BRAISED TURNIPS WITH GREENS

Braised Turnips with Greens image

Winter white turnips peak from October through February. Like the tender baby turnips of late spring and summer, the smallest bulbs of this root vegetable yield delicate, sweet flavor. (Large turnips can be tough and woody.) Turnips are great candidates for a variety of cooking methods: roasting, braising, sautéing, and steaming. You can also thinly shave or julienne them to use raw in salads. Try this recipe to incorporate both bulb and greens in one dish.

Provided by Cheryl Slocum

Yield Serves 4 (serving size: about 1/2 cup)

Number Of Ingredients 8

6 small turnips with greens
1 tablespoon olive oil
1 cup unsalted vegetable stock
1 tablespoon apple cider vinegar
1/8 teaspoon kosher salt
1/4 teaspoon black pepper
2 teaspoons cold butter
1 teaspoon honey

Steps:

  • Trim and peel turnips; reserve and chop the greens. Halve turnips. Heat olive oil in a large skillet over medium-high. Add turnips, cut side down; cook 4 minutes or until golden. Turn and add vegetable stock, vinegar, salt, and pepper. Bring to a boil; cover and reduce heat to medium-low. Simmer until turnips are crisp-tender, 5 to 6 minutes. Uncover, increase heat to medium-high, and add greens; cook until liquid reduces by three-fourths and thickens, about 6 minutes. Swirl in butter and honey.

BRAISED TURNIP GREENS WITH TURNIPS AND APPLES

Braised Turnip Greens With Turnips and Apples image

Spicy, sharp turnip greens, braised gently with a smoked ham hock, are a time-honored accompaniment on southern tables at any time of the year. This version, with the ivory turnips, golden apple, and pink ham nestled among the dark greens, is especially pretty.

BRAISED TURNIP GREENS

Braised Turnip Greens image

Bitter greens like turnips are rich in flavor, and the smoky turkey wings in this recipe take them to the next level. Create your own stock from the smoked turkey to double down on flavor of the finished wings.

Provided by Food Network Kitchen

Categories     side-dish

Time 2h35m

Yield 4 to 6 servings

Number Of Ingredients 9

2 pounds smoked turkey wings, chopped into quarters
2 tablespoons olive oil
1 medium Vidalia onion, diced
5 cloves garlic, minced
1/2 teaspoon red pepper flakes
4 pounds turnip greens, well rinsed, tough stems removed, leaves chopped
1/4 cup apple cider vinegar
2 tablespoons brown sugar
Kosher salt and freshly ground black pepper

Steps:

  • Place the turkey wings in a 3-quart saucepan and add enough water to just cover them, about 5 cups. Bring to a boil, skimming off any foam that forms on the surface. Reduce to a simmer and let cook, uncovered, 1 1/2 hours. Strain the wings and remove the meat from the bones and set aside; discard the bones. Reserve 1 1/2 cups of the broth; save the remaining broth for another use.
  • Heat the oil in a large pot over medium-high heat. Once hot, add the onion and cook until softened, 2 to 3 minutes. Add the garlic and red pepper and cook 1 minute more. Add turnip greens in batches, allowing each batch to wilt and stirring to distribute before adding the next batch.
  • Once all the greens are added, stir in the vinegar, brown sugar, 1 teaspoon salt and 1/2 teaspoon black pepper. Return the turkey to the pot along with the reserved broth. Reduce the heat to low, cover and let simmer until the greens are very tender, about 40 minutes.

Time 35m

Yield 4 servings

Number Of Ingredients 6

4 medium turnips, peeled and cut into 1-inch wedges
3/4 cup chicken stock (preferably homemade)
1 1/2 tablespoons cold unsalted butter
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper
1 tablespoon finely chopped fresh tarragon, plus more for garnish

Steps:

  • Put the turnips, chicken stock, 1/2 tablespoon of the butter, sugar and 1/2 teaspoon salt in a medium skillet. Bring to a boil over medium-high heat. Reduce the heat to a bare simmer and cook, covered, until the turnips are just tender, about 10 minutes. With a slotted spoon, transfer the turnips to a bowl.
  • Increase the heat to medium high and boil the remaining chicken stock until it reduces to 2 tablespoons, about 7 minutes. Off the heat, return the turnips to the skillet. Add the remaining tablespoon butter and the tarragon; stir until the butter is melted and the turnips are well coated. Garnish with additional chopped tarragon.

  • Turnips with Spicy Meyer Lemon Dressing. Turnip recipes like this one get us excited for cooler weather. Here, the turnips and their leaves are roasted with a little salt, then sweet, salty, slightly spicy togarashi-spiked sauce.
  • Coriander Chicken Thighs with Miso-Glazed Root Vegetables. Miso enhances the umami factor of the root vegetables in this fall dinner. It's low-waste, too: You'll use the sweet greens from the turnips and the beets.
  • Turnips With Garlicky Breadcrumbs and Parmesan. Steaming is a simple, elegant way of preparing turnips, but this recipe has plenty of flavor, too, thanks to a double dose of lemon and the garlicky panko.
  • Ice Water Salad. When you've roasted your fill of root vegetables, it's time for a bright, crunchy salad like this one. You'll submerge the cut roots and tubers in a big bowl of icy water, which helps them get extra-crisp.
  • Roasted and Marinated Root Vegetables. First you roast, then you marinate. It's a move that works wonderfully with turnips—but also with beets and sweet potatoes, too.
  • Roasted Salmon with Celery and Bulgur Salad. Flake baked salmon over roasted turnips and bulgur for a casually chic dish that will make any dinner feel like a party.
  • Bitter Greens with Carrots, Turnips, and Oranges. Just because tomato season's over doesn't mean you have to swear off salads. Radicchio adds nice color to this one, but endive or escarole hearts work well in the mix, too.
  • Turnips with Bacon and Pickled Mustard Seeds. Hakurei turnips are especially sweet, and wonderful paired with a punchy mix of vinegar, whole mustard seeds, and bacon.
  • Sesame Arctic Char Donabe. Turnips and daikon add a subtle sweetness to this comforting, brothy meal. For the fish, you can use arctic char or salmon. Get This Recipe.
