HAM KABOBS
Trudy Gernert of Seymour, Indiana sends her version of kabobs that include lots of flavorful ingredients like tomatoes, pineapples, and sweet potatoes.

Steps:
- In a small bowl, combine vinegar and brown sugar. Pour half of the marinade into a large resealable plastic bag; add ham and sausage. Seal bag and turn to coat; refrigerate for at least 2 hours. Refrigerate remaining marinade for basting., Place sweet potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the ham, sausage, sweet potatoes, green peppers, onion, tomatoes and pineapple. , Grill, covered, over medium heat or broil 4-6 in. from the heat for 8-10 minutes or until sweet potatoes are tender, turning and basting occasionally with reserved marinade.

BUILD-YOUR-OWN SHISH KABOBS

- If using bamboo skewers, soak them in water for 1 hour to retard charring.
- Whisk together all of the Dijon-rosemary steak ingredients (except the steak) in a bowl. Toss the steak in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
- Whisk together all of the citrus-tarragon chicken ingredients (except the chicken) in a bowl. Toss the chicken in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
- Whisk together all of the lemon garlic shrimp ingredients (except the shrimp) in a bowl. Toss the shrimp in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
- Cut vegetables into bite-size pieces.
- Puree balsamic basting vinaigrette ingredients in a blender for 30 seconds.
- Place meats, shrimp, and veggies in individual bowls and set out buffet style. Instruct your guests to skewer their own kabobs and baste veggies with balsamic vinaigrette.
- Grill kabobs directly over heat source for about 10 to 15 minutes, turning 1/4 rotation every 2 to 3 minutes, or until the meat and/or fish is cooked throughout.
BREAD, SAUSAGE AND CHERRY TOMATO SHISH KABOBS
The secret to making this simple and delicious dish is in the assembly. You always want the bread pieces to be touched by a tomato on one side and a piece of sausage on the other so it can soak up both of the flavors (see instructions below). You will need six, 12 inch metal skewers for this recipe. This is fantastic served over a platter of my recipe #299645 with a nice big wedge of room temperature Smoked Gouda, a bottle of red Wine and a jug of Apple Cider.

Steps:
- Coat a baking sheet with the canola oil and place in the oven in the broil position.
- Pre-heat the oven to broil.
- Assemble each of the six skewers in the following order, making sure each piece on the skewer is gently pressed against each other: tomato, bread, sausage,bread, tomato, bread,sausage,bread, tomato (it is critical to the success of this dish that the skewers are assembled in this order).
- Place the skewers on the hot baking sheet and broil for 12 minutes, turning 3 times.
- You want the sausage browned and just cooked through (you want them nice and juicy) and the bread crusty. Since all ovens run differently, check one skewer for doneness.
- When done, remove the baking sheet from the oven and immediately drizzle the skewers with olive oil and season with salt and pepper to taste.
- Serve hot or at room temperature.

TOMATO KABOBS
Steps:
- Heat a grill with coals. Spread them out in 1 dense layer and brush the grill with oil.
- Loosely thread 4 or 5 cherry tomatoes onto skewers, threading them through the stem of the tomato. Rub the tomatoes with olive oil and sprinkle with salt and pepper.
- Place the tomato skewers on the grill and cook for approximately 5 minutes, turning once.
SAUSAGE BREAD

- In a large bowl, combine the beef, oregano, garlic powder, salt, red pepper flakes, sage, eggs and cheeses; set aside. , On a floured surface, roll bread dough into a 12-in. x 10-in. rectangle. Spread meat mixture to within 1 in. of the edges. Roll up, jelly-roll style, starting at short end. Pinch the ends and seam to seal. Place seam side down on an ungreased baking sheet. Place in a warm place and let rise for 30 minutes. , Bake at 350° for 30-35 minutes or until golden brown and bread tests done. Brush with butter before serving.

- If you are using wooden skewers, first soak them for about 15-30 minutes in water. This helps to prevent them from burning on the BBQ.
- In a saucepan of boiling water, cook veggies (except for the tomatoes, leave these raw) for 2-5 minutes, just to partially cook them. I find this works really well, as opposed to adding them raw directly to the BBQ. They don’t end up burned or undercooked, and are done at the same time as the sausage.
