The machine does the hard work and the shaping and baking in the oven is easy with this dough. Add your own toppings like dried onion bits if you like, but I like to top with kosher salt to bake and serve them with a roasted garlic butter. From The Bread Machine Cookbook by Donna Rathwell German.

Number Of Ingredients 8

1 1/3 cups water
1 tablespoon butter or 1 tablespoon margarine
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
4 cups bread flour
2 teaspoons yeast
1 egg white
1 tablespoon water

Steps:

  • Add ingredients into your bread machine in the order given, excluding the egg white and water (glaze ingredients).
  • Start machine on dough cycle.
  • When the dough is ready turn out onto your countertop. You shouldn't need much flour.
  • Cut dough into pieces the size of an egg and roll and stretch with your hands into 6 to 8 inch ropes. Place on an ungreased baking sheet.
  • Cover with a tea towel and let rise 20 minutes.
  • Mix the egg white and Tbsp water to make a glaze and brush over the breadsticks after they are risen. Add kosher salt, sesame seeds, or other toppings if you like.
  • Bake at 400 degrees for 12 to 15 minutes until golden brown.
  • Time includes the 2 hour dough cycle.

1 cup water, warm
1/2 cup shredded monterey jack cheese (with or without jalapeno peppers)
2 tablespoons cooking oil
3 cups bread flour
1/4 cup grated parmesan cheese
1 teaspoon dried Italian seasoning, crushed
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
1 teaspoon active dry yeast or 1 teaspoon bread machine yeast
1 egg white
1 tablespoon water
parmesan cheese or kosher salt

Steps:

  • Add warm water,oil,3/4tsp salt,to a 1 1/2lb to 2lb bread machine.
  • Add 2c.bread flour, parmesan cheese, Italian seasoning,1/2tsp black pepper, Monterey Jack cheese than add the last 1cup of bread flour.
  • Make a hole in dough and add the yeast.
  • Set machine to the dough cycle.
  • After cycle has finished, punch dough down and cover and let rest 10 minutes.
  • Divide the dough into thirds after rising.
  • On a lightly floured surface, roll each portion into a 14x10-inch rectangle. Using a pizza cutter or sharp knife, cut the dough lengthwise into 1/2-inch-wide strips.
  • For each breadstick, pick up 2 strips together and twist several times; press ends together.
  • Place breadsticks 1/2 inch apart on greased baking sheets.
  • Stir together egg white and water; brush onto breadsticks.
  • Sprinkle with pepper, salt, and/or cheese.
  • Bake in a 400 degree oven for 10 to 12 minutes or until golden brown.
  • Remove from baking sheets; cool on wire racks.

6 ounces pizza dough, recipe follows, or use store bought
Chili Garlic Oil, recipe follows
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves
2 tablespoons red pepper flakes
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing
1 whole head garlic (about 2 1/2 ounces, cloves separated and peeled)
2 cups extra-virgin olive oil
1 tablespoon red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or aluminum foil.
  • Roll the pizza dough out on a lightly floured surface into a long, thin strip. The dough should be about 4-inches wide, 14-inches long, and less than 1/8-inch thick. Brush the surface of the dough with the oil. Sprinkle with the Parmesan, thyme, and red pepper flakes. Using a pizza cutter, slice the dough into 1/4-inch strips. Place on the prepared baking sheets. The strips can be laid straight or curved into designs. You can also twist 2 strips together. Leave 1/2-inch space between breadsticks.
  • Alternately, roll out the dough very thinly and pass through the fettucine cutter of a pasta machine.
  • Bake until browned and crispy, 10 to 15 minutes.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • In a small saucepan, combine the garlic cloves and olive oil and bring to a simmer. Reduce the heat and simmer until the garlic begins to turn brown, 10 to 15 minutes. (Do not let the garlic get too brown or the oil will have a bitter taste.)
  • Remove from the heat and cool to room temperature. Add the red pepper flakes and infuse for at least 2 hours to allow the flavors to blend. Refrigerate in a covered container for up to 2 weeks.

