BEST BREAD MACHINE BUNS

Best Bread Machine Buns image

This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

Time 2h15m

Yield 12 serving(s)

Number Of Ingredients 7

1 1/4 cups milk
1/4 cup white sugar
1 tablespoon fast rising yeast or 1 tablespoon bread machine yeast
1/4-1/3 cup olive oil
3 3/4 cups bread flour
1 teaspoon salt
1 egg, lightly beaten

Steps:

  • Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour.
  • Make a little well in the flour and add the yeast to flour.
  • For rolls, select Dough Setting and press start.
  • Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
  • Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
  • Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.
  • for up to 1 week.
  • ********IF USING A KITCHEN AID STAND MIXER USE THE FOLLOWING STEPS:.
  • Dissolve 1 tblsp. sugar and the yeast in 1/4 cup warm water.
  • Scald 1 cup milk.
  • In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.
  • Stir in eggs and yeast.
  • Gradually add enough flour to form a semi-stiff dough, beating well after each addition.
  • Once dough comes together in ball, take out dough and knead on a flat surface for about 5 to 10 minutes. The dough is ready when it feels soft like your earlobe.
  • Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
  • After first rise, punch down dough and knead for an additional 2-5 minutes.
  • Form into desired shape and let rise again for 45 minutes to 1 hours.
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.

Time 3h45m

Yield 12

Number Of Ingredients 7

1 cup warm water
2 tablespoons canola oil
3 cups bread flour
1 tablespoon white sugar
¾ teaspoon salt
1 teaspoon vital wheat gluten
2 ¼ teaspoons active dry yeast

Steps:

  • Place the water, canola oil, flour, sugar, salt, vital wheat gluten, and yeast into the pan of a bread machine in the order recommended by the manufacturer, select the Dough cycle, and turn on the machine. Line baking sheets with parchment paper.

HOMEMADE SLIDER BUNS

Homemade Slider Buns image

Homemade slider buns are easy to make, whether you use the bread machine or the oven. Use for mini burgers or sandwiches like pulled pork.

Provided by Diana Rattray

Categories     Side Dish     Appetizer     Lunch     Dinner     Bread

Time 2h48m

Number Of Ingredients 14

1 (1/4-ounce) package/2 1/4 teaspoons active dry yeast
1/2 cup water (warm, about 110 F)
2/3 cup milk (room temperature)
1 large egg
3 tablespoons butter (melted and cooled slightly)
2 1/2 tablespoons sugar
1 1/4 teaspoons salt
3 cups all-purpose flour ( dip and sweep method )
Butter or oil (for greasing the bowl)
Optional Toppings:
1 large egg white
1 tablespoon water
1/4 cup sesame seeds or poppy seeds
Melted butter

Steps:

  • Gather the ingredients.
  • Combine the yeast and warm water in a large bowl or the bowl of a stand mixer. Let the mixture stand for about 10 minutes, until foamy.
  • In a small bowl, whisk the milk, egg, and melted butter together to blend.
  • Add the milk mixture to the yeast mixture along with the sugar, salt, and flour.
  • Knead the dough by hand (or using a stand mixer with the dough hook) for 8 to 10 minutes, adding a little more flour if necessary to keep the dough from sticking to your hands, the countertop, or the sides of the bowl. The dough should be smooth and elastic at this point.
  • Generously grease a large bowl with butter or oil. Gather the dough into a ball and place it into the greased bowl. Turn it over a few times to coat the dough thoroughly.
  • Cover the bowl with plastic wrap and let the dough rise for 1 to 1 1/2 hours, or until it has doubled in bulk.
  • Line 2 large baking sheets with parchment paper or lightly grease the pans.
  • Punch down and pat the dough into a rectangle.
  • Cut the dough into 18 pieces, about 1 1/2 to 1 3/4 ounces each (or smaller).
  • Shape the dough pieces into firm balls, flatten slightly with your hand, and place on the prepared baking sheets 2 to 3 inches apart.
  • Cover the buns with a lightweight kitchen towel and let them rise in a draft-free spot for about 30 minutes.
  • Preheat the oven to 375 F and arrange racks in the lower and upper thirds of the oven. If using the egg wash , whisk the egg white with 1 tablespoon of water until blended.
  • Before placing in the oven, brush each roll with the egg wash and sprinkle with sesame seeds or poppy seeds if using.
  • Bake for 15 to 18 minutes, or until golden brown.
  • If you didn't use the egg wash and seeds, brush with melted butter if desired. Let the buns cool on a rack.
  • Split the buns apart and stuff them with sandwich fillings.
  • Gather the ingredients.
  • In a small bowl, whisk together the water, milk, melted butter, and egg.
  • Place the milk mixture along with the flour, sugar, salt, and instant or bread machine yeast in the bread machine in the order suggested by the manufacturer.
  • Set to the dough cycle.
  • Remove the finished dough to a lightly floured surface. Flatten into a rectangle, cut into pieces, and shape the dough into balls. Place on 2 parchment-lined baking sheets, cover with a kitchen towel, and let rise for 30 minutes.
  • Brush with the egg wash and seeds, if using, and bake in a 375 F oven for 15 to 18 minutes.
  • If desired, brush with melted butter if the egg wash and seeds weren't used. Let the buns cool on a rack.
  • Split the buns in half, add sandwich fillings, and enjoy.

