I got this recipe out of my neighborhood Firehouse cookbook (submitted by Sandra Sheets). The bars can be frozen & eaten later.

Number Of Ingredients 9

3/4 cup sweet unsalted butter, softened
1/2 cup brown sugar
1 egg
4 cups quick oats
2 -3 ripe bananas, mashed
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts or 1/2 cup chopped pecans
1/2 cup golden raisin

Steps:

  • Cream the butter & sugar together then add the egg.
  • Stir in the oats, bananas, salt, & cinnamon.
  • Mix in the nuts & raisins (if using).
  • Spread the mixture in a greased 9x13 pan then bake for 30-35 minutes on 350 degrees.
  • Cool in the pan then cut into bars.

6 ripe bananas
400 g gluten free oats ((roughly 4 cups))
1 tsp cinnamon
2 tbsp water

Steps:

  • Pre-heat your oven to 200C
  • To a large mixing bowl add the peeled bananas and mash with a fork
  • Now add in the oats, cinnamon and water and mix together
  • Line a square baking tin with baking paper and pour in the mix. Press down firmly with the back of a fork to compact it into the tin
  • Bake in the oven for 20-25 minutes at 200C.
  • Remove from the oven, allow to cool for 10 minutes before slicing into bars

⅓ cup coarsely chopped dried figs
¼ cup coarsely chopped almonds
¼ cup sunflower seeds
1 cup mashed ripe bananas
⅓ cup smooth peanut butter
2 tablespoons honey
2 large egg whites
⅔ cup fresh blueberries
1 tablespoon flax seeds
1 tablespoon sunflower seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking pan with parchment paper, leaving 1 inch of parchment hanging over the sides.
  • Mix oats, figs, almonds, and 1/4 cup sunflower seeds together in a bowl.
  • Stir bananas, peanut butter, and honey together in a saucepan over medium-low heat until completely melted and smooth, about 5 minutes. Remove saucepan from heat.
  • Whisk egg whites together in a bowl until foamy. Mix banana mixture into egg whites and whisk until smooth; add oat mixture and stir until batter well combined. Fold blueberries into batter. Press batter into the prepared pan; top with flax seeds and 1 tablespoon sunflower seeds.
  • Bake in the preheated oven until golden, about 30 minutes. Cool completely before cutting into bars.

4 cups oatmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
2 eggs, beaten
3/4 cup ripe banana, mashed
1/4 cup applesauce
1 cup milk
1 tablespoon maple syrup
3/4 cup brown sugar
1 tablespoon vanilla
1 cup dried cranberries

Steps:

  • Preheat oven to 325 degrees. Grease a 13"x9" pan or use a parchment sling.
  • Combine the oats, baking powder, salt and cinnamon. Make a well in the center.
  • In another bowl combine eggs, banana, applesauce, milk, maple syrup, brown sugar and vanilla.
  • Pour the liquid mix into the dry and stir until just combined. Add the dried cranberries.
  • Place in greased pan and bake for 45 minutes.
  • Cut into bars and enjoy.

2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
