HIGH FIBER LOW CALORIE BRAN MUFFINS
These are muffins from a health spa in California. There is NO added sugar. The sole purpose of these muffins is to increase your fiber intake without adding lots of calories to your diet. If you want a sweet/dessert snack, keep looking. These are very plain.

Steps:
- Preheat oven to 400 degrees. Spray muffin tins with Pam and set aside.
- Mix all dry ingredients, including raisins, in a large bowl.
- Blend egg whites, buttermilk, water, mashed banana and extracts in a medium bowl.
- Add wet ingredients to dry and stir until thoroughly combined. Fill each muffin tin 1/2 full.
- Bake 15 minutes. Let cool on a wire rack. Freeze leftovers and defrost as needed.

- Stir together dry ingredients (except cereal), set aside.
- In large mixing bowl, combine cereal with milk.
- Let stand 5 minutes until cereal softens.

SUPER YUMMY LOW FAT BRAN MUFFINS
These are delicious little gems, even my boyfriend who detests low fat foods loves them! I'm extremely health conscious so these are perfect with almost no fat, and are super healthy because of the bran. They turn out super moist and delicious and reheat well in the microwave. You can substitute whole wheat flour for white if you wish and they will still be delicious. Adding raisins make them tasty too. Got this one off of the Kraft website.

Steps:
- Preheat oven to 400 degrees f.
- In a large bowl mix together flour, baking soda and cinnamon. Set aside.
- In another bowl mix together bran cereal, brown sugar and milk and let sit for 5 minute After you've let the cereal milk sugar mixture set
- add the applesauce and the egg, mix throughly.
- Mix the wet ingredients into dry, batter will be lumpy.
- Spoon into butter sprayed muffin pan.
- bake for 8 to 12 minute.

Steps:
- In medium bowl stir together bran, buttermilk and raisins, let soak for 10 minutes.
- Spray muffin tins with non stick cooking spray, preheat oven to 350. In mixing bowl add splenda, molasses, applesauce, eggs and mix on low speed till well blended. Add buttermilk mixture and mix on medium speed for 1 minute.
- Add flour, baking soda and salt and mix on low speed till incorporated. Increase speed to medium and mix for 3 minutes. Divide mixture into 12 muffin tins, bake for 15 - 20 minutes.

I had too much left over raisin bran cereal in my cupboard, trying to go stale. I had to do something, but most bran muffin recipes are way too high in fat for my tastes. This is one I've cobbled together to suit my own tastes. Great warm, with just a tiny bit of honey!

- Preheate oven to 400°F
- Spray 12 (2.5 inch) muffin cups with nonstick spray or use paper muffin cups.
- In a large bowl, stir together cereal, applesauce, egg, and water.
- Let stand 5 minutes, then stir to break up cereal.
- Add remaining ingredients; stir to combine.
- Divide evenly among muffin cups.
- Bake 15-20 minutes.
- Cool slightly, and remove from muffin cups.
ANOTHER LOW-CALORIE BRAN MUFFIN RECIPE
I was looking for a low calorie healthy bran muffin recipe that tasted like a traditional bran muffin, and finally came up with a sort of "Frankenstein monster" conglomeration of a basic recipe with several substitutions. They turned out great and at around 100 calories per muffin they have become my favorite. NOTE: You can use any combination of oat bran and wheat bran to make the 1 1/2 cups bran. Oat bran has its own benefits, but adds more calories.

- Preheat oven to 375 degrees F. Spray muffin cups with Pam (or equivalent).
- Add skim milk to vinegar to make 1 cup soured milk and set aside for 5 minutes.
- Add soured milk to bran; let stand for 10 minutes.
- Mix together applesauce, egg, Splenda, molasses and vanilla and then add to milk/bran mixture.
- Mix together flour, baking soda, baking powder and salt.
- Add flour mixture to bran/milk mixture, and stir just until blended.
- Fold in raisins (if desired) and spoon batter into muffin tins.
- Bake for 17 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool in pan for 5 minutes, then remove from pan and enjoy!
