Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish.
  • Place the bananas into the baking dish. Combine the orange juice, lemon juice, sugar and salt in a pitcher or bowl; pour over the bananas. Dot with butter.
  • Bake for 15 minutes in the preheated oven. Sprinkle with coconut before serving.

1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

1/2 cup firmly packed brown sugar
1 tablespoon lemon juice
2 medium bananas, firm and ripe
2 cinnamon sticks
rind of one lime, cut into thin strips
1/3 cup sweetened flaked coconut

Steps:

  • In a shallow microwavable glass baking dish or pie plate, mix butter, brown sugar and lemon juice. Microwave, uncovered, on HIGH for 1 minute. Stir well.
  • Peel bananas and cut them in half crosswise. Slice each lengthwise. Arrange 8 pieces in a single layer in the sugar mixture, turning them over once to coat. Put cinnamon sticks and lime peel around the banana pieces.'.
  • Microwave on HIGH, uncovered for 2 minutes. Baste the bananas with the sauce. Microwave on HIGH for 1 or 2 more minutes, or until the bananas are soft.
  • Let stand for 3 minutes.
  • Garnish with coconut and serve warm with the sauce.

3 tablespoons brown sugar
½ cup water
10 bananas, peeled and sliced lengthwise
2 cups whole wheat flour
2 cups toasted wheat germ
3 cups rolled oats
1 cup packed brown sugar
1 cup light margarine
1 tablespoon cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sprinkle 3 tablespoons of brown sugar over the bottom of a small saucepan or skillet. Cook over medium heat until melted. Stir in water until sugar is completely dissolved. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Pour the syrup into a round baking dish or deep dish pie plate and spread to coat the bottom.
  • Make a layer of bananas on top of the melted sugar. In a medium bowl, stir together the whole wheat flour, wheat germ, oats and 1 cup of brown sugar. Mix in the margarine using your hands, pinching it into small pieces to make a crumbly dough. Sprinkle half of this over the bananas in the dish and pat down. Top with the remaining bananas and sprinkle with about half of the cinnamon. Spread the rest of the dough over the bananas and pat the pie smooth. Sprinkle remaining cinnamon over the top.
  • Bake for 45 minutes in the preheated oven, until the pie topping is toasted and a toothpick inserted into the center comes out clean.

3 cups all-purpose flour
1 tablespoon baking powder
1 cup milk
3 egg whites
6 bananas
2 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 inch pan.
  • In a large bowl, mix together margarine and sugar until smooth.
  • Mix in yolks.
  • Stir in flour and baking powder alternately with the milk.
  • In another bowl, beat egg whites until doubled in volume.
  • Fold beaten whites into the dough.
  • Spread into a greased 9 x 13 inch pan.
  • Slice bananas over the top of the dough.
  • In a small bowl, mix together the 2 tablespoons sugar and the cinnamon; sprinkle over bananas.
  • Bake at 350 degrees for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

1 cup sugar
1/3 cup water
2 (14oz) cans sweet condensed milk
28oz whole milk (use the sweet condensed milk can to measure)
4 eggs
1 tbsp vanilla extract

Steps:

  • Preheat your oven to 375 degrees.
  • In a sauce pan, melt the sugar over medium high heat. After about 10 minutes, once it's golden brown, add the water and let it cook, stirring lightly, until it thickens a bit.
  • Pour the caramel into a 10 inch Angel Food Pan and swirl it to cover the bottom and sides. Let it sit for a few minutes so it hardens. It is important that the caramel firms before you add the flan mixture so they don't mix together.
  • Add the sweet condensed milk, milk, eggs and vanilla extract to a large blender jar. Blend for a few minutes until smooth. (If you can't fit all the ingredients, divide them equally into 2 batches!)
  • Pour the flan mixture into the angel food pan and cover with foil.
  • Fill a large baking pan (a lasagna dish works great!) halfway through with water and place the angel food pan in it.
  • Bring it to the oven and bake it in bain marie for 1 hour and 30 minutes or until the top is golden brown. I like to wiggle the pan a bit to see if it's still liquidy. Sometimes I have to leave it for an extra 15 minutes. You can also insert a cake tester to check. It should come out clean or almost clean.
  • Let the flan cool and transfer it to the fridge to cool overnight.
  • To remove the flan from the mold, just run a knife along the sides and then carefully flip it on a serving plate.
