Quick and easy bagels you can make with your bread machine! You can use whatever topping that you wish, many like poppy seeds.

Steps:
- Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.
- When cycle is complete, let dough rest on a lightly floured surface. Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.
- Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 10 minutes.
- Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with your choice of toppings.
- Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.

BREAD MACHINE BAGELS
The boys like to help me shape the bagels. We come up with quite a few unusual shapes. These are quick and easy. We toast them and serve them for breakfast with cream cheese.

Steps:
- Measure first 5 ingredients into bread machine in the order recommended by the manufacturer.
- Select dough setting.
- When cycle is completed, remove the dough from the machine.
- Place dough on a floured surface.
- Divide into 10 parts.
- Form into balls, gently press thumb through center of ball and slowly stretch into bagel shape.
- Place on a greased baking sheet, cover with a damp cloth and set in a warm place to rise.
- Bring three quarts of water and one tablespoon of sugar to a rapid boil in a large sauce pan.
- Using a slotted spoon, drop 2 to 3 bagels into rapidly boiling water.
- Boil on each side for 1 to 2 minutes.
- Remove and cool on wire rack 1 minute.
- Brush with egg wash and sprinkle with sesame or poppy seeds, if desired.
- Bake at 400 degrees on a baking sheet sprinkled with cornmeal until golden.
JALAPENO CHEESE BREAD FOR BREAD MACHINE
Give me this bread with some wine and I'm a happy girl. It has just the right bite and coarse texture to it. It pairs nicely with anything from chili night to a cocktail party. Love it! These measurements call for a 1 lb. loaf.

SUPERB RYE BREAD (BREAD MACHINE)
This is a good basic bread machine recipe for rye bread. I don't remember where I got it, but it's one I make all the time.

- Select basic setting (I use basic setting, medium size, light crust) and push Start.
HOMEMADE BAGELS

- Combine the water, yeast, and 3 tablespoons of the sugar in the bowl of an upright mixer fitted with a dough hook. Stir and let stand until foamy, about 5 minutes. Gradually add 4 cups of the flour and the salt, and mix until the mixture comes together.
- Add 1 to 1 1/2 cups additional flour 1/2 cup at a time to make a stiff dough, either stirring with the wooden spoon or working with your hands. Turn out onto a lightly floured surface and knead until smooth and no longer sticky, about 5 minutes, adding just as much flour as needed. (Dough should be heavier and stiffer than regular yeast bread dough.)
- Grease a large bowl with 1 teaspoon of the oil. Place the dough in the bowl, turning to coat. Cover and let rise in a warm, draft-free spot until almost doubled, about 1 hour.
- Grease a baking sheet with the remaining teaspoon of oil.
- Remove the dough from the bowl and punch it down. Divide into 12 equal pieces, about 2 to 3 ounces each, measuring about 4 inches across. Form each piece of dough into a ball. Roll each ball into a 4 to 6-inch log. Join the ends and place fingers through the hole and roll the ends together. Repeat with the remaining dough. Place on the prepared baking sheet, cover with a clean cloth, and let rest until risen but not doubled in a draft-free spot, 20 to 30 minutes.
- Preheat the oven to 400 degrees F.
- Sprinkle the cornmeal on another baking sheet.
- In a large, heavy pot, bring 12 cups of water and the remaining tablespoon of sugar to a boil. In batches, add the bagels to the water and boil, turning, for 30 seconds to 1 minute. Dip the bagel tops in desired toppings. Flip bagels onto the prepared sheet pan. Bake for 5 minutes, turn over and cook for another 30 to 35 minutes.
- Remove from the oven and let cool on a wire rack.
BREAD MACHINE CHEESE BAGELS
Steps:
- Reserve half of the cheese to sprinkle on top of bagels before baking. Insert ingredients in bread machine according to manufacturer's instructions. Remove the dough from the machine after the first knead - approximately 20 to 30 minutes. Place dough on a floured surface. Divide into 8 parts. Form balls, gently press thumb through center of ball and slowly stretch into bagel shape. While bagels rise, bring three quarts of water and one tablespoon of sugar to a rapid boil in a large saucepan. Drop test dough (see hints below). Using a slotted spoon, drop 2 to 3 bagels into rapidly boiling water. Boil on each side for ½ minutes. Remove and cool on rack 1 minute, brush with egg and sprinkle with sesame or poppy seeds, if desired. Bake at 400 on a baking sheet sprinkled with cornmeal, until golden - approximately 15 minutes.

