12 bacon strips, halved
10 ounces boneless skinless chicken breasts, cut into 24 cubes
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup orange marmalade
1/4 cup soy sauce
2 garlic cloves, minced
1 teaspoon grated fresh gingerroot
Sweet-and-sour sauce, optional

Steps:

  • Place bacon on a broiler rack. Broil 4 in. from the heat for 1-2 minutes on each side or until partially cooked; cool. , Wrap a piece of bacon around a chicken cube and water chestnut slice; secure with a toothpick. In a large resealable plastic bag, combine the marmalade, soy sauce, garlic and ginger. Add wrapped chicken; seal and carefully turn to coat. Refrigerate for 2 hours., Drain and discard marinade. Broil chicken for 3-4 minutes on each side or chicken is no longer pink and bacon is crisp. Serve warm with sweet-and-sour sauce if desired.

1 whole chicken (3 to 3 1/2 pounds)
Kosher salt and freshly ground pepper
6 sprigs fresh thyme
1 to 2 lemons, cut into wedges
12 slices bacon (about 3/4 pound)
1 tablespoon dijon mustard

Steps:

  • Preheat the oven to 500 degrees F. Prepare the chicken: Season the outside of the chicken with salt and pepper. Fill the cavity with the thyme sprigs and lemon wedges. Turn the chicken so the cavity is facing you. Put one end of a bacon slice squarely over the left thigh, run it over the breast meat and finish by covering the right thigh. Repeat with 9 more strips of bacon, slightly overlapping, so the thighs and all of the breast meat are covered. Then wrap one strip, slightly overlapping, around each drumstick.
  • Cook the chicken: Transfer the chicken to a shallow baking pan or rimmed baking sheet fitted with a roasting rack and put it in the center of the oven. Roast for 20 minutes and then lower the oven temperature to 350 degrees F. Cook until the juices run clear or the internal temperature reaches 160 degrees F, 40 to 50 minutes. Remove the chicken from the oven and allow it to rest for 15 minutes before carving. The bacon should form a hard shell over the breast meat. Take care to use a sharp knife when carving so the bacon stays on top of the white meat.
  • Finish the dish: Make a sauce by pouring the juices from inside the cavity (along with the thyme and lemon wedges) into the baking pan. Put the pan over medium heat and bring to a simmer. Whisk in the mustard, add 2 tablespoons water and simmer for 2 to 3 minutes to allow the sauce to come together. Strain, pressing down on the lemon wedges to extract all the juice, and season with salt and pepper. Discard the lemon wedges and thyme sprigs and taste for seasoning. Serve immediately.

6 slices uncooked bacon
1/4 cup chicken broth
1/2 teaspoon ginger
1/2 teaspoon garlic powder

Steps:

  • Combine all ingredients for marinade except bacon and chicken in a shallow baking dish, about 11"x8".
  • Rinse and pat chicken dry. Keep folded and wrap with bacon slices. Secure with toothpicks if desired (just remove them before putting chicken in the oven so they won't burn). Place bacon wrapped chicken pieces into the marinade for 20-30 minutes, flipping halfway through to marinate both sides.
  • Preheat oven to 400 degrees. Heat 1-2 tablespoons olive oil in a heavy bottomed, oven safe pan over medium heat. Cook chicken pieces until bacon starts to crisp, about 3 minutes per side. Poor remaining marinade over the chicken and slide the pan into the oven. Cook for about 10 minutes, or until chicken is no longer pink.
  • Serve immediately.

1 pound split chicken wings
1 pound very small yellow potatoes

2 tablespoons olive oil

4 strips bacon
1 (10 ounce) bag tortilla chips
6 ounces shredded Cheddar cheese
6 ounces shredded Monterey Jack cheese
½ tablespoon sesame seeds
1 scallion, thinly sliced
3 tablespoons finely chopped red onion
½ cup halved cherry tomatoes
¼ cup sliced pickled jalapenos
Cilantro sprigs
½ cup sour cream
1 tablespoon finely chopped chives

Steps:

