KETO BREADED CHICKEN CUTLETS



Keto Breaded Chicken Cutlets image

Think you can't have some of your favorite foods on a keto diet? Think again. These low-carb chicken cutlets will definitely satisfy your craving for fried chicken, and also make an excellent base for a keto chicken parm.

1 1/2 pounds thinly sliced chicken breast
Kosher salt
2 cups almond flour
3 large eggs
1/2 cup grated Parmesan
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
Ghee or avocado oil, for frying
Lemon wedges, for serving

Steps:

  • If any of the chicken slices are thicker than 1/4 inch, pound them out one at a time between 2 sheets of plastic wrap with a meat mallet to a thickness of 1/4 inch.
  • Lay out the chicken on a baking sheet or plate and sprinkle all over with salt and just enough of the almond flour to lightly coat both sides.
  • Beat the eggs in a wide shallow bowl. In another wide, shallow bowl, mix the remaining almond flour with the Parmesan, paprika and garlic powder.
  • Dip 1 to 2 slices of chicken in the eggs to coat. Let the excess drip off, then coat thoroughly in the almond flour-Parmesan mixture. Return to the baking sheet or plate and repeat with the remaining chicken.
  • Heat 1/4 inch of ghee or avocado oil in a large skillet over medium-high heat until hot but not smoking. Add half the chicken and cook until golden on one side, about 3 minutes. Flip and cook until golden on the other side, another 3 minutes. Transfer to a paper towel-lined plate and repeat with the remaining chicken, adding more ghee or oil if needed. Serve with lemon wedges.

1/4 cup soy flour
2 tablespoons oat flour
1 tablespoon sesame seeds
2 tablespoons cream
2 tablespoons egg substitute

Steps:

  • ***Note: This is enough to coat 6-8 chicken tenders.
  • In a bowl, mix Dipping Sauce ingredients.
  • Dry meat with paper towels.
  • Place meat to be breaded (chicken breasts, chicken strips, pork chops, etc.) in the bowl and turn to coat well.
  • In plastic bag, add all dry ingredients.
  • Add half of meat to bag and shake to coat.
  • Repeat with other half of meat.
  • Fry in hot oil till browned on the outside and done on the inside.
  • Time will vary according to the meat/seafood being cooked.
  • Drain on paper towels.

  • Mix all ingredients together.
  • To use, spoon out the amount needed to coat meat. Meat/fish can be dipped in milk and beaten egg before dredging for a thicker, crispier coating.
  • Store any unused mix in an airtight container in a cool, dry place, or freeze.

I use this mixture to bread just about any type of meat. It's very forgiving and versatile, and helps to create a good gravy with the drippings as well. All the amounts are approximate -- I really just dump 'em in until it looks right!

1 cup Italian seasoned breadcrumbs
1/2 cup cornstarch
2 1/2 cups flour
1/4 cup paprika
2 tablespoons seasoning salt
1 tablespoon garlic powder
1 tablespoon powdered cayenne pepper
1 tablespoon powdered ginger
1 tablespoon chicken bouillon granule
1 tablespoon beef bouillon granules
1 tablespoon ground pepper

Steps:

  • Mix it all together! I usually save an old bread crumbs canister and just fill it with all the ingredients, then shake thoroughly to mix.
  • For perfect, moist pork chops with gravy, pound them thin, press mixture into both sides of (dry) chop, then fry in a preheated pan with oil until golden brown. Remove chops and add a couple cups of water to the pan. Deglaze pan and stir until it boils. Add chops and simmer for five minutes. If mixture doesn't thicken enough, or you want to make it more flavorful, add more of the mix directly to the water and stir constantly with whisk.
  • This breading can be used on pork, chicken, or beef. It results in a moist and delicious meal every time.
