Here's what you need: beer, bratwursts, hot dog buns, cream cheese, shredded cheese

24 fl oz beer, of choice
5 bratwursts
5 hot dog buns
1 cup cream cheese
2 cups shredded cheese, of your choice

Steps:

  • Add beer and brats to sauce pan.
  • Cook on medium high heat for 10-15 minutes.
  • Place brats on grill and cook until done (probably another 10-15 min).
  • With 1 cup (235 ml) of beer in the pot, add cream cheese and cheddar.
  • Stir until cheese is mixed.
  • Add the cheese mixture on top of the beer brats.
  • Enjoy!

This is the only way to cook bratwurst in Wisconsin. The brats are incredibly tasty! If you can get fresh bratwurst from a sausage shop, do it... it is worth the extra cost. Serve with brown mustard on substantial hoagie rolls, never on hot dog buns. Mustard is important and must always be stone ground. Add warm sauerkraut and ketchup, if you like. Chow down! Think about those Wisconsin summers! Listen to some polka!

2 pounds fresh bratwurst sausages
2 onions, thinly sliced
1 cup butter
6 (12 fluid ounce) cans or bottles beer
1 ½ teaspoons ground black pepper
10 hoagie rolls

Steps:

  • Prick bratwurst with fork to prevent them from exploding as they cook. Place in a large stock pot with the onions, butter, and beer. Place pot over medium heat, and simmer for 15 to 20 minutes.
  • Preheat grill for medium-high heat.
  • Lightly oil grate. Cook bratwurst on preheated grill for 10 to 14 minutes, turning occasionally to brown evenly. Serve hot off the grill with onions on hoagie rolls.

6 cups German light ale
1 tablespoon caraway seeds
1 tablespoon coriander seeds
1 tablespoon mustard seeds
3 large onions, unpeeled, roughly chopped
2 whole cloves garlic, smashed
One 3-inch piece fresh ginger, peeled and chopped
3 pounds precooked bratwurst, pricked with a fork
2 tablespoons canola oil

Steps:

  • Preheat the grill for direct grilling, high heat.
  • Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages until half-cooked, about 5 minutes. Remove the pan from the grill and let the bratwurst sit in the liquid for 30 minutes. Transfer the brats to a platter or cutting board and strain the liquid into a bowl, discard the solids.
  • Brush the sausages with canola oil and grill until the casings are crisp and golden brown and the sausages are cooked through, 4 to 6 minutes per side. Keep warm until serving.

This is a traditional German dish which I have been cooking for almost 20 years. I found it in my mother's cookbook "Cuisines of Germany" and pretty much have it memorized now. Don't let the ingredients fool you - it all comes together well and is quite tasty. I serve it usually with a salad and turnip mashed potatoes.

Number Of Ingredients 9

4 bratwursts
1 -2 tablespoon flour
1 -2 tablespoon butter
1 1/2 cups dark beer
3 -4 tablespoons ginger cookie crumbs (I use gingersnaps and crush them in a ziplock bag with the side of a hammer)
1 tablespoon grated onion
salt and black pepper (to taste)
3 tablespoons concentrated beef stock (when out, I've used Maggi's)
1 -2 tablespoon lemon juice

Steps:

  • Poke a few holes in each bratwurst with a fork so they don't burst.
  • Dredge the brats in flour.
  • Melt the butter in a skillet and fry the bratwursts on both sides.
  • Remove them from the skillet and set aside.
  • Pour the beer into the skillet and deglaze it, making sure you scrape all the yummy crumbs sticking to the sides and bottom.
  • Add the ginger cookie crumbs and grated onion.
  • Cook those together for about 10 minutes.
  • Season with salt, pepper, beef stock and lemon juice.
  • Cook for 2 more minutes.
  • Reduce heat, return the bratwurst to the skillet and cook them until heated through.

1/4 cup butter, divided
1 package uncooked bratwurst links (20 ounces)
1 medium onion, thinly sliced
1 bottle (12 ounces) beer or nonalcoholic beer
2 tablespoons all-purpose flour
1/8 teaspoon dill weed
1/8 teaspoon pepper
5 slices thick bread

Steps:

  • In a Dutch oven, heat 2 tablespoons butter over medium-high heat. Add bratwurst and onion; cook and stir until bratwurst starts to brown and onion softens. Stir in beer. Bring to a boil. Reduce heat; simmer, covered, turning occasionally, until a thermometer inserted in bratwurst reads 165° and brats are no longer pink, 12-14 minutes., Remove brats and onions; keep warm. Add remaining butter to pan; whisk in flour, dill weed and pepper. Bring to a boil, stirring constantly until thickened, 3-5 minutes. To serve, place 1 brat on each slice of bread; top evenly with onions and gravy.