  • Whisk sriracha, soy sauce, sugar, sesame oil, and ginger in a medium bowl until sugar is dissolved. Pour about a third of sauce into a gallon-sized resealable plastic bag and add wings. Seal bag, pressing out air, then toss to coat wings. Chill at least 4 hours and up to 24. Cover remaining sauce and chill.
  • Boil potatoes in a pot of salted water, starting from cold, until fork tender, 15 to 20 minutes. Drain and let cool, then smash with the palm of your hand or the bottom of a glass to flatten gently. Chill until ready to use.
  • Preheat oven to 350 degrees. Line a large rimmed baking sheet with aluminum foil. Build separate foil trays by folding a large piece of foil in half, and folding up the edges to create three trays; one taking up about 1/2 of the sheet to hold the nachos, and 2 smaller trays to hold the wings and smashed potatoes.
  • Remove wings from bag, allowing excess marinade to drip off, and arrange in one of the small foil trays, spacing evenly. Toss smashed potatoes with olive oil in the other small foil tray and season with salt and pepper. Spread out potatoes; place in oven along with wings. Bake until wings are cooked through and tender at the bone, and potatoes are browned on the bottom, 25 to 30 minutes.
  • While wings and potatoes are roasting, cook bacon in a dry medium skillet over medium, turning occasionally, until crispy, 8 to 10 minutes. Drain on paper towels and coarsely chop; set aside.
  • Remove baking sheet from oven and increase temperature to 450 degrees F. Turn potatoes so they're browned-side up and use a brush to baste wings with half of remaining ginger sauce.
  • Arrange 1/2 the tortilla chips on open half of baking sheet. Toss cheeses together and sprinkle half over top of chips. Scatter remaining chips and cheese in a second layer over top. Tent chips with more foil, then place baking sheet back in oven. Bake until cheese is melted and wings are browned and crispy in spots, 5 to 8 minutes.
  • Remove from oven and let cool slightly. Drizzle wings with remaining ginger sauce, then sprinkle with sesame seeds and scallion. Scatter red onion, tomatoes, jalapenos, and cilantro over nachos. Place a dollop of sour cream over each smashed potato, then top with bacon and chives. Season with more salt and pepper and serve.

3/4 lb boneless skinless chicken breast
1/4 cup orange marmalade
2 tablespoons soy sauce
1/2 teaspoon ginger
1/8 teaspoon garlic powder
12 slices bacon
1 (8 ounce) can water chestnuts, drained,cut in half

Steps:

  • Cut chicken into 24 bit sized pieces.
  • Combine marmalade, soy sauce, ginger and garlic powder in a mixing bowl.
  • Add the chicken and marinate for 30 minutes.
  • Partially cook the bacon, so that it is still limp, not crisp.
  • Cut slices in half.
  • Drain marinade from the chicken pieces.
  • Wrap bacon strip around 1 chicken chunk and 1/2 water chestnut, securing with a wooden pick.
  • Place on broiler pan.
  • Broil for 3 to 5 minutes.
  • I always brush them with additional melted marmalade before serving.

2 teaspoon garlic powder
2 teaspoon brown sugar (or coconut sugar)
1 teaspoon Italian seasoning
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground pepper
8-12 pieces bacon (medium cut*)

Steps:

  • First, preheat the oven to 400ºF and line a baking sheet with tin foil. Place a wire rack on top and set it aside.
  • Combine all of the spices into a small bowl and mix.
  • Then, season each chicken breast with 1 teaspoon of chicken seasoning, making sure to get both sides. Save the remaining spices for later.
  • Next, wrap each chicken breast with 2 to 3 pieces of bacon depending on how big they are. Start at one end and move to the other. Transfer each bacon wrapped chicken breast to the wire rack.
  • Sprinkle the tops of the chicken breasts with the remaining seasoning.
  • Bake chicken breasts at 400ºF for 25 minutes. Then, turn the heat up to 450ºF and bake for 5-10 more until the bacon is crispy. The internal temperature of the chicken should be at least 165ºF and the bacon should be fully cooked.

1 pound boneless skinless chicken breast (cut into 1 inch pieces)
1 tablespoon + 1 teaspoon vegetable oil
2 1/2 cups small broccoli florets
1 tablespoon minced fresh ginger
1 teaspoon minced garlic
1/4 cup oyster sauce
1/4 cup low sodium chicken broth (can also use water)
1 teaspoon granulated sugar
2 teaspoons toasted sesame oil
1 teaspoon soy sauce
2 teaspoons cornstarch
salt and pepper to taste

Steps:

  • Heat 1 teaspoon of oil in a large frying pan over medium heat. Add the broccoli and cook for approximately 3-4 minutes or until broccoli is tender.
  • Add the ginger and garlic to the pan and cook for 30 seconds more.
  • Remove the vegetables from the pan; place them on a plate and cover to keep warm.
  • Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining tablespoon of oil.
  • Season the chicken with salt and pepper, and add them to the pan in a single layer - you may need to do this step in batches. Cook for 3-4 minutes per side until golden brown and cooked through.
  • Add the broccoli mixture back to the pan and cook for 2 more minutes or until the vegetables are warmed through.
  • In a bowl whisk together the oyster sauce, chicken broth, sugar, sesame oil, soy sauce and cornstarch.
  • Pour the sauce mixture over the chicken and vegetables and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.

I marinate the chicken thighs and them wrapped them up in the bacon. The marinated bacon seems to stay chewy or ends up burnt because of the sugar in the marinade. Eliminating this step I then just throw the little bundles into a hot oven and back until done, the bacon always comes out nice and crispy. Thanks for this recipe!
