3/4 cup sugar
3/4 cup water
1 tablespoon fresh lemon juice
1 cup brandy
1 lb fresh dark sweet cherries, pitted
1 (1-quart) heatproof jar with tight-fitting lid

Steps:

  • In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
  • Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
  • Store in refrigerator 4 to 6 weeks before serving.

1/3 lb sweet cherries
1/4 cup sugar
5 tablespoons brandy
vanilla ice cream, for 2 servings

Steps:

  • Cut cherries in half and pit them, working over a bowl to catch the juices.
  • Set aside.
  • In a small heavy saucepan over medium high heat, bring the sugar and 1/4 cup of brandy to boil, stirring until the sugar is dissolved.
  • Continue boiling, without stirring, until the liquid is reduced to about 1/4 cup, about 5 minutes.
  • Add the cherries and their juices to the pan, reduce the heat to medium-low and cook until the cherries are just heated through and slightly softened, about 1 minute.
  • Stir in the remaining 1 tablespoon of brandy and remove from the heat.
  • Set aside for at least 5 minutes to cool slightly and allow the flavors to meld.
  • Spoon the warm cherries and sauce over the ice cream.

1/4 cup Kirsch (cherry brandy)
4 tablespoons butter, cold
6 store-bought crepes (recommended: Frieda's)
Chocolate syrup, for garnish
Fresh mint sprigs, for garnish

Steps:

  • In a medium saucepan, combine pie filling and brandy. Bring to a simmer over medium heat. Stir in butter 1 piece at a time until melted. Remove from heat. Set aside 6 cherries, for garnish.
  • Divide the filling among the 6 crepes and roll or fold crepes. Top with a drizzle of chocolate syrup and garnish with a sprig of mint and reserved cherries.

1 teaspoon confectioners' sugar, or as needed

Steps:

  • Mix cherries, brandy, and 1/3 cup white sugar in a bowl; let soak for 1 hour.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a 9-inch pie pan with cooking spray.
  • Remove cherries from brandy mixture using a slotted spoon and transfer to the prepared pie pan. Pour brandy mixture into a blender; add remaining 1/3 cup sugar, milk, flour, eggs, vanilla extract, lemon zest, salt, and allspice to the blender. Pulse mixture until batter is smooth; pour over cherries.

A quick and easy Homemade Brandied Cherries recipe. This is a wonderful way of preserving cherries while flavouring an after-dinner digestif.

1 750ml bottle of Brandy
1 1/2 - 2 pounds Bing Cherries (approximately)

Steps:

  • Rinse cherries under cold running water and lay out in a single layer on a clean dish cloth.
  • Pat the cherries dry.
  • Using a scissor, clip the stem of the cherry while leaving approximately a quarter of the stem intact. (leaving the stem intact ensures a firm and crunchy cherry)
  • Fill the jars with the cherries while leaving some head space in the jars.
  • Pour the brandy over the cherries, making sure the cherries are completely submerged.
  • Put the lids on the jars and refrigerate for 4 weeks before consuming. (If you can resist that long)
  • This allows for the cherries to be infused with brandy flavour while the brandy intensifies with the crimson red hue of the cherries.
  • Serve as an after dinner digestif

5 ounces soy oil
4 ounces balsamic vinegar
2 ounces mirin
1 ounce black peppercorns
1/2 ounce sugar
1/2 teaspoon salt
8 cloves garlic, crushed
6 sprigs fresh thyme, leaves picked
4 sprigs fresh rosemary, leaves picked
Four 8-ounce hanger steaks, cleaned
1/2 cup chopped shallots
1/4 cup unsalted butter
3 tablespoons Dijon mustard
3/4 cup brandy
1 cup dried tart cherries, rehydrated in 1 cup hot water with 1/4 cup red wine vinegar and 3 tablespoons sugar
3 cups veal stock
1 tablespoon fresh tarragon leaves, finely chopped
Freshly cracked black pepper
Oil, for pan roasting
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the soy sauce, soy oil, balsamic vinegar, mirin, black peppercorns, sugar and salt in a blender and blend well. Mix with the garlic, thyme and rosemary.
  • Pour the marinade over the steaks and refrigerate for at least 6 hours.
  • For the cherry sauce: Gently saute the shallots in half the butter in a heavy-bottomed pot until soft and translucent. Add the mustard and cook for one minute. Hold the pan away from the flame, add the brandy, and then return to the flame to ignite and flambe the shallots. When the flame dies down, add the cherries with their rehydrating liquid and the veal stock. Bring to a boil and simmer for 10 minutes, and then stir in the remaining butter. Finish with the tarragon and lots of freshly cracked pepper.
  • Heat a cast-iron skillet over medium-high heat and add some oil. Pat the steaks dry with a paper towel and sprinkle with salt and pepper. Saute until nicely browned all around, about 7 minutes for medium rare. Remove and let rest for at least 2 minutes on a paper towel. Place the steaks on a large plate and ladle the sauce directly on top. Serve immediately.

  • Pour brandy over drained cherries; let set for two days.
  • Combine butter, corn syrup and salt; blend until smooth.
  • Add confectioners' sugar and mix well.
  • Knead until smooth and shiny; wrap in wax paper and chill for 30 minutes.
  • Drain cherries well on paper towels; pat dry.
  • Shape a marble-size piece of fondant around each cherry and place on wax paper-lined tray. Chill until firm, about 2 hours.

  • Trim the stems of the cherries to within 1" of the fruit. Bring 1 cup sugar and 2 cups water to a boil in a saucepan over medium heat. Blanch the cherries, a cup at a time, for 2 minutes in the simmering syrup. Remove to a platter with a slotted spoon and cool.