CHEESY BREAD MACHINE BAGELS
I developed this recipe from an asiago cheese bagel recipe. Any shredded cheese will work, I like cheddar, but a more flavor neutral white pizza cheese blend makes them work a little better for us. My son even likes to put peanut butter on them because the cheese flavor is not overpowering. You may need to add a little extra water if the ball of dough is too stiff, depending on the type of cheese you use. This recipe can easily be halved, and you could make this with out a bread machine by mixing and kneading by hand. You may add 1 more tsp. yeast for fluffier bagels. This recipe is so simple. My whole family loves them, and hardly wait until they are cool enough to eat.

Steps:
- Combine water, cheese, sugar, salt, flour, and yeast in the bread machine. I let the cheese kind of melt into the water for a minute before adding the remaining ingredients. Use the dough setting on your bread machine. If you machine doesn't have a dough setting stop it after the second kneading.
- Remove the dough after it has finished rising in the bread machine and divide into 12 equal pieces.
- Roll each piece into a ball.
- Using fingers, poke a hole in the middle and form into a bagel shape.
- Pre-heat oven to 375 degrees.
- Let rise under a wet tea towel or paper towels for 30 more minutes.
- While bagels are rising, start boiling a large pot of water with 3 TBS of sugar.
- After bagels have risen boil each side for 30 seconds, place on dry paper towels to dry before transferring to cornmeal dusted pan. (I divide them between 2 jellyroll pans).
- Use a pastry brush to brush the egg whites on top of the bagels.
- You can sprinkle extra cheese on top of bagels for a caramelized cheese crunch.
- Bake for 20-25 minutes. Turning the pans halfway for even baking.
- Cool for 5 minutes on wire rack and enjoy!
BREAD MACHINE - CHEESE BREAD
This bread machine cheese bread recipe is simple to make and is quite delicious. It also looks great. I don't know much about art... but this cheese bread loaf looks almost like a crazy Jackson Pollock painting! The cheese topping on this "abstract art" cheese bread loaf is certainly a conversation starter.

- Bread machine settings - 2 pound loaf, light color and "basic" bread setting.
- Pour the milk into the bread pan and then add the other ingredients (including the cup of cheese). Place the bread machine yeast in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together).
- Plug in bread machine. Enter the correct settings (basic, light color & 2 lb) and press the "start" button.
- Optional - After the FINAL kneading cycle and BEFORE the baking cycle commences, sprinkle a little extra shredded cheese on top of the dough. For safety reasons, do not place your hands inside the bread machine.
- When the bread machine has finished baking the bread, unplug the bread machine. Remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container (bread loaf pan) as it will be very hot!
- After removing the bread, don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.
- In our bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
- Before using your bread machine, you should read the bread machine manufacturer's instructions in order to use the bread machine effectively and safely.

BREAD MACHINE BAGEL RECIPE
You'll really like this bread machine bagel recipe. The bagels are chewy and delicious. They're so much better than store-bought bagels. They're also easy to make!

- This recipe is for a two-pound bread machine. Use the dough setting.
- Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first. With my Zojirushi bread machine, I add the liquids first.
- Use the dough setting.
- Check the dough after five or ten minutes of kneading. You'll want the dough to form a smooth, round ball. If the dough is too dry add liquid a teaspoon at a time until the dough balls up. If it looks too wet, add flour a tablespoon at a time until it looks as expected.
- When the cycle is done, remove the dough from the machine and let it rest on a lightly floured surface.
- While the dough is resting bring 3 quarts (12 cups) of water to a medium boil in a large pot. Stir in 3 tablespoons of sugar. The sugar helps to make the bagel crust a little crisper.
- This is also a great time to make the egg wash so you have that ready when needed. Beat the egg white and the water together. Then put it aside for later.
- Divide the dough into 10 equal sections. I use my bench scraper to help divide the dough. Roll each piece into a ball.
- Flatten balls. (I use the bench scraper for this too.) Poke a hole in the middle of each dough ball with your thumb. To get the final bagel shape, I kind of roll the dough away from the hole. Whatever method works for you is fine.
- Cover bagels with a clean towel and let rest for 10 minutes.
- Line a baking sheet with parchment paper. (Greasing the baking sheet would work fine too.) Then you're ready to boil the bagels!
- I boil 2 or 3 of them at a time. I use a slotted (flat) spatula to move the bagels to boiling water. Boil for them for 1 minute, 30 seconds on each side. Then move them to a wire rack with a paper towel underneath.
- Once all the bagels have been boiled, move them to the baking sheet. Apply the egg wash with a pastry brush.
- Bake in a preheated 375 degree oven for 20 to 25 minutes, until browned.
