1/4 cup bacon drippings
3 tablespoons all-purpose flour
4 cups milk
salt and pepper

Steps:

  • Mix bacon grease and flour in a skillet over medium heat until medium brown, stirring constantly.
  • Add milk, stirring constantly, until it comes to a boil.
  • Gravy should be medium thick.
  • Serve.

1 lb pork sausage (Jimmy Dean works great)
2 tablespoons butter
1/4 teaspoon sage, ground (optional)
6 tablespoons flour
4 cups milk
1/2 cup cream (adjust to need)
1/2 teaspoon Worcestershire sauce
salt and black pepper

Steps:

  • Saute sausage in a large saucepan over medium heat until done.
  • Drain off excess grease.
  • Stir in the butter until its melted; stir in sage.
  • Slowly sprinkle flour over the sausage, stirring continuously until the flour has coated the sausage.
  • Gradually stir in the milk, and worchestershire.
  • Bring the gravy to a boil and cook and stir for 2 minutes until thickened.
  • Stir in cream as desired.
  • Serve immediately.

2 cups water
1/3 cup unbleached white flour
1 teaspoon salt
1 teaspoon vegan chicken seasoning (I use Mckays)
1/2 teaspoon vegan beef bouillon powder (vegan beef seasoning, I use Mckays)
1 teaspoon soy sauce
1 tablespoon nutritional yeast flakes
4 -6 ounces soy crumbles (or other substitute 1/4-1/2 of 12 oz bag) (optional)

Steps:

  • In saucepan, bring the 1 cup water to a boil.
  • Blend the remaining ingredients except vegan sausage or crumbles until creamy, adding the flour at the end of the blending time.
  • Add the blended mixture to the boiling water, stirring with a whisk until mixture comes back to a boil.
  • Stir in crumbles. Serve piping hot over biscuits or toast.

2 cups cold water
1 pound sausage
6 large eggs, beaten
1 (16.3 ounce) can buttermilk biscuit dough, separated
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place gravy mix in a medium saucepan; gradually whisk in water. Cook over medium heat, stirring frequently, until gravy comes to a boil. Reduce heat and simmer for 1 minute; gravy will thicken upon standing.
  • At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place biscuits in the bottom of a 9x13-inch baking dish. Pour eggs over top, then layer with sausage. Pour gravy over sausage and top with shredded Cheddar cheese.

I have my favorite Southern biscuits and gravy, but scaled it down and changed the seasonings for a decidedly Italian twist.

½ cup skim milk, or as needed
1 ½ teaspoons white vinegar
1 cup all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
⅓ teaspoon sea salt
1 pinch dried oregano
1 pinch dried basil
1 pinch ground thyme
¼ cup cold unsalted butter
4 ounces turkey breakfast sausage
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
¼ teaspoon salt
¼ teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
1 ½ cups skim milk
½ cup chicken broth

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Pour milk into a measuring cup and add vinegar; set aside until milk curdles, 5 to 10 minutes.
  • Whisk together flour, baking powder, baking soda, sea salt, oregano, basil, and thyme in a large bowl. Cut in cold butter using a pastry cutter until mixture resembles coarse crumbs.
  • Make a well in the dry ingredients and stir gently with a wooden spoon while pouring in 1/4 cup curdled milk at a time. Stop adding milk when it resembles a slightly tacky but moldable dough, stirring until just combined. You may not need all of the milk.
  • Turn mixture onto a lightly floured surface, dust the top with a bit of flour, and then very gently turn the dough over on itself 5 to 6 times. Form dough into a 1-inch thick disc, handling as little as possible.
  • Using a 1-inch thick dough cutter, push straight down through the dough, then slightly twist. Repeat and place biscuits on a baking sheet in 2 rows, making sure they just touch; this will help them rise uniformly. Gently reform the dough and cut out 1 or 2 more biscuits.
  • Bake in the preheated oven until fluffy and slightly golden brown, 10 to 15 minutes.
  • While biscuits are baking, cook sausage in a skillet over medium heat until browned, using a wooden spoon to break it up as it cooks, about 5 minutes.
  • Stir butter in a saucepan until melted. Mix in flour, salt, and seasoning. Cook and stir for 1 minute. Whisk in milk and continue cooking and stirring until gravy has thickened. Cook and stir for 1 minute more. If mixture is too thick, add in enough chicken broth until gravy has desired consistency. Serve gravy immediately over split biscuits.

Steps:

  • Biscuits: Combine and sift dry ingredients. Gently knead in the butter. Add buttermilk and knead on a floured board. Knead gently and sparingly.
  • Form a flat mass about 1 1/2 cm high. Cut biscuit rounds with a largish water glass.
  • Bake in 200° C preheated oven on parchment paper on a baking tray for 10 mins or until a middle brown colour.
  • Saute the Pork mince with 30g of the butter in a small frying pan; add the herbs and spices. Grill the bacon until crispy.
  • Take the mince from the frying pan. Make a roux in the frying pan (don't clean it!) using the rest of the butter, the plain flour and the milk. Whisk continuously. It will take about three to four minutes. Make sure all the flour has had time to cook.
  • Add the mince to the roux and mix well. Chop the bacon into crumbs and add to the mince/roux.
  • Halve the biscuits and pour the gravy onto them. Enjoy!

I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

12 ounces of buttermilk biscuit dough
6 eggs
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups)
1 lb sausage, any flavor (I prefer sage or zesty Italian)
1 cup cheese, shredded (I like to use cheddar)
1/2 cup milk
salt and pepper

Steps:

  • Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
