Smooth, creamy, and OMG so good! This recipe comes from Brattens which used to be located in Salt Lake City, Utah, years ago. It's been gone for years, but this clam chowder lives on. What a legacy! The restaurant gave me the recipe back in the middle 60's.

1 cup onion, finely chopped
1 cup celery, finely diced
2 cups very finely diced potatoes (peeled)
2 (6 1/2 ounce) cans minced clams, and juice
2 tablespoons red wine vinegar
3/4 cup butter (not margarine)
3/4 cup flour
1 quart half-and-half (cream)
1 1/2 teaspoons salt
pepper

Steps:

  • Put the prepared vegetables in a saucepan.
  • Drain juice from clams and pour over the vegetables.
  • Add enough water to BARELY cover.
  • Simmer, covered over medium heat till barely tender.
  • (DO NOT overcook!).
  • In the meantime, melt butter in another medium saucepan.
  • Add flour.
  • Blend and cook, stirring constantly; add the cream.
  • Cook and stir with wire whip, until smooth and thick.
  • It is important that you stir constantly while cooking.
  • Add undrained vegetables, clams and vinegar.
  • Heat through, but do not boil again.

  • Season to taste.

This is by far the best clam chowder recipe ever. My Mom used to make this and there was never any left for the next day. I use minced clams because I don't like the whole ones, but whole clams can be substituted easily.

3/4 cup flour
1/2 lb bacon, diced
5 medium potatoes, diced
1 medium onion, diced
1 cup celery, diced
1 quart half-and-half
2 (6 1/2 ounce) cans clams (minced or diced)
2 tablespoons red wine vinegar
1 cup butter (no substitutes)
salt
pepper
garlic

Steps:

  • In large 4 quart pan brown bacon, onion and celery until onion and celery are transparent.
  • Add clam juice from both cans clams and diced potatoes to bacon mixture.
  • Pour enough water to cover potatoes and boil until potatoes are tender.
  • In a separate large sauce pan melt 2 cubes butter on low heat.
  • When butter is melted, slowly add 3/4 cup flour stirring constantly.
  • Add 1 quart half and half STIR WITH WIRE WHISK until thick and smooth (very important).
  • Pour over undrained vegetable mixture add vinegar and heat through.
  • Season with salt, pepper, garlic powder, onion powder to taste.

3 ounces salt pork, finely diced
1 1/2 cups small diced yellow onion
6 cups small diced baking potatoes, like russets
2 cups milk
1 (6.5 ounce) can clams, drained, juice reserved
12 Little Neck clams
Kosher salt and freshly ground pepper
Chopped fresh parsley, for garnish
Sour cream, for garnish
Grape tomatoes, halved, for garnish

Steps:

  • In a heavy-bottomed saucepot, render the salt pork until just crisp. Remove and discard. Sweat the onion in the pork fat until tender. Add the potatoes and cover with milk. Bring to a boil and let simmer until potatoes are soft. Season with salt and pepper.
  • In a separate pot, fitted with a steamer basket, bring the reserved clam juice to a boil. Add clams and cover. Steam for three minutes until all clams are open. Remove the clams as they open and transfer to a bowl. Add the steaming juices to the pot with the chowder. Using a stick blender puree to desired consistency. Adjust seasonings.
  • Finely chop the drained canned clams. Fold into the chowder. Serve with steamed clams, parsley, sour cream and grape tomatoes, as garnish.

MOM'S FAMOUS CLAM CHOWDER

Ummm thick and Creamy!! This is a good one!! I don't care for clams so I divide this soup in half before I add the clams and I have an awesome potato soup for myself and my daughter and my happy hubby gets all the clam chowder.

1 (6 1/2 ounce) can chopped clams (you can add 2 cans if you really like clams)
1/4 lb bacon (diced)
2 cups bottled clam juice
4 large potatoes (diced)
1 cup diced celery
1/2 cup diced carrot
1 whole onion, chopped
1 quart half-and-half
salt
pepper
1/4 teaspoon thyme
2 tablespoons chopped fresh parsley or 2 tablespoons dried parsley

Steps:

  • Chop or dice all of your vegetables and set aside.
  • Drain clams, save the liquid.
  • (I usually throw in the extra clam juice for the added flavor, you will get about 1/2 cup of juice from the can of clams).
  • (I start the bacon and the vegetables all in the pan that I will finish the soup in- then you get the flavor from the bacon crustys on the bottom).
  • Fry bacon bits and set aside.
  • Drain off all bacon fat but enough to coat the bottom of the pan.
  • Saute potato, onion, celery and carrot in bacon drippings for 5 minutes.
  • Add the clam juice, salt and pepper, thyme and chopped parsley.
  • Cook for 20 minutes or until the veggys are all fork tender.
  • Add the 1/2 and 1/2.
  • Add the Bacon.
  • (This is where I divide the soup if you want a pot of potato soup as well).
  • Add the clams.
  • Thicken to desired consistency with cornstarch and water.

2- 6 ½ oz. Canned Clams Chopped
1 Cup Chopped Celery
1 Cup Chopped Onion
2 Cups Cube Peeled Potatoes (about 3/4 inch)
¾ Cup Butter
¾ Cup Flour
1 Quart Half and Half
1 ½ teaspoon Salt
½ teaspoon Sugar
½ teaspoon Ground Black Pepper
1 Tablespoon Bacon Grease
1 Bay leaf

Steps:

  • Drain and save juice from clams. In stock pot melt grease, add onions and celery, simmer about 5 minutes. Move simmered veggies to separate bowl, and add clam juice. In the stock pot place cube potatoes and add enough water to completely cover. Cook potatoes until fork tender, about 15 minutes. Add the onions and celery with the clam juice to pot reduce heat to low add bay leaf. In a medium sauce pan melt butter and add flour whisking until the mixture looks like bubbling wet sand. Add Half and Half to the rue. Stir until thickened and add to pot. Add sugar, salt, pepper. Simmer uncovered for at least 30 minutes. Remove bay leaf. Serve and enjoy with your favorite bread or crackers.