BREAD MACHINE BRIOCHE BUNS

Bread Machine Brioche Buns image

Provided by Ann

Time 2h20m

Number Of Ingredients 9

1 cup water
3 tablespoons milk
1 Tablespoon active dry yeast
2½ tablespoons sugar
1 large egg
3 cups bread flour
1/3 cup white whole wheat flour
1 teaspoon salt
2½ Tablespoons butter, softened

Steps:

  • Put all the ingredients in your bread machine and set it on the dough setting.
  • When the dough is ready, pull it out and cut into 16 pieces (or 8 if you want BIG burger buns). Preheat the oven to 170 F, then turn it off. This provides the perfect warmth for rising the dough. Spray two baking sheets with cooking spray.
  • Shape each piece of dough into a ball, then pull the dough down from the top of the ball, pinching it together on the bottom to smooth out the surface. Set the ball on the baking sheet, leaving 2 - 3 inches of space between them to allow room for rising. Repeat until all 16 buns are shaped.
  • Spray the buns with cooking spray (or lightly brush with melted butter or oil), then cover loosely with a clean towel and set them in the warmed oven. Let rise for about 40 minutes or until they are nice and puffy.
  • Set a shallow baking pan in the bottom of the oven and pour about 1/2 cup of water in. Gently remove the towel from the top of the buns and turn the oven to 400 F. Bake for 15 - 20 minutes or until the tops of the buns are a deep golden brown. I set them on a rack to cool. Brush the tops of the buns lightly with butter or olive oil - or spray lightly with cooking spray - to soften the tops of the buns.

HOMEMADE BREAD MACHINE DINNER BUNS

Homemade Bread Machine Dinner Buns image

Let your bread machine do all the mixing and kneading for these Homemade Dinner Buns! Then shape the dough into buns and bake them in your oven. This is a great recipe for dinner rolls, tray buns and hamburger buns.

Provided by Jo-Anna Rooney

Categories     Bread

Time 3h20m

Number Of Ingredients 6

1 1/3 cup milk (at room temperature)
1 1/4 tsp salt
2 tbsp sugar
2 tbsp butter (at room temperature)
3 1/4 cups all purpose flour
1 1/4 tsp bread machine or instant yeast

Steps:

  • Measure all of the ingredients above, in the order they are listed, into your bread machine.
  • Choose the Dough Cycle.
  • Once the dough cycle has completed, remove the dough to a lightly floured surface and cover with a clean tea towel. Let rise for 15 minutes.
  • After this time, divide the dough into 12 portions.
  • Now it's time to shape the dough into buns.
  • Make sure your hands are lightly floured.
  • Shape each portion of dough into a ball.
  • You want the tops of the buns to be taut, so while keeping the dough in a ball shape, you need to tuck the dough at the bottom of each bun, underneath as you roll. You'll get the hang of it as you roll them!
  • Grease an 8 x 8 baking pan with oil.
  • Then place the buns into the baking pan, in 3 rows of 4, spacing them out evenly.
  • Cover with a clean tea towel and let rest and rise in a warm place for 1 hour, or until the dough has doubled in size.
  • Preheat your oven to 350 degrees.
  • When the buns are done rising, bake for 25 minutes. When the bread is done, it will sound hollow when you tap on it.
  • As soon as you take the buns out of the oven, brush the tops with butter.
  • Let the buns rest in the pan for about 20 minutes, then remove to a plate.

