Batter Bread is a no-knead yeast bread using unbleached all-purpose flour. Hint: All yeast bread doughs rise best at about 85 degrees F. Put in oven with a bowl of hot water on bottom shelf. Inside a gas oven with a pilot light is ideal.

1 (.25 ounce) package active dry yeast
2 tablespoons shortening
1 ¼ cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
2 teaspoons salt
3 cups sifted all-purpose flour
1 tablespoon butter, melted

Steps:

  • Mix together shortening, sugar, salt, yeast, and 1 1/5 cups flour. Add warm water and beat by hand about 300 strokes, or 3 minutes, with an electric mixer. Add remaining flour, scraping bowl often, and mix all together until smooth.
  • Cover with a clean cloth and let rise until doubled in volume.
  • Stir dough down gently, and spoon into a lightly greased 9x5 inch loaf pan (the batter should be sticky). Pat down with floured hands to help shape. Cover again, and let rise for about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake for about 45 minutes. Place on a cooling rack, and brush top with melted butter.

Posted in reply to a message board request. This is the recipe I used (over 40 years ago) when I made my first loaf of yeast bread. Its very simple to make, and produces a good, basic white bread for sandwiches and/or toast. If memory serves, the recipe was from the side of the Hecker's Unbleached Flour sack. Prep Time does not include the 1 to 2 hour rising time.

Number Of Ingredients 7

1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water (110°-115°F)
3 cups all-purpose unbleached white flour (or unbleached white "bread flour")
2 tablespoons soft unsalted butter
2 teaspoons salt
2 tablespoons sugar
unsalted butter, for brushing the top crust (optional)

Steps:

  • In a large bowl, dissolve yeast in warm water.
  • Stir sugar into yeast/water mixture, let mixture sit until tiny bubbles start to form.
  • Add butter, salt and half the flour.
  • With electric mixer on medium speed, beat batter for 2 minutes.
  • Add remaining flour, stirring by hand (or on low speed) until well blended and smooth (batter will be very thick, like a very soft dough).
  • Cover bowl with a tea towel, and let the batter rise in a warm draft free place for 30-60 minutes or until doubled.
  • Beat the batter by hand, about 25 strokes (the dough will deflate).
  • Spread batter evenly into a greased 8x3 or 9x4 inch loaf pan.
  • Smooth out the top of the loaf by patting it with your floured hand.
  • Cover pan, and let batter rise again (about 30-60 minutes) until dough has reached the top of the pan.
  • Bake in a preheated 375°F oven for 45-50 minutes, or until the loaf sounds hollow when the top is lightly tapped.
  • Remove from pan.
  • For a softer crust, brush the top of the hot loaf with butter.
  • Cool on a wire rack.
  • Bread slices best when it is cooled.

This is a fast recipe that is perfect for those times when you realize you don't have bread in the house. It is a slightly dense loaf that works well with soup, chili, etc. It can be customized in a number of ways - add any variety of cheese and herbs to the dry ingredients before adding the beer. To avoid a bitter aftertaste from the beer, use the lightest bottled brew you can find.

1 3/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon salt
2/3 cup shredded cheese (I used a jack and cheddar blend)
12 ounces beer, bottled (the lighter the beer the better)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Sift together all of the dry ingredients (flours through salt) into a large mixing bowl.
  • Stir in the shredded cheese.
  • Add the beer all at once, and stir batter until it just comes together.
  • It will be lumpy.
  • Do not overmix.
  • Transfer to a lightly greased 9 x 5 x 3-inch loaf pan and brush top with melted butter.
  • Bake for 35- 40 minutes, or until a skewer inserted in the center comes out clean.
  • Turn out onto a rack, and allow to cool.

My mom used this on the mornings when we had run out of bread. She also used it to make sandwiches if needed. It came from my Granny who used it to round out meals during the Depression.

4 teaspoons baking powder
2 cups flour
1 cup water
oil or lard (for frying)

Steps:

  • Mix flour and baking powder. Add water to make a soft dough. Pat dough out on a sheet of plastic wrap to about 1/2" thick.
  • Heat up about 1/4" of oil or lard to medium heat in a cast iron or non stick pan.
  • Cut dough into about 9 biscuits.
  • Fry on one side until brown. Flip and cook about 2-3 minutes more. Test for doneness by flaking the side of a biscuit with a fork. If it seems dry inside it is done.
  • Serve with butter and jam. Can also be napped with gravy and served with stewed hamburger and onions.

4 tablespoons unsalted butter
3/4 cup buttermilk
3/4 cup water
1 (1/4 ounce) package active dry yeast
3 large eggs
1 teaspoon hot red pepper sauce
4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup freshly grated parmesan cheese
1 cup shredded sharp cheddar cheese or 1 cup swiss cheese
1 large egg yolk beaten with 1 tablespoon water, for glaze

Steps:

  • Heat the butter in a medium saucepan over medium heat. Add the buttermilk and water and heat just until warm to the touch (105 to 115° F). Pour into a large bowl. Sprinkle the yeast on top and let stand for 5 minutes. Whisk to dissolve the yeast. Whisk in the eggs and hot sauce.
  • Sift together flour, sugar, baking powder, baking soda, and salt. Gradually stir into the liquid to make a thick batter. Stir in the Parmesan cheese and 3/4 cup of the Cheddar (or Swiss) cheese.
  • Lightly butter two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Spread the batter evenly in the pans. Cover loosely with plastic wrap and let stand in a warm place until doubled in volume, about 45 minutes.
  • Position a rack in the center of the oven and preheat to 375°F
  • Brush the tops of the loaves with the egg mixture. Bake 25 minutes. Sprinkle the tops of the loaves with the remaining 1/4 cup of shredded Cheddar and bake until the loaves are golden and sound hollow when removed from the pans and tapped on the bottoms, 10 to 15 minutes.
  • Cool in pans for 10 minutes. Turn out onto wire racks and cool completely. (The breads can be made 2 days ahead, wrapped in aluminum foil, and stored at room temperature.).

1/4 cup water, room temperature
1 tablespoon active dry yeast or 1/2 ounce active dry yeast
1 1/4 cups buttermilk or 1 1/4 cups milk, room temperature
1/4 cup butter or 1/4 cup margarine
1/4 cup vanilla-flavored syrup or 1/4 cup maple syrup
1 large egg, lightly beaten
1/2 teaspoon ground cinnamon
1/4 cup ground flax seeds or 1/4 cup wheat germ
2 teaspoons salt
1 cup raisins or 1 cup currants
1 cup quick-cooking rolled oats
3 cups flour (divided)

Steps:

  • In a large bowl, mix water and yeast. Add milk, butter, syrup, egg, cinnamon, flax or wheat germ, and salt. Stir. Mix in raisins or currants, oats, and 2 Celsius flour. Slowly add in remaining 1 Celsius flour. Cover bowl with clean kitchen cloth and let dough rise in warm, draft-free place for 45 minutes or until double in size.
  • Stir down thick batter for 20 seconds and scrape into greased 1.5 quart casserole dish. Cover and let rise in warm, draft-free place for 30 minutes or until doubled. Bake at 350 degrees F for about 1 hour or until bread is brown and sounds hollow when tapped on. Carefully remove loaf from casserole and let cool. Cut bread into wedges and serve.
  • If desired, brush loaves with butter immediately after baking to produce a soft crust.
