- In a large bowl, whisk eggs, onion and pepper. Stir in potatoes, turkey and stuffing.
- In a large skillet, heat butter and oil over medium-high heat. Working in batches, drop potato mixture by 1/2 cupfuls into pan; press to flatten slightly. Fry 4 to 5 minutes on each side or until golden brown and heated through. Drain on paper towels. Makes about 12 patties.

5-Ingredient Fix Contest Entry. Just another mash-up recipe. I lover rich foods and this dish includes other ingredients that I also love like, butter and garlic, leeks and peas. So I thought I'd try all these ingredients together and came up with a dish worthy of Thanksgiving dinner.

Steps:
- Place garlic cloves in oven-proof small glass dish or bake ware and drizzle with a little olive oil. Cover container and roast garlic in 350 degree preheated oven for 25-30 minute, until soft. Do not burn garlic. Remove from oven and let cool.
- Clean leek in cold water. Sand and dirt gets down between the layers of a leek, so make sure you thoroughly clean it. Loosen the leafy layers and run under cold water until all grit is removed. Cut leek coarsely into about ¼ inch slices.
- Prepare snap peas by boiling briefly, 1-2 minutes, or steaming in a covered container in the microwave for 1 minute. Shuck some peas from the pods and discard pods. Set aside.
- In a non-stick skillet, cook sliced leek in 2 tablespoons of butter and cloves of roasted garlic for 1 minute over low heat. Add remaining butter to the skillet and continue cook another 2 minutes over medium-low heat allowing butter to brown a bit. Add the sugar snap peas and heat another half a minute. Remove skillet from heat and let veggies steep in brown butter sauce until ready to use.
- Meanwhile, prepare mashed potatoes according to package directions. Remove potatoes from bag and place in serving bowl. Pour burnt butter, leek, pea, and garlic sauce over potatoes and gently stir to incorporate.
- Season potatoes to your liking and serve alongside your favorite meat.
- Recipe makes 6 servings.
POTATO AND PEPPERONI PIZZA PATTIES #5FIX
5-Ingredient Fix Contest Entry. In a collaborative effort, one snowy weekend my partner and I made homemade pizza. The memory lasted, as did the delicious aroma of pepperoni, while I created recipes for this contest. This was the result of it all.

Steps:
- 1) Heat pepperoni in a 10" non-stick skillet over medium heat until warmed and some of the fat begins to renders off. Remove pepperoni and place in a large mixing bowl. Leave the rendered fat in the skillet.
- 2) To the pepperoni add potatoes, drained tomatoes, and cheese and mix well. Shape into 6 patties about ¾" thick.
- 3) Reheat fat over medium-high heat and fry the patties until light golden brown, flip and cook until fully heated through and golden brown on both sides. Drain patties on paper towel. Serve with warmed marinara sauce for dipping.

- Preheat oven to 425 degrees.
- Heat a large nonstick skillet over medium heat. Add green onions to pan and cook 2 minutes or until tender, stirring occasionally. Remove from heat.
- Place mashed potatoes in a medium bowl. Stir in onions, cheese, salt, pepper, and bacon. Divide potato mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
- Place panko in a shallow dish. Dredge patties in panko.

- Fry bacon pieces until crispy but not burned. Drain well and blot carefully. Try to remove as much excess fat as possible.
- Mix bacon with chives and Simply Potatoes, Traditional Mashed Potatoes.
- Scoop enough potato mixture to make a ball that is one or two bites. Roll into a ball, then push a cube or two of the cheese in the center and roll into a ball so that the cheese is all the way in the middle. The balls should not be very large or the cheese won't melt.
- Roll finished ball in panko until well covered.
- Fry in oil until browned all over.

- 1. Line slow cooker with a slow cooker liner.
- 2. Soak stuffing mix (seasoning and bread cubes) in 1 cup warm water in a large bowl approximately 5 minutes until stuffing is moist and fluffy.
- 3. With hands, mix ground beef well into stuffing. Be sure to thoroughly incorporate stuffing and ground beef. Shape half the beef into loaf shape, creating a well lengthwise to house potatoes. Spoon Simply Potatoes Mashed Potatoes into the well, packing firmly. Do not over fill. Cover the mashed potatoes with the remaining beef mixture, be sure to seal edges well. Place meatloaf into slow cooker.

- Peel film at corner of Simply Potatoes package to vent and heat on high for 3 minutes in microwave.
- Completely remove film and stir.
- Microwave on high for 1 additional minute.
- Add 1 Tablespoon of Hidden Valley Ranch mix. Mix well. You can add more according to your taste.
- Let cool just enough to touch. You want it a bit warm. It pipes out better when it's a little warm.
- Load your piping bag with the mashed potatoes, (or Zip Lock Bag). Snip off the tip of the bag enough to have a nice size whole.
- On a wax paper lined baking sheet, pipe mashed potatoes out into an "onion ring" shape. Nice plump circles.
- Once all your rings are done, stick into freezer until firmly frozen. 30 minutes should work fine.
- Preheat your deep fryer to 350.
- Prepare your Onion Ring Batter according to the directions on the box.
- Take a few out of the freezer at a time. Work in batches keeping the others frozen until ready to batter and fry.
- Dip your potato ring into batter, shake off excess.
- Fry 2-3 minutes per side or until golden brown. Serve with your favorite dipping sauce.
- Note~you do not have to cook these right away. They keep frozen beautifully for future cravings.

This is a great tasting recipe that can be prepared weeks in advance for holidays or other special occasions. I place the finished product in serving portions into saran type wrap and shape. Cover with foil and freeze. Great as a side with everything.

- In dutch oven type cooker simmer the.
- butter, margarine and cubed potatoes un- covered for approximately 20 minutes tossing with flipper a good number of times.
- When the potatoes start to golden add the onion, parsley, celery and black pepper and toss well to blend. Simmer 20 minutes covered and flip/ toss often.
- Remove from heat and preheat oven to 225°F.
- Using a hand masher slowly add the cubed bread and blend well. Place into a oven proof 2-3 quart buttered container. Pat down to shape. Top with butter dots, cover and slow bake for 45 minutes.
- Can be cooled and reheated or cooled and refrigerated for a few days or cooled and specific portions can be frozen.
- I always wrap cooled portioned potatoes in saran to shape for freezer stacking. Then wrap the saran portions in foil. Take directly from freezer and put into oven turn the heat to 325 F for 60 minute.

- Prepare potatoes as per direction on package.
- Add butter to taste.
- Let potatoes cool and chill in refrigerator anywhere from four hours to overnight (for best results potatoes should very cold and a little on the dry side).
- Mix bread crumbs and Italian seasoning.
- Heat oil in medium sized frying pan on medium heat.
- Remove potatoes from refrigerator. Form patties between 3 and 4 inches in diameter and between 1/4 and 1/2 inch in thickness.
- Place patties in bread crumb mix and gently press crumbs into the potatoes on both sides.
- Fry in oil until golden brown (about 3 minutes). Flip and cook another 3 minutes or until golden.
- Drain on paper towel.