4 tbsp Oil
420 gms All-purpose flour (or bread flour)
2 tbsp Organic cane sugar
1 tsp Salt
7 grams Instant yeast (or bread machine yeast)
3 tbsp Butter (vegan butter can be used)
1/2 tsp Oregano
1/2 tsp Thyme
1/4 tsp Garlic powder
1/4 tsp Salt

Steps:

  • Add the wet and dry ingredients in the bread machine pan in the order recommended by your bread machine manufacturer.
  • Close the lid and start the "Dough" cycle.
  • Once "Dough" cycle completes, remove the dough on a lightly floured surface and knead for a few seconds.
  • Roll the dough into about a 12 by 12 inch square.
  • Cut it into 16 strips using a pizza cutter.
  • Lift each strip and pinch it along the length from the bottom side and then roll with your palms into a smooth and even stick.
  • Arrange all the rolled dough sticks in a baking tray about an inch apart.
  • Cover the tray with another tray or plastic wrap and place in a warm place to rise.
  • After about 60 minutes the dough sticks will be double in volume and done through their second rise.
  • Preheat the oven to 350 °F with the rack at the middle level.
  • Bake the breadsticks (uncovered) in the preheated oven at 350 °F for about 15-18 minutes or until they turn golden brown.
  • Remove the tray from the oven.
  • Melt the butter and mix the 'topping ingredients'*
  • Apply the topping mixture with the help of a basting brush.

Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.

1 teaspoon honey
1 cup warm water (110 degrees F (45 degrees C))
2 ½ cups bread flour
¼ cup freshly grated Parmesan cheese
2 tablespoons olive oil
2 teaspoons Italian seasoning, divided
1 teaspoon salt
¼ cup melted butter
1 teaspoon garlic salt

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line baking pans with parchment paper.
  • Dissolve yeast and honey in warm water in the bowl of a stand mixer. Let sit until creamy, about 10 minutes.

I found this recipe in a bread machine book that I received for my birthday from my mother last year. If your machine has instuctions that the yeast should be placed in the pan first then reverse the order in which you add the liquid and dry ingredients.

200 ml water
3 tablespoons olive oil, plus extra for brushing
3 cups unbleached white bread flour
1 1/2 teaspoons salt
2 1/2 teaspoons easy-blend dried yeast
poppy seed, for coating (optional)
coarse sea salt, for coating (optional)

Steps:

  • Pour the water and olive oil in the bread machine pan, sprinkle over the flour, make sure you cover the water completely.
  • Add the salt in corner of the pan, make a small dent in the flour (not as far down as the liquid) and add the yeast.
  • Select the basic dough setting and press start.
  • Ligtly oil two or more baking sheets.
  • When dough cycle has finished, remove from the machine and knock it back on a lightly floured surface.
  • Roll out into a rectangle of approx 9x8 inch.
  • Cut into three 8 inch long strips, cut the strips widthways into ten.
  • Roll and stretch each piece to 12 inch approx if you like them crispy, make them shorter/thicker if you like more bread structure (the dough is very elastic, its easiest to start rolling them beween your hands).
  • If using the poppy seeds or salt, scatter some on the work area and roll them into the dough, this is best done halfway through the rolling process, later on they do not want to stick.
  • Be careful with the salt, its quickly too much.
  • Space apart on the baking sheets, brush lightly with some olive oil, cover with clear film and leave in a warm place for 10 to 15 minutes.
  • Preheat oven to 400°F.
  • Bake for 12 to 15 minutes (longer if you made them shorter and thicker) or until golden brown, turning once.
  • Transfer to a wire rack to cool.

2 ½ cups bread flour
3 teaspoons instant yeast
1 tablespoon white sugar
½ teaspoon salt
¾ teaspoon Italian seasoning
1 tablespoon minced garlic
¼ cup grated Parmesan cheese
1 tablespoon butter, softened
¼ cup hot water
½ cup milk
1 egg
¼ cup butter, melted
½ cup grated Parmesan cheese

Steps:

  • Fit your food processor with a steel blade. Place the bread flour, yeast, sugar, salt, Italian seasoning, garlic, 1/4 cup grated Parmesan and softened butter in the processor; pulse to blend. Stir together hot water, milk and egg. Start the processor and slowly pour in the milk mixture into the feed tube until a ball forms around the blade. Run for 30 seconds to knead. Remove dough from processor and knead briefly by hand. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough, and turn it out onto a lightly floured surface. Roll the dough into a 10x12 inch rectangle. Use a knife or pizza cutter to slice the dough lengthwise into ten strips, and then cut these strips in half. Brush tops of strips with 2 tablespoons melted butter, and sprinkle with 1/4 cup Parmesan cheese. Cover, and let rise until nearly double, about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 18 to 23 minutes, or until golden brown. Turn broiler on, and brush breadsticks with remaining melted butter and Parmesan cheese. Broil just until the cheese starts to turn light brown, about 2 to 3 minutes. Serve warm.

3 tablespoons olive oil
4 cups flour
1 teaspoon salt
2 teaspoons oregano
3 tablespoons powdered milk
