packed (about 8 ounces)

Steps:

  • Generously grease the bottom and sides of a 9-by-13-inch baking dish with butter. Heat the oven to 350 degrees.
  • Cut the English muffins into 1-inch cubes. (Do not halve them horizontally as you would normally for the toaster.) Place the cubes on a sheet pan and bake until lightly toasted, 12 to 15 minutes.
  • Meanwhile, heat the olive oil in a medium or large skillet over medium-high. Add the sausage and scallions, a pinch of salt and a pinch of pepper and cook, breaking up the sausage with a wooden spoon, until the sausage is evenly browned, 4 to 6 minutes. Transfer to a paper towel-lined plate.
  • Meanwhile, add the eggs, milk, 1 teaspoon salt and 1/2 teaspoon pepper to large bowl; whisk to combine.
  • To assemble, sprinkle half of the sausage, then half of the cheese onto the bottom of the baking dish. Add the English muffin cubes on top in one even layer. Carefully pour the egg mixture into the pan, pressing down lightly to make sure all the bread is moistened. Top with remaining sausage and cheese. Wrap well and refrigerate for at least 1 hour up to overnight.
  • Heat the oven to 350 degrees. Bake the casserole until puffed and cooked through, about 40 minutes. (It may need a few more minutes, if your casserole has been in the refrigerator overnight.) Cool for 10 minutes, then cut into squares and serve.

  • Mix together bisquick, cornmeal, eggs, and milk.

  • Bake for 11-15 minutes.
  • Allow to cool completely.
  • Store in freezer in a large airtight container.
  • Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
  • Microwave on high for approx 90 seconds.
