BREAD PUDDING WITH DATES AND ORANGE WHISKEY SAUCE
What could be more indulgent than velvety whiskey sauce drizzling down the sides of rich bread pudding? Don't worry, it's a healthy indulgence!

- For the bread pudding: Preheat the oven to 350 degrees F. Spread the bread cubes on a large baking sheet and bake, stirring twice, 10 minutes. Let cool (leave the oven on).
- Butter a 2-quart square baking dish. In a large bowl, whisk together the reduced-fat milk, granulated sugar, orange peel, cardamom and eggs. Add the dry bread cubes and dates; toss to coat the bread with the egg mixture.
- Pour the egg mixture into the prepared baking dish and let sit for 10 minutes. Using a flat spatula, press the bread down into the egg mixture, then bake until a knife inserted near the center comes out clean, 45 to 50 minutes.
- For the orange whiskey sauce: Meanwhile, in a medium saucepan, combine the milk and brown sugar. In a small bowl, combine the orange juice, cornstarch and 3 tablespoons whiskey and stir together with a fork until combined. Pour into the milk mixture in the pan, scraping the bowl to get all of the cornstarch. Bring to a boil over medium-high heat, stirring constantly. Turn down to medium-low and cook until thickened, 1 to 2 minutes. Remove from the heat and stir in the butter, salt and remaining 2 tablespoons of whiskey. Serve over the warm bread pudding.

- In a large bowl, pour milk over bread. Add sugar, eggs, butter, dates, raisins, vanilla, cinnamon, salt and nutmeg; stir to mix well. Pour into a greased 13x9-in. baking dish. - Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round pie dish or cake pan.
- Butter the bread on both sides and cut into triangles. Arrange a single layer of buttered bread in the bottom of the greased pan, slightly overlapping the triangles. Sprinkle with 1/2 of the sugar and all of the currants. Arrange the remaining bread on top, then sprinkle with remaining sugar.
- Beat milk, eggs, and nutmeg together. Pour over the bread and press down firmly to compress the pudding and help the bread absorb the milk mixture.
- Bake in the preheated oven until golden brown and set, about 30 minutes.

- Preheat the oven to 170C, 325F, Gas mark 3. Grease a 7.5cm/3 inch deep ovenproof dish.
- Remove the crusts from the buttered bread and cut into quarters (triangles or squares).
- Place half in the bottom of the prepared dish sprinkle with the chopped dates then arrange the remaining bread triangles, buttered side up, over the dates.
- In a saucepan, heat the milk to hot but not boiling.
- In a large bowl, mix together the eggs, vanilla and sugar then add the hot milk, stirring well.
- Slowly strain over the bread and fruit, being careful not to dislodge the top layer of bread.
- Leave to stand for 10 minutes.
- Sprinkle with a little extra sugar and grated nutmeg then bake in the oven for 30-40 minutes until the top is browned and crispy.

- First take out a baking dish (4-cup baking dish) and heavily butter it.
- Then, arrange half of your panettone triangles in the dish overlapping them a bit.
- Scatter 1/2 of your nuts over the panettone and then evenly scatter your chopped dates.
- Then, place another layer of the panettone on top, overlapping them a bit.
- Heat your butter, milk, cream, and vanilla in a small saucepan just until simmering, remove from heat.
- Put the egg, maple syrup and honey in a large bowl and add freshly grated nutmeg.
- Next, whisk in the hot milk, making sure to whisk vigorously so as to keep the egg from cooking.
- At this point you will want to preheat your oven to 400 degrees F.
- Pour your milk-egg mixture over the panettone layers, and lightly press down on the bread so that it is fully submerged in the liquid.
- Leave the panettone pudding aside for about 15-20 minutes to allow everything to soak up nicely.
- Take the rest of your pecans and sprinkle just a bit of water over them (JUST A BIT).
- Toss them in the sugar/cinnamon mixture, and toss them over the pudding.
- Sprinkle the leftover cinnamon sugar mixture evenly over the dish (there wont be much).
- Grate a small amount of nutmeg over as well.

