STEAK GAUCHO-STYLE WITH ARGENTINIAN CHIMICHURRI SAUCE



Steak Gaucho-Style with Argentinian Chimichurri Sauce image

1 cup lightly packed chopped parsley (ideally, flat leaf "Italian" parsley)
3 to 5 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon chili pepper flakes
2 tablespoons fresh oregano leaves (optional)
2 tablespoons shallot or onion, minced
3/4 cup vegetable or olive oil
3 tablespoons sherry wine vinegar, or red wine vinegar
3 tablespoons lemon juice
1 tablespoon cayenne pepper
3 tablespoons salt
2 1/2 pounds rib-eye, New York strip, or sirloin steak, 1 1/2 inches thick
2 baguettes, sliced into 1/4-inch-thick slices

Steps:

  • Preheat a grill.
  • Place all chimichurri sauce ingredients in a blender or food processor and pulse until well chopped, but not pureed. Reserve.
  • Dissolve cayenne pepper and salt in 1 cup hot water. Transfer to a squeeze container.
  • Place the steak directly over a hot grill, baste with the chimichurri grilling sauce, and grill until the outer portion of the meat reaches the desired degree of doneness. Remove the steak from the grill and slice long strips from the outer edges of the steak. Instruct guests to pick up a steak slice from the cutting board with their fingers, place it on a slice of baguette, and enjoy. Return the remaining steak to the grill, baste, and grill until more of the steak is cooked. Remove and repeat the slicing and serving procedure until steak is consumed. For extra spicy steak, baste 2 or 3 additional times with the cayenne pepper mixture during grilling process. Spoon chimichurri sauce over steak. (Also brilliant on any grilled fish or chicken)
  • Recommended beverage: Argentinian Malbec (red)

1 1/2 pounds ground beef (81 percent lean)
1/2 teaspoon dried oregano
Salt and black pepper
Pinch crushed red pepper
1 1/4 pounds jumbo yellow onions, thinly sliced
1 teaspoon ground cumin
1 1/4 teaspoons Spanish paprika
One 14-ounce package empanada dough, such as Goya Discos (see Cook's Note)
Vegetable oil, for deep-frying

Steps:

  • Brown the ground beef in a saute pan over medium-high heat for 8 to 10 minutes. Once the beef is browned, add the oregano and a pinch of salt, black pepper and crushed red pepper. Add the sliced onions and cumin and cook until the onions are translucent. Stir in the Spanish paprika. Simmer the filling over low heat for 15 minutes. Adjust the seasoning to taste. Let cool.
  • Spoon 2 tablespoons of the filling into a disc of empanada dough. Fold the disc in half and close it by tightly twisting the edges. Repeat with the remaining filling.
  • Heat the vegetable oil to 350 degrees F in a deep-fryer or heavy pot. In batches, fry the empanadas until golden brown, 5 to 6 minutes.

This dish is made in the slow cooker. I found this recipe in Cuisine at Home Feb 2011, thought of my friend, Marcia, and had to make it. It was delicious - looking forward to making it again.

1 lb beef stew meat, seasoned with salt and pepper
1 tablespoon vegetable oil
8 ounces kielbasa, sliced into 1/2 inch thick rounds
1/4 cup orange juice
1 1/2 cups diced onions
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed and pureed
2 tablespoons minced garlic
1 tablespoon chili powder
1 tablespoon red wine vinegar
sliced jalapeno
orange wedge
orange zest

Steps:

  • Brown meat in oil in batches in a large skillet over medium-high heat, about 5 minutes per batch. Transfer meat to a paper-towel lined plate.
  • Brown kielbasa in same skillet, 3 minutes per batch. Transfer to a paper-towel lined plate.
  • Deglaze skillet with orange juice, scraping up brown bits on bottom of pan; set aside.
  • Combine onions, tomatoes, beans, garlic, and chili powder in a 4 to 6 quart slow cooker. Stir in browned meats and deglazing liquid. Cover slow cooker; cook on high setting until steak is fork tender, 4 hours.
  • Add vinegar and season with salt and pepper.
  • Garnish each serving of stew with jalapeno slices, orange wedges and zest.

  • Cover both sides of each New York strip steak (mine were 3 steaks, totalling 1lb) with a sheet of plastic wrap. On a flat surface, beat each side (not too hard!!) with a meat mallet to tenderize the meat. Note: Use the side of the mallet with the spikes on it.
  • Season all the steaks on both sides with salt, lemon, and pepper (optional). Cook immediately, or let seasoned steaks rest for 10-15 minutes at room temperature to absorb seasonings. It's up to you!
  • Heat a large, heavy-bottomed frying pan (don't use nonstick) over high heat. Place the steaks in the pan (single layer) and let cook undisturbed for about 2-4 minutes. Flip the steaks using tongs or a spatula and cook for additional 2-4 minutes (medium to medium-well). Transfer the steaks to a serving plate and let rest for at least 5 minutes before serving.
  • To cook the onions: In the same pan where steaks were just cooked, heat 1 tablespoon of oil over medium heat (large burner) and add the onion rings. Cook for about 5 minutes (season with a pinch of salt after cooking for an initial 2-3 minutes), stirring constantly. My Aunt likes to place one single steak on top of the onions and let cook undisturbed on medium heat for about 1 minute. According to her, this helps the onions to absorb the rich steak flavor. Serve onions on top of the steaks and enjoy!
