ROASTED GARLIC & OLIVE OIL BREAD DIP
Roasted Garlic & Olive Oil Bread Dip, tender roasted garlic that spreads like butter swirled in oil with savory herbs and spices.

Steps:
- Roast Garlic- Preheat oven to 400. Peel most of the outer layers of garlic bulbs. Cut off the tops to expose cloves. Drizzle each garlic bulb with a but of olive oil and tightly wrap each in aluminum foil. Place bulbs on a baking sheet and roast 35-40 minutes. Allow bulbs to cool enough to easily touch, then peel gently peel cloves.
- Mix and Serve: In a small serving bowl, mix extra virgin olive oil with dill, onion powder, dried oregano, marjoram, salt and pepper. Top with roasted garlic and garnish with fresh dill. Add a little more pepper and salt if needed, and serve with crusty bread.

I love the dipping oil served at my two favorite Italian restaurants. Both restaurants vary slightly in ingredients. Here is my version that brings the best of both worlds. Serve with warm bread fresh out of the oven and enjoy!

- Preheat oven to 350°F. Place unpeeled garlic cloves in baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool.
- Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add vinegar and rosemary and puree herb mixture until smooth. With machine running, gradually add remaining 1 cup olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and refrigerate. Let stand 15 minutes at room temperature and whisk before using.)
BREAD DIPPING OLIVE OIL (SIMILAR TO BRAVO)
This is a recipe very similar to the bread dipping oil they give you at Bravo (an Italian chain restaurant in the USA). My hubby loves it. Serve with rosemary foccacia as they do at Bravo or with your favorite bread (I love french bread or sourdough bread with this). If you like things spicy, feel free to add some crushed red pepper.

- Pour olive oil in a bowl and add sun dried tomato paste.
- Pour basil, thyme, and rosemary into the palm of your hand and then crush the spices by rolling them in between your thumb and pointer finger. Add to the oil mixture.
- Add the garlic and pepper (and salt if you are using it).
- Using a fork, stir/mix the spices into the oil.
- Allow to sit at room temp for about 4 hours for the flavors to start to blend if you have time. Otherwise, go ahead and serve it right away.

- In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.
- Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.
- Remove patties and cover with foil.
- Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.
