Steps:

  • Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
  • Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. 1 x 7 g sachet of dried yeast
4 tablespoons extra virgin olive oil
250 g gram flour
100 g ground almonds
50 g linseeds
100 g mixed seeds, such as chia, poppy, sunflower, sesame, pumpkin
1 sprig of fresh rosemary
4 large free-range eggs
3 teaspoons Marmite, optional

Steps:

  • Preheat the oven to 190ºC/375ºF/gas 5. Line a 1.5-litre loaf tin with greaseproof paper.
  • Fill a jug with 375ml of lukewarm water, add the yeast and oil, then mix with a fork until combined and leave aside for 5 minutes.
  • Pile the flour, ground almonds and all the seeds into a large bowl with a pinch of sea salt and make a well in the middle. Pick, finely chop and add the rosemary leaves. Crack in the eggs, add the Marmite (if using - simply leave it out for a gluten-free friendly loaf) and beat together, then pour in the yeast mixture.
  • Whisking as you go, gradually bring in the flour from the outside until combined - it'll be more like a batter than a dough. Pour into the prepared tin and smooth out nice and evenly on top.
  • Now you've got two choices - bake it straight away and it'll puff up a bit more and taste fantastic, or cover and place it in the fridge overnight and allow some slightly more complex sour flavours to develop. Both are brilliant, just different.
  • To bake, place in the middle of the oven for 45 minutes, or until golden, cooked through and an inserted skewer comes out clean. Transfer to a wire rack to cool for at least 20 minutes before eating, then serve.
  • This bread is good fresh for a couple of days, and delicious toasted for a few days after that. You could even use any leftovers to make croutons.

1 cup lukewarm water (105-115 degrees)
1 (1/4 ounce) package active dry yeast
1 1/2 tablespoons sugar
3 cups all-purpose flour

Steps:

  • Combine water, sugar and yeast in a small bowl and set aside.
  • Using steel blade, place flour and salt in bowl of food processor. Pour in yeast mixture through chute; process till dough forms ball.
  • Break dough apart and reprocess 2 or 3 times.
  • Place dough in BUTTERED bowl; turn dough in bowl to butter all sides.
  • Cover and let rise about 1 hour, till doubled in size.
  • Punch down, shape into loaf and place in greased loaf pan.

This is my Grandad's recipe for bread, normally it calls for half white flour and half whole wheat flour, but as my son has a wheat allergy, I substituted both flours for Spelt flour. Spelt flour is an ancient grain and can be used in place of white flour. It can be found in most Health food stores. Enjoy!   • Divide into three, place into three greased loaf pans, poke holes in loaves and let rise again.
  • Bake 425 degrees Fahrenheit (220C) for 20-25 minutes.

  • Put 4 cups of the flour, yeast, sugar and salt into large bowl.
  • Pour in hot water and oil and mix until combined- it will be sticky.

  • Knead for about 5 minutes until dough is elastic and smooth.
  • Place dough back into bowl and cover with a damp teatowel and let it rise until double its size- about 1/2 hour.
  • Punch it down and divide dough into two pieces.

  • Bake at 400F for 40 minutes.
  • Rub hot breads with water and wrap in a teatowel to'sweat' to soften the crust.

Healthy Sweet Bread Recipe Made With Spelt Flour image

1 package dry yeast
2/3 cups milk (I use cashew milk or coconut milk)
1/2 cup + 1 Tsp. coconut sugar
3 cups Spelt flour
1/4 cup coconut oil (melted)
2 Tablespoons warm water
2 eggs beaten
1/2 teaspoon pink Himalayan salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1 beaten egg for basting
*optional sesame seeds to sprinkle on top

Steps:

  • Heat a small sauce pan on the stove at medium-high heat to scald the milk. Scald milk in the pan on the stove top so it bubbles slightly around the edges but does not boil. As soon as the edges start to bubble remove from the heat. Let cool to lukewarm.
  • Once the milk has cooled to lukewarm transfer it to a large mixing bowl. Combine the milk, yeast, 1 teaspoon of coconut sugar and 1/2 cup of flour. Mix well. Cover and set for 1 hour in a warm place or in the oven with it off and a bowl of warm water on a baking rack below.
  • After 1 hour add to your yeast mixture 1/2 cup of coconut sugar, nutmeg, cinnamon, ground cloves, salt, 2 beaten eggs. Mix well. Slowly add melted coconut oil and continue to mix so the oil does not harden. Stir into a dough. Stir in 2 1/2 cups of flour. Knead for about 3-5 minutes and add more flour if needed. Spray a bowl with cooking spray and place dough in the bowl to rise. Cover and let rise in a cooled oven with a bowl of water underneath for about 3 hours.
  • Remove from oven the preheat oven at 375 Degrees F.
  • On a floured surface, divide dough into thirds. Pinch at the top and braid. Pinch at the base and make into a circle. Bast the top of the bread with 1 egg yolk. Sprinkle with optional sesame seeds. Bake 20-25 minutes.
  • *FOR ROLLS: Spray a 9x13 baking dish with cooking spray. Place 2 inch dough rounds about 1/2 in apart so you have a total of 12 rolls. Let rise 30 minutes. Baste the tops of the rolls with 1 egg yolk. Sprinkle with optional sesame seeds. Bake for 20 minutes.

  • In a large mixing bowl, add bananas and mash with a masher. Then add eggs, sweetener, oil, vanilla, cinnamon, baking soda, baking powder and salt; whisk until combined.
  • Add almond flour and stir and mix gently with spatula to combine.
  • Pour batter into previously prepared loaf pan and bake for 50 minutes or until the toothpick inserted in the middle comes out clean.
  • Remove almond flour banana bread from the oven and transfer to a cooling rack to cool off for 10 minutes. Remove bread from a loaf pan and let it cool off completely. Slice with sharp serrated knife - works best with breads to keep them from falling apart.

2 tsp bicarbonate of soda
½ tsp fine salt
1 tbsp sugar
350ml-400ml natural yogurt or buttermilk
handful of oats or seeds, optional

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 900g loaf tin with baking parchment. Put a flat baking sheet in the oven to get really hot.
  • Mix the flour, bicarb, salt and sugar in a large bowl until evenly distributed. Make a well in the centre and tip in the yogurt. Bring together to make a slightly sticky dough.
  • Lightly dust the dough with extra flour and form into a fat log, around the same size as the tin. Put in the tin. Dip a wooden spoon in flour and make a line along the centre. Top with a small handful of oats or seeds, if you like.
  • Bake on the hot baking sheet for 40-45 mins or until golden brown. Leave to cool in the tin then turn out onto a wire rack to cool completely before cutting into slices.

500g strong white flour, plus extra for dusting
2 tsp salt
7g sachet fast-action yeast
3 tbsp olive oil
300ml water

Steps:

  • Mix 500g strong white flour, 2 tsp salt and a 7g sachet of fast-action yeast in a large bowl.
  • Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
  • Tip onto a lightly floured work surface and knead for around 10 mins.
  • Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
  • Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
  • Place it on the baking parchment to prove for a further hour until doubled in size.
  • Heat oven to 220C/fan 200C/gas 7.
  • Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
  • Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.

If the dough doesn’t form a ball that clears the sides of the bowl, sprinkle in just enough of the additional flour to make this happen., Place the dough in a bowl that’s been lightly greased with vegetable oil or cooking spray; the bowl you started with is fine. Cover the bowl with plastic wrap or another airtight cover, and let the dough rise at room temperature until it's doubled in size, about 1 to 2 hours. If your kitchen is particularly cold (below 65°F), place the bowl of dough in your turned-off oven with the oven light on.
