Hearty greens and smoky sausages are brightened up with a hit of vinegar for a flavor-rich yet budget-friendly dish.

1 1/2 cups long-grain white rice
2 tablespoons extra-virgin olive oil
1 large yellow onion, halved and thinly sliced
1 1/2 pounds smoked bratwurst or kielbasa, cut into 2-inch pieces
1 bunch collard greens, tough stems and ribs removed, leaves torn into large pieces (4 cups)
Coarse salt and ground pepper
1 tablespoon cider vinegar

Steps:

  • Cook rice according to package instructions. Meanwhile, in a large skillet, heat oil over medium-high. Add onion and cook until softened, 5 minutes. Add bratwurst and cook, stirring often, until browned, 6 to 8 minutes. Add collards, season with salt and pepper, and cook, stirring constantly, until collards are just tender, 7 minutes. Stir in vinegar and serve with rice.

3 tablespoons canola oil
2 cups long-grain and wild rice mix, rinsed
3 cups low-sodium chicken stock
Kosher salt
1 tablespoon unsalted butter
1 large sweet onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
8 ounces pork breakfast sausage, removed from casing
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
2 tablespoons minced fresh chives

Steps:

  • Heat 2 tablespoons oil in a large saucepot over medium-high heat. Add the rice and cook, toasting until the rice begins to smell nutty, about 5 minutes. Add the chicken stock along with some salt and bring it to a boil, then reduce to a simmer and cover. Simmer until the rice is tender and has absorbed all the liquid, about 25 minutes
  • Meanwhile, heat the remaining tablespoon oil along with the butter in a large skillet over medium-high heat. Add the onion, pepper and a generous pinch of salt and cook until just tender and beginning to brown, about 5 minutes. Add the garlic, sausage, thyme and sage, and cook, breaking up with a wooden spoon until browned and cooked through, 4 to 5 minutes more.
  • When the rice is cooked and liquid is absorbed, turn off the heat, remove the lid and add the sausage and vegetables. Fluff and stir gently with a fork to combine. Add the rice to a serving dish and sprinkle with the chives before serving hot.

2 ½ cups water
1 cup brown rice
1 pound ground hot sage pork sausage
1 onion, diced
1 tablespoon minced garlic
½ cup chopped celery
1 bunch collard greens - rinsed, trimmed and chopped
1 (14.5 ounce) can no-salt-added diced tomatoes, undrained
1 (14.5 ounce) can white beans, drained
1 teaspoon Cajun seasoning
1 teaspoon red pepper flakes
1 teaspoon salt and ground black pepper to taste

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • When rice is almost finished, heat a large nonstick skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a large bowl, leaving 1 tablespoon fat in the skillet. Add cooked rice to sausage in the bowl.
  • Add onion and garlic to the skillet and saute over medium heat until onion is soft and translucent, about 5 minutes. Add celery and cook for 3 minutes. Add collard greens and saute until slightly wilted, 3 to 4 minutes. Add diced tomatoes with their juices, white beans, Cajun seasoning, and red pepper flakes; simmer for 5 minutes. Season with salt and pepper. Serve collard greens over the sausage and rice mixture, or mix it all together.

Pork-Stuffed Collard Greens image

This is adapted from a recipe by Sunny Anderson of the Food Network. She first tasted a similar dish in Hawai'i, but uses collard leaves for a more southern/African flair. I changed the seasonings to be more Hawaiian/Pacific, and the preparation method to make it easier. You can grind your own semi-frozen boneless pork in a food processor if you can't find it pre-ground at the store. Different and tasty, plus carb-friendly!

1 lb ground pork (not sausage)
collard greens (1 large bunch)
1/2 teaspoon sea salt
1 teaspoon tamari soy sauce
2 teaspoons chili powder
2 teaspoons onion powder
2 teaspoons smoked paprika (or regular paprika plus few drops liquid smoke)
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
1/4 teaspoon ground nutmeg
1/4 teaspoon blackstrap molasses
1 1/2 cups chicken stock

Steps:

  • Mix pork, soy sauce and all spices together in large bowl. Form into 4 oblong patties. Set aside.
  • Rinse collards well and remove thick bottom part of stems but leave the leaves as intact as possible.
  • Starting at the side where the stem was removed, place 1 pork patty on a raw collard leaf; roll up and wrap 3 more leaves around each patty.
  • Tear up remaining collard leaves not used for wrapping meat into bite-size pieces. Place on the bottom of a large heavy pot. Add broth and top with the pork bundles.
  • Cover pot with lid. Bring to a boil, then reduce heat and simmer on low for 40-60 minutes, or until pork is cooked and collards are tender. Serve with rice or cornbread.

10 ounces frozen black-eyed peas, thawed
3 cups water
1 pinch kosher salt
2 tablespoons extra virgin olive oil
8 ounces smoked sausage, thinly sliced (use turkey kielbasa to cut the fat)
1 bunch scallion, sliced, white and green parts separated
2 small celery ribs, diced
6 garlic cloves, sliced
1 jalapeno, finely chopped
2 1/2 teaspoons caribbean jerk seasoning
2 teaspoons thyme, chopped
2 tablespoons tomato paste
1 cup basmati rice, uncooked
2 bay leaves
4 cups collard greens, stemmed and chopped

Steps:

  • Combine the black-eyed peas, 3 cups water and a pinch of salt in a small pot. Cover and bring to a boil.
  • Meanwhile, heat the olive oil in a large, deep skillet over medium heat. Add the sausage and cook until golden, about 2 minutes. Add the scallion whites, celery, garlic, jalapeno, jerk seasoning and a generous pinch of salt. Cook until the vegetables brown, about 5 minutes. Add the thyme and tomato paste and cook, stirring occasionally, until the tomato paste turns brick red, about 2 more minutes. Add the rice, bay leaves, and the black-eyed peas with their liquid to the skillet and bring to a boil; do not stir.
  • Add the collards; cover, reduce the heat to low and simmer undisturbed until most of the liquid is absorbed, about 50 minutes; set aside for 10 minutes. Remove and discard the bay leaves.
  • Just before serving, add the scallion greens and fluff with a fork.
