- Preheat the oven to 190ºC/375ºF/gas 5. Line a 1.5-litre loaf tin with greaseproof paper.
- Fill a jug with 375ml of lukewarm water, add the yeast and oil, then mix with a fork until combined and leave aside for 5 minutes.
- Pile the flour, ground almonds and all the seeds into a large bowl with a pinch of sea salt and make a well in the middle. Pick, finely chop and add the rosemary leaves. Crack in the eggs, add the Marmite (if using - simply leave it out for a gluten-free friendly loaf) and beat together, then pour in the yeast mixture.
- Whisking as you go, gradually bring in the flour from the outside until combined - it'll be more like a batter than a dough. Pour into the prepared tin and smooth out nice and evenly on top.
- Now you've got two choices - bake it straight away and it'll puff up a bit more and taste fantastic, or cover and place it in the fridge overnight and allow some slightly more complex sour flavours to develop. Both are brilliant, just different.
- To bake, place in the middle of the oven for 45 minutes, or until golden, cooked through and an inserted skewer comes out clean. Transfer to a wire rack to cool for at least 20 minutes before eating, then serve.

- Combine water, sugar and yeast in a small bowl and set aside.
- Using steel blade, place flour and salt in bowl of food processor. Pour in yeast mixture through chute; process till dough forms ball.
- Break dough apart and reprocess 2 or 3 times.
- Place dough in BUTTERED bowl; turn dough in bowl to butter all sides.
- Cover and let rise about 1 hour, till doubled in size.

SPELT BREAD
This is my Grandad's recipe for bread, normally it calls for half white flour and half whole wheat flour, but as my son has a wheat allergy, I substituted both flours for Spelt flour. Spelt flour is an ancient grain and can be used in place of white flour. It can be found in most Health food stores. Enjoy! - In a cup, combine 3/4 cup of warm water, 1/4 cup of honey and 2 tbsp of yeast. Set aside.
- In a large bowl, combine 2 2/3 cup of warm water, salt and oil.

- Put 4 cups of the flour, yeast, sugar and salt into large bowl.
- Pour in hot water and oil and mix until combined- it will be sticky.

HEALTHY SWEET BREAD RECIPE MADE WITH SPELT FLOUR

- Heat a small sauce pan on the stove at medium-high heat to scald the milk. Scald milk in the pan on the stove top so it bubbles slightly around the edges but does not boil. As soon as the edges start to bubble remove from the heat. Let cool to lukewarm.
- Once the milk has cooled to lukewarm transfer it to a large mixing bowl. Combine the milk, yeast, 1 teaspoon of coconut sugar and 1/2 cup of flour. Mix well. Cover and set for 1 hour in a warm place or in the oven with it off and a bowl of warm water on a baking rack below.
- After 1 hour add to your yeast mixture 1/2 cup of coconut sugar, nutmeg, cinnamon, ground cloves, salt, 2 beaten eggs. Mix well. Slowly add melted coconut oil and continue to mix so the oil does not harden. Stir into a dough. Stir in 2 1/2 cups of flour. Knead for about 3-5 minutes and add more flour if needed. Spray a bowl with cooking spray and place dough in the bowl to rise. Cover and let rise in a cooled oven with a bowl of water underneath for about 3 hours.
- Remove from oven the preheat oven at 375 Degrees F.
- On a floured surface, divide dough into thirds. Pinch at the top and braid. Pinch at the base and make into a circle. Bast the top of the bread with 1 egg yolk. Sprinkle with optional sesame seeds. Bake 20-25 minutes.

- Mix 500g strong white flour, 2 tsp salt and a 7g sachet of fast-action yeast in a large bowl.
- Make a well in the centre, then add 3 tbsp olive oil and 300ml water, and mix well. If the dough seems a little stiff, add another 1-2 tbsp water and mix well.
- Tip onto a lightly floured work surface and knead for around 10 mins.
- Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size or place in the fridge overnight.
- Line a baking tray with baking parchment. Knock back the dough (punch the air out and pull the dough in on itself) then gently mould the dough into a ball.
- Place it on the baking parchment to prove for a further hour until doubled in size.
- Heat oven to 220C/fan 200C/gas 7.
- Dust the loaf with some extra flour and cut a cross about 6cm long into the top of the loaf with a sharp knife.
- Bake for 25-30 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool on a wire rack.
