SIMPLE APPLE FRITTERS
These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

Steps:
- Measure and sift all dry ingredients.
- Beat eggs and milk together; slowly incorporating the dry ingredients.
- Add the chopped apples.
- In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
- Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
- Remove from oil and drain on brown paper.
- Cool and sprinkle with powdered sugar.
- Makes 12 small fritters.
- Eliminate the sugar and serve with pork roast.
APPLE FRITTER CAKE RECIPE
Steps:
- Preheat the oven to 350 degrees.
- In a mixing bowl, cream together the ⅓ cup butter and ⅔ cup sugar until smooth.
- Add the eggs, applesauce and 2 tsp vanilla to the mixing bowl, and beat until combined.
- Mix in the flour, baking powder and cinnamon until well incorporated.
- Pour the sour cream into the bowl and beat on high until the batter is smooth.
- Heat a skillet over medium heat on the stove, and add the apples, ½ cup sugar, ½ tsp cinnamon, pinch of nutmeg, water and cornstarch to it. Continue to cook until the apples are softened and the sauce has thickened.
- Mix together the ½ cup brown sugar and ½ tsp cinnamon in a bowl and set aside.
- Place half of the cake batter in an even layer in the bottom of a well greased baking dish.
- Cover the batter with the apple filling, and sprinkle ¾ of the brown sugar mixture on top of them.
- Layer the last half of cake batter on top of the apple filling, and top with the remaining brown sugar mixture.
- Bake for 30-35 minutes, or until cooked through.
- While the cake is baking, add the ingredients for the glaze to a mixing bowl, and beat until smooth and creamy.
- Immediately pour the glaze evenly over the cake when it is removed from the oven. Let sit to allow the glaze to harden a bit before serving.

- For filling: Make your filling by combining apples, sugar, water, cinnamon and cornstarch in a small saucepan. Cook on low heat for 5 to 7 minutes, stirring constantly until the sauce is thickend and the apples are a bit soft. Set aside to cool. In a small bowl, mix the brown sugar and cinnamon together until well combined and set aside.
- For Cake: Preheat oven to 350°. Grease and flour a 9×13 baking dish. Set aside.
- Cream butter and sugar until light and fluffy, about 3 minutes. Add applesauce and vanilla and mix till combined. Add the eggs, one at a time, beating well after each addition.
- Sift the dry ingredients together. Add the dry ingredients to the batter in three parts alternating with the yogurt in two parts, beginning and ending with the dry ingredients. Beat until just combined.
- Spoon half of the batter into the prepared pan. Spoon the cooled apple mixture over the batter carefully and spread as evenly as possible. Sprinkle 2/3 of brown sugar cinnamon mixture over apples and cover with the rest of the batter. Sprinkle the rest of the brown sugar cinnamon mixture over the top.
- Bake for 45-55 minutes, until a toothpick inserted into the center of the cake comes out clean.
- For Glaze: While the cake is baking, make the glaze. In a bowl, mix the powdered sugar, vanilla, and milk until the glaze is desired consistency. When the cake comes out of the oven, immediately but carefully pour onto hot cake. Try to pour as evenly as possible. You might have to pick up the cake and tilt it to spread the glaze evenly. I even poured some out that pooled at the corners and repoured that over the top. Let the cake sit for awhile for the glaze to set.

- Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.

- 1 Grease a 9-inch loaf pan with cooking spray; set aside. Preheat oven to 350-degrees F. 2 In a large bowl, using an electric mixer, beat butter and brown sugar until smooth and creamy. Add milk, eggs and lemon juice, continuiing to beat until well blended. 3 In a separate bowl, blend flour, bakng powder and cinnamon. Add dry to wet, beating until well incorporated. - In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1-2 minutes with a mixer.
- To this, add the flour, baking powder, cinnamon, salt and milk. Mix these ingredients well.
- In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine.
- Heat vegetable oil to 375 degrees (use a deep-fry thermometer or use an electric skillet with a temperature control). It is very important to make sure the temperature is hot enough to fry the fritters correctly.
- Once the oil is at 375 degrees, scoop out really large tablespoonfuls of the fritter batter (as big as you can get 'em!) and carefully and gently slide the fritter into the hot oil.
- When they get to a true golden brown color, carefully turn the fritters over to the other side (I used two spoons to carefully flip them) and continue cooking. (This should take approx. 2-3 minutes on each side).
- When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are brown), then you know they will be ready and cooked through.
- Using a slotted spoon, remove the fritters, one at a time, to a paper-towel lined (several thicknesses) plate to drain and cool.
- To make a glaze for the tops of the fritters, mix together the powdered sugar, vanilla and water in a small bowl until you have a nice "paintable" glaze.
- Using a pastry brush, brush this glaze over the entire top of the fritter. Let glaze harden slightly, turn it over and "paint" the glaze on the bottom. Place glazed fritters on wire rack; let glaze harden, then serve.

- Sprinkle 1/2 of the brown sugar/cinnamon mixture you set aside earlier, on top of apple layer.
- Repeat Layer: Pour the remaining batter over apple layer and top with remaining chopped apples cinnamon/sugar mixture, then the remaining brown sugar/cinnamon mixture on top.
- Use a knife and swirl through the mixture a few times.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 60 minutes.
- To make glaze, mix 1/2 cup powdered sugar and 1 to 3 tablespoons milk or cream together until well mixed. (Place mixture in microwave for 10 seconds to get it pourable if it needs a boost.)
- Let loaf rest in pan for about 15 minutes before removing from pan to let cool off completely on a cooling rack. Drizzle with glaze.
- If you want more glaze, make a double batch. :)

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x5-inch loaf pan with cooking spray.
- Combine apples, 2 tablespoons sugar, and 1 teaspoon cinnamon together in a bowl; mix until coated. Mix brown sugar and remaining cinnamon in a second bowl. Whisk flour and baking powder together in a third bowl. Set aside.

- In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla.
- Gently fold dry and wet ingredients together until just combined (do not over mix.) Fold in the apples. Add enough apples to make a very chunky batter. You want the apples to shine though!
- Heat a couple of inches of canola oil in a dutch oven over medium heat. When it gets hot (about 350 degrees), drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.
- Drop 1 tablespoon of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove fritters and drain on a paper towel.
- For the glaze (if using): In a medium bowl, whisk together the powdered sugar, salt, vanilla extract and whole milk.

- Start by preparing the apples. Wash and peel apples and then chop them into half inch cubes and then toss them in cane sugar and cinnamon, set aside.