  • Add ingredients to bread machine in the order listed and according to your machine’s instructions.
  • Set it to the dough setting and let it do its thing! Mine takes 2hrs and 20 minutes to complete the cycle.
  • Once dough cycle is through, take dough out and divide up into 8-10 mounds. I did 8 but our buns turned out really big so next time I’ll probably do 10.
  • The dough wasn’t too sticky so I didn’t have to use flour to patty the buns up. I rolled them in a ball and then flattened them into a disc shape. (Next time I make them I think I won’t flatten them out as much but allow for more roundness.) Another option is to roll the dough out until it’s about 1/2 inch thick and use a medium-sized drinking glass to cut out circles of dough.

  • Add all ingredients to the bowl of your mixer (excluding the 2 tbsp of butter for brushing). Using the hook attachment, mix everything together on medium low for about 3 to 5 minutes or until the dough is smooth and elastic and the side of the bowl is clean. The dough should be a bit sticky but manageable. If the dough is too hard or dry add a bit more water, or if it's too sticky add more flour.
  • Drop the dough onto a lightly floured surface and roll it out so that it's about 1/3 inch in thickness. Using a 2 inch cookie cutter, cut the sliders. You should get about 25 sliders from all this dough. Use the leftover dough by kneading it a couple times and rerolling it to a 1/3 inch in thickness. Place the cutout sliders onto the prepared baking sheet leaving a little space in between them, as they will continue to rise.

  • In a large bowl, combine all the ingredients except the salt. Cover and let rest 3o minutes at room temperature.
  • Add the salt and knead for 5-7 minutes, until a soft, smooth dough is formed. The dough can be kneaded by hand, stand mixer, or bread machine on the dough cycle. If the dough is sticking too much to the bowl, add flour a teaspoon at a time. It the dough seems dry or stiff, add water a teaspoon at a time. You want the dough to be smooth, elastic, and just slightly sticky. Place into a clean, lightly oiled bowl and allow to rise in a warm place for 3-4 hours, until very puffy. (It may not quite double in bulk.)
  • Divide into 10 pieces (or 15 for slider-sized buns), shape into balls, and place on parchment lined baking sheet. • After 5-7 minutes, lift the lid and check on the dough. If the dough is too wet (sticking to all sides) add flour 1 spoonful at a time until the dough begins to hold its shape. If too dry, (bouncing against the sides) add water 1 spoonful at a time until dough sticks to one side at a time. (See this picture tutorial if you are new to using a bread machine.)
  • When the DOUGH cycle is complete, check the dough. It should be doubled in size. If so, remove it from the pan. Otherwise, leave the dough in the pan until it rises until double the original size.

BRIOCHE BUNS - KING ARTHUR BAKING

From kingarthurbaking.com
  • Don't skimp on the rich ingredients. Low-fat brioche is an oxymoron. The texture and flavor of these buns rely on butter and eggs, so bite the bullet and use the full amount of both – including the extra egg yolk.
  • Use a mixer or bread machine to make the dough. Can you mix and "knead" brioche dough by hand? I'd recommend this ONLY if you're a seasoned and very fit bread baker.
  • Let the dough rise for 1 hour, then refrigerate it overnight. Brioche dough is easier to handle when it's cold. So let it rise at room temperature until it's noticeably puffy (top photos); then place it in a bag (no need to grease the bag), fasten the bag at the top, and refrigerate the dough overnight.
  • Decide how many brioche buns you want to make. This recipe will make six mega-buns, perfect for your half-pound burgers; eight standard burger buns; or 16 mini-buns, just right for sliders.
  • For smoothest shape, flatten shaped brioche buns with a tool – not simply your hands. Since the dough is both chilled and high in fat, you'll find it easy to work with; it feels a bit like soft, smooth clay, rather than a typical springy yeast dough.
  • Let the brioche buns rise fully. Because the dough is cold, the brioche buns may take longer to rise. Let them. Don't set your stopwatch and rail against fate if they're not nice and puffy when the alarm goes off.
  • For added flavor and crunch, top with seeds. Remember that egg white you saved, back when you were making the dough? Whisk it with 1 tablespoon cold water, and brush the resulting "egg wash" on the buns.
  • It's easy to over-bake the buns. Don't do it. Brioche buns will brown quickly, due to their high fat content, as well as the egg wash. And you want to err on the side of moistness.