- Preheat oven to 350 degrees F.
- Grease an 8-inch square ovenproof baking dish.
- Butter all bread slices.
- Set aside 4 bread slices and cut remaining 6 in half to make triangles.
- Place the 4 whole slices, buttered sides up, in dish.
- Sprinkle chopped dates over top.
- Arrange bread triangles, buttered sides up, on top to cover dates.
- Heat cream and milk in a saucepan, bringing almost to a boil.
- Meanwhile, whisk eggs, sugar and vanilla in a heatproof bowl, then pour the hot milk/cream combo on top, whisking as you go, to make a custard.

- Bake 50-60 minutes or until golden and center is just set.
- For toffee sauce:.
- Place butter, sugar and cream in a saucepan and bring to a boil, stirring throughout.
- Boil 4 minutes or until sauce has thickened.
- Remove pan from heat, let cool 1 minute, then add brandy and sherry.
- Makes 1 3/4 cups sauce.
- Serve bread with toffee sauce and whipped cream.
- Note: Bread pudding can be made a day ahead, then reheated for about 10 minutes in a 350 degree oven until hot in center.

- Bring milk to boiling point in a small saucepan, DO NOT BOIL (known as 'scalding').
- Blend in cream and vanilla. Whisk eggs and sugar together in a bowl until creamy. Gradually whisk in milk mixture.
- Cut bread into quarters. Layer in a greased shallow casserole dish with sultanas an apples. Pour over milk mixture. Allow to stand for 15 minutes.
- Place casserole dish in a baking dish. Add enough hot water to baking dish to come halfway up the sides of the casserole. Sprinkle pudding with combined sugar, nutmeg and cinnamon.

This pudding was Princess Diana's all-time favorite, so much so that she once had a royal reporter write that "Darren makes the best bread and butter pudding in the world." Well, I am not sure it is the best in the world-but it's up there! The final texture is a cross between a bread pudding and a crème brûlée.

- Soak the raisins in the Amaretto, and leave covered with plastic wrap at room temperature 6 to 8 hours or overnight.
- Preheat the oven to 350°F.
- Cut 4 slices of the bread into 1/2-inch dice, and spread the diced bread on the bottom of a casserole dish. Sprinkle the raisins on top of the bread cubes, and pour any remaining liquid over the bread. Cut the remaining 8 slices of bread in half diagonally, and then cut each half slice in half diagonally to create 4 even triangles per slice. Dip the triangles into the butter, and arrange on the top of the raisins, overlapping the triangles slightly. Pour any remaining butter over the top of the bread.
- Whisk the yolks, vanilla paste, and sugar in a large bowl until combined. Bring the milk and cream to a boil in a heavy saucepan over high heat, and pour the hot mix onto the egg yolks, whisking constantly. Pour the warm egg mixture over the bread, making sure all of the bread is coated, and set aside the coated bread for 20 minutes to allow the egg mixture to soak into the bread.
- Place the casserole dish in a roasting tray filled with hot water halfway up the sides of the casserole dish, and bake on the middle rack in the oven for 30 to 45 minutes, or until golden brown on top with the filling just set.
- Remove the dish from the oven and roasting tray, and sprinkle with the extra sugar. Broil or use a crème brûlée torch to caramelize the sugar. Sprinkle with the toasted sliced almonds, and dust with powdered sugar. Cool slightly, and serve warm with a jug of cream and some fresh berries.

Mandy from Oz requested her recipe#243686 be made lighter so I took on the challenge. I not only cut the fat and sugar but added more flavor. Yum! I started with 1 serving of her recipe and worked off of that and made it 2 servings. I think this would be good with bananas tossed in orange juice mixed in it too! There are more ways to make it even lighter which I have offered below. You could also omit the sauce. ***Nutrition facts for Splenda brown sugar blend: 1/2 tsp= 10 calories and 2g sugars. So if you use all of it in this recipe that should bring the calories up to 386 per serving and the sugar to 20.5g per serving.

- Pudding:.
- Preheat oven to 350 degrees Fahrenheit.
- Grease two 1-cup ramekins.
- Brush melted butter onto bread slices. Cut them into small cubes. Put aside.
- In a medium bowl, whisk egg and Splenda together until pale.
- Whisk in milk, extract, and zest until well combined.
- Stir in bread cubes and chocolate chips until most of the liquid is absorbed.
