Roasted Garlic & Olive Oil Bread Dip, tender roasted garlic that spreads like butter swirled in oil with savory herbs and spices.

2 whole heads garlic
1/2 cup good quality EV olive oil+ 2 tbsp
Crusty bread
1/2 tsp salt
1/2 tsp dill- finely chopped
1/2 tsp onion powder
1/2 tsp dried oregano
1/4 tsp marjoram
1/4 tsp pepper
Garnish fresh dill

Steps:

  • Roast Garlic- Preheat oven to 400. Peel most of the outer layers of garlic bulbs. Cut off the tops to expose cloves. Drizzle each garlic bulb with a but of olive oil and tightly wrap each in aluminum foil. Place bulbs on a baking sheet and roast 35-40 minutes. Allow bulbs to cool enough to easily touch, then peel gently peel cloves.
  • Mix and Serve: In a small serving bowl, mix extra virgin olive oil with dill, onion powder, dried oregano, marjoram, salt and pepper. Top with roasted garlic and garnish with fresh dill. Add a little more pepper and salt if needed, and serve with crusty bread.

  • Pour olive oil into a shallow bowl.

  • Stir with a spoon to evenly distribute ingredients.
  • Serve with warm bread.
  • ~NOTE~Use a good quality olive oil and fresh basil and garlic for best results.

1/4 teaspoon dried basil (if using fresh reduce parsley to 1 tbsp.) or 1 tablespoon fresh basil (if using fresh reduce parsley to 1 tbsp.)
1/8 teaspoon dried rosemary or 1/2 teaspoon fresh rosemary
1 teaspoon ground black pepper
1/2 teaspoon kosher salt
1/8 teaspoon ground red pepper or 1/4 teaspoon red pepper flakes
1/2 teaspoon extra virgin olive oil
1/8 teaspoon fresh lemon juice

Steps:

  • Place all ingredients except olive oil & lemon in a blender or food processor and chop until all ingredients are similar in size. Stir in the olive oil & lemon juice.
  • For Serving:.
  • In a small dish, place 1 1/2 teaspoons spice mixture. Pour 3-4 tablespoons extra virgin olive oil over top of the spice mixture. Serve with french bread for dipping.

25 garlic cloves (unpeeled)
2 tablespoons plus 1 cup olive oil (preferably extra-virgin)
1/2 cup balsamic vinegar
2 1/2 teaspoons minced fresh rosemary

Steps:

  • Preheat oven to 350°F. Place unpeeled garlic cloves in baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool.
  • Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add vinegar and rosemary and puree herb mixture until smooth. With machine running, gradually add remaining 1 cup olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and refrigerate. Let stand 15 minutes at room temperature and whisk before using.)

1/8 teaspoon dried basil

  • Pour olive oil in a bowl and add sun dried tomato paste.

  • Using a fork, stir/mix the spices into the oil.

1 lb ground round
1 cup freshly grated parmesan cheese
2 egg yolks
salt & fresh ground pepper
2 tablespoons butter
1/4 onion, thinly sliced
1 tablespoon olive oil
1 tablespoon butter
1/2 cup heavy cream
1 tablespoon balsamic vinegar

Steps:

  • In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.
  • Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.
  • Remove patties and cover with foil.
  • Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.
  • Add cream and vinegar and cook on low 2 minutes.
  • Pour sauce over patties and serve.
