- Preheat the oven to 400°F/200°C.
- Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.
- Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper.
- Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
- Remove the broccoli from the oven and immediately toss with 1½ tablespoons olive oil, the lemon zest, lemon juice, and Parmesan. Serve hot.

- Chop the broccoli into medium sized florets (leave a good amount of the stem for a nice shape; see the photo or How to Cut Broccoli).
- Add the olive oil to a large skillet and heat it on medium high heat. Add broccoli and salt. Cook 3 to 4 minutes until starting to brown, stirring occasionally.
- Sprinkle the grated Parmesan cheese over the broccoli, followed by the cheddar cheese. Add 1/4 cup water to the bottom of the skillet and cover with a lid. Cook another 1 minute until cheese is melted and the water cooks out. Serve immediately!
SIMPLE STEAMED BROCCOLI
My son adores steamed broccoli, especially the way they serve it at the Outback Restaurant. He loves it so much he asks for broccoli instead of fries when we eat there!! This is what I came up with that he deemed "perfect". (The sugar is merely to help the water boil, like salt does, without adding a salty flavor to the vegetables. I read that tip on a website when I was learning to use the steamer and have used it ever since.)

- Wash the Chinese broccoli. Cut off part of the stem that is tough.
- Peel of the tough fiber n the surface of the stalk with a knife or vegetable peeler.
- Boil about 1 liter of water in a stockpot or the wok.
- Add 1 tablespoon of vegetable oil, 2 teaspoons of salt and a half teaspoon of baking soda.
- Blanch the broccoli for five minute until the stalks are tender. Drained.
- Heat 1 tablespoon of vegetable oil in the pan/wok. Saute the garlic bulb and ginger slices until aromatic.
- Add the oyster sauce, light soy sauce, sugar, and water. Stir until the sugar dissolves.
- Heat 1 tablespoon of vegetable oil in the pan/wok. Saute the chopped garlic until golden brown. Remove the garlic and add the ginger slices to continue sautéing for a minute.
- Add the vegetables and stir fry for half a minute.
- Add 2 tablespoons of water and cover with a lid. Let it cook for 5 minutes.
- Remove the lid and continue to stir-fry until the water is dried out.
- Combine the oyster sauce, light soy sauce, sugar, sesame oil, and water. Heat up in a small pot until the sugar dissolves.
- Place the vegetables on a serving plate, cut the Chinese broccoli lengthwise into two.
- Drizzle the sauce onto the vegetable.
- Garnish with fried garlic and serve.

- Trim the woody skin off the broccoli stem and slice the broccoli into nice long "trees". In a large saucepan, mix the water, olive oil, garlic, red pepper flakes, salt, and pepper. - Pick off the coarse leaves from the broccoli stems, and peel away any tough skin with a vegetable peeler. Break up the head into a few large florets, then slice each one lengthwise, cutting through the stem and top to make 1/8-inch to 1/4-inch-thick cross sections. Put the broccoli in a wide saucepan, about 3 inches deep, with a fitted lid.
- Peel and slice the garlic, and add to the pan with 2 cups water, the olive oil and red-pepper flakes. Season generously with salt and pepper.
- Bring to a boil, then cover the broccoli and simmer on low for about 50 minutes, until the broccoli is tender and just beginning to crumble and the liquid is nearly completely evaporated. If the pot starts to go dry before the cooking time is up, add a splash of water to keep it going.
- Rinse, fillet and chop the salt-packed anchovies, if using. When the broccoli is cooked through, toss with lemon zest, a squeeze of lemon juice and anchovies, if using, then scrape into a serving dish and cover with a drizzle of olive oil and grated cheese. Serve warm, or at room temperature.
