BEST BREAD MACHINE BUNS
This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

Steps:
- Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour.
- Make a little well in the flour and add the yeast to flour.
- For rolls, select Dough Setting and press start.
- Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
- Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
- Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.
- for up to 1 week.
- ********IF USING A KITCHEN AID STAND MIXER USE THE FOLLOWING STEPS:.
- Dissolve 1 tblsp. sugar and the yeast in 1/4 cup warm water.
- Scald 1 cup milk.
- In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.
- Stir in eggs and yeast.
- Gradually add enough flour to form a semi-stiff dough, beating well after each addition.
- Once dough comes together in ball, take out dough and knead on a flat surface for about 5 to 10 minutes. The dough is ready when it feels soft like your earlobe.
- Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
- After first rise, punch down dough and knead for an additional 2-5 minutes.
- Form into desired shape and let rise again for 45 minutes to 1 hours.
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.

- Select dough/pasta setting when cycle is complete, remove dough from machine to a lightly floured surface.
- Divide dough into 3 equal portions, divide each portion into 6 balls.
- Turn balls in hands folding edge under to make a circle.
- Press ball flat between hands.

- Place the water, canola oil, flour, sugar, salt, vital wheat gluten, and yeast into the pan of a bread machine in the order recommended by the manufacturer, select the Dough cycle, and turn on the machine. Line baking sheets with parchment paper.
- When the cycle is finished, remove the dough to a lightly oiled work surface, and knead for 2 to 3 minutes. Cut the dough into 12 equal-size pieces, and roll the dough into balls by cupping your hand, with open fingers, over each piece of dough. Roll gently, with just a little pressure, to form a dough ball with a silky surface. Place the dough balls onto the parchment-lined baking sheets, and flatten each dough ball gently into a bun. Cover with a cloth and let rise until doubled, 30 to 45 minutes.
- Preheat oven to 350 degrees F (175 degrees C).

- Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
- Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).

HOMEMADE SLIDER BUNS

- Gather the ingredients.
- Combine the yeast and warm water in a large bowl or the bowl of a stand mixer. Let the mixture stand for about 10 minutes, until foamy.
- In a small bowl, whisk the milk, egg, and melted butter together to blend.
- Add the milk mixture to the yeast mixture along with the sugar, salt, and flour.
- Knead the dough by hand (or using a stand mixer with the dough hook) for 8 to 10 minutes, adding a little more flour if necessary to keep the dough from sticking to your hands, the countertop, or the sides of the bowl. The dough should be smooth and elastic at this point.
- Generously grease a large bowl with butter or oil. Gather the dough into a ball and place it into the greased bowl. Turn it over a few times to coat the dough thoroughly.
- Cover the bowl with plastic wrap and let the dough rise for 1 to 1 1/2 hours, or until it has doubled in bulk.
- Line 2 large baking sheets with parchment paper or lightly grease the pans.
- Punch down and pat the dough into a rectangle.
- Cut the dough into 18 pieces, about 1 1/2 to 1 3/4 ounces each (or smaller).

- Split the buns apart and stuff them with sandwich fillings.
- Gather the ingredients.
- In a small bowl, whisk together the water, milk, melted butter, and egg.
- Place the milk mixture along with the flour, sugar, salt, and instant or bread machine yeast in the bread machine in the order suggested by the manufacturer.
- Set to the dough cycle.
- Remove the finished dough to a lightly floured surface. Flatten into a rectangle, cut into pieces, and shape the dough into balls. Place on 2 parchment-lined baking sheets, cover with a kitchen towel, and let rise for 30 minutes.
- Brush with the egg wash and seeds, if using, and bake in a 375 F oven for 15 to 18 minutes.
- If desired, brush with melted butter if the egg wash and seeds weren't used. Let the buns cool on a rack.
- Split the buns in half, add sandwich fillings, and enjoy.

BREAD MACHINE BRIOCHE BUNS

- Put all the ingredients in your bread machine and set it on the dough setting.
- When the dough is ready, pull it out and cut into 16 pieces (or 8 if you want BIG burger buns). Preheat the oven to 170 F, then turn it off. This provides the perfect warmth for rising the dough. Spray two baking sheets with cooking spray.
- Shape each piece of dough into a ball, then pull the dough down from the top of the ball, pinching it together on the bottom to smooth out the surface. Set the ball on the baking sheet, leaving 2 - 3 inches of space between them to allow room for rising. Repeat until all 16 buns are shaped.
- Spray the buns with cooking spray (or lightly brush with melted butter or oil), then cover loosely with a clean towel and set them in the warmed oven. Let rise for about 40 minutes or until they are nice and puffy.
- Set a shallow baking pan in the bottom of the oven and pour about 1/2 cup of water in. Gently remove the towel from the top of the buns and turn the oven to 400 F. Bake for 15 - 20 minutes or until the tops of the buns are a deep golden brown. I set them on a rack to cool. - Measure all of the ingredients above, in the order they are listed, into your bread machine.
- Choose the Dough Cycle.
- Once the dough cycle has completed, remove the dough to a lightly floured surface and cover with a clean tea towel. Let rise for 15 minutes.
- After this time, divide the dough into 12 portions.
- Now it's time to shape the dough into buns.
- Make sure your hands are lightly floured.
- Shape each portion of dough into a ball.
- You want the tops of the buns to be taut, so while keeping the dough in a ball shape, you need to tuck the dough at the bottom of each bun, underneath as you roll. You'll get the hang of it as you roll them!
- Grease an 8 x 8 baking pan with oil.
- Then place the buns into the baking pan, in 3 rows of 4, spacing them out evenly.
- Cover with a clean tea towel and let rest and rise in a warm place for 1 hour, or until the dough has doubled in size.
- Preheat your oven to 350 degrees.
- When the buns are done rising, bake for 25 minutes. When the bread is done, it will sound hollow when you tap on it.
- As soon as you take the buns out of the oven, brush the tops with butter.

- This recipe is for a two-pound machine. Use the dough setting.
- Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. For my machine, I add the liquids first.
- Use the dough setting.
- When the dough is done put it on a lightly floured board and divide into three equal sections. Then divide each of those into three sections.
- The goal is to get 9 hamburger buns of appropriate size and shape.

- Don't skimp on the rich ingredients. Low-fat brioche is an oxymoron. The texture and flavor of these buns rely on butter and eggs, so bite the bullet and use the full amount of both – including the extra egg yolk.

- Decide how many brioche buns you want to make. This recipe will make six mega-buns, perfect for your half-pound burgers; eight standard burger buns; or 16 mini-buns, just right for sliders.
- For smoothest shape, flatten shaped brioche buns with a tool – not simply your hands. Since the dough is both chilled and high in fat, you'll find it easy to work with; it feels a bit like soft, smooth clay, rather than a typical springy yeast dough.
- Let the brioche buns rise fully. Because the dough is cold, the brioche buns may take longer to rise. Let them. Don't set your stopwatch and rail against fate if they're not nice and puffy when the alarm goes off.
- For added flavor and crunch, top with seeds. Remember that egg white you saved, back when you were making the dough? Whisk it with 1 tablespoon cold water, and brush the resulting "egg wash" on the buns.
- It's easy to over-bake the buns. Don't do it. Brioche buns will brown quickly, due to their high fat content, as well as the egg wash. And you want to err on the side of moistness.
