Black Squid Ink Risotto with Grilled Prawns, Lobster and Green Onion Vinaigrette image

Number Of Ingredients 21

3 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
2 cups arborio rice
1 cup dry white wine
6 cups shrimp stock, clam stock or vegetable stock
2 tablespoons squid ink
1/2 pound squid, cut into 1/4-inch rings
1/4 cup finely chopped flat leaf parsley
Salt and freshly ground pepper
8 prawns, shelled, deveined, head on
Olive oil
Salt and pepper
8 scallions
1/2 large white onion, cut into chunks
3 garlic cloves
1/3 cup rice wine vinegar
1 cup pure olive oil
1 teaspoon honey
Salt and freshly ground pepper
1 pound lobster, steamed, meat removed and coarsely chopped

Steps:

  • Heat olive oil in medium saucepan over medium-high heat. Add onions and garlic and saute until soft. Add the rice and mix to coat with the oil and cook for 2 minutes. Raise the heat to high, add the wine and cook until all the liquid has evaporated. Place the stock and the squid ink in a large saucepan over high heat and stir to combine. Begin adding the hot squid stock 1 1/2 cups at a time and cook until the liquid is absorbed. Continue until the stock is gone and the rice is al dente. Add the squid and cook for 2 to 3 minutes. Stir in the parsley and season with salt and pepper to taste.
  • Preheat grill or grill pan. Toss prawns in olive oil and season with salt and pepper. Grill for 2 to 3 minutes on each side until just cooked through.
  • Blanch the scallions for 30 seconds in a large pot of boiling salted water over high heat. Drain and shock in cold water. Combine the scallions, onion, garlic, and vinegar in a blender and process until pureed. With the motor running, slowly add the oil until emulsified. Add the honey, season to taste with salt and pepper and pour into a squeeze bottle.
  • Assemble: Spoon the risotto into 4 bowls. Top each bowl with 2 prawns and drizzle with the green onion vinaigrette and some of the chopped lobster.

3 tbsp olive oil
pinch of fennel seeds
1 onion , finely chopped
1 small fennel bulb , finely chopped
1 green chilli , finely chopped
1 tbsp finely chopped preserved lemon (flesh scooped out)
3 garlic cloves , finely chopped
600g tomatoes , chopped
2 large squid , cleaned and cut into rings
200ml white wine
400ml fish or chicken stock
small bunch parsley , leaves finely chopped
small bunch dill , leaves finely chopped, plus a few fronds to serve
black or white rice , to serve
2 egg yolks
1 garlic clove , crushed
½ lemon , juiced
1 sachet of squid ink (available from souschef.co.uk)
150ml sunflower oil

Steps:

  • Heat the olive oil in a flameproof casserole dish over a medium-high heat. Cook the fennel seeds, onion, fennel, chilli and preserved lemon with a pinch of salt for 5 mins until softened and fragrant, then add the garlic and cook for 1 min more.
  • Add the chopped tomatoes and cook down for a few mins, then turn down the heat and add the squid. Cook gently for 3 mins, then add the wine and reduce by half. Add the stock and herbs, bring to a simmer, cover loosely with baking parchment and cook for 1½ hrs, until the squid is tender and meaty.
  • To make the mayo, whisk the yolks, garlic, lemon juice and a pinch of salt until combined, then add the squid ink and whisk again. Slowly whisk in the oil until you have a thick, silky mayo. Serve the squid with rice and a spoon of mayo, with fronds of dill scattered over. Keep leftover mayo in the fridge (to use within one day).

8 veal cheeks
Salt and freshly ground black pepper
Vegetable oil, for searing
2 slices bacon, chopped
1 onion, chopped, plus 1/2 onion, diced
1 carrot, peeled and chopped
1 stick ginger, chopped
4 cups red wine
3/4 cup soy sauce
Skin from 1 whole pineapple
4 cups veal stock
2 to 3 tablespoons butter, plus 1 tablespoon
1 cup arborio rice
2 1/2 cups chicken broth
1 can coconut milk
1/2 cup diced papaya
1 tomato, diced
2 sprigs mint, chopped
2 sprigs cilantro, chopped
Serving suggestions: parsnip chips or fried shallots.

Steps:

  • Preheat the oven to 300 degrees F.
  • Season the veal cheeks with salt and pepper on both sides. Heat a large skillet over medium-high heat, and then add enough oil to lightly coat the skillet. Let the oil heat, and then add the veal to the pan, and sear it on all sides until browned.
  • In a Dutch oven or oven-safe pot, cook the bacon slowly over low heat. Add the chopped onion, carrot, and ginger, and cook for 4 minutes. Add the wine, soy sauce, and pineapple skin, and bring to a boil. Add the veal stock, and return to a boil. Add the seared veal cheeks, and place pot in the oven to braise for 2 1/2 hours.
  • Closer to serving time, make the risotto. In a medium saucepot, sweat the remaining diced onion in 2 to 3 tablespoons butter for 2 minutes over medium heat. Reduce the heat to low. Add the risotto rice, and stir with a wooden spoon to coat it in the butter. Slowly add the chicken broth in 2 equal additions, not adding the second addition until the first has been almost completely absorbed. Stir constantly during the entire process. After all of the chicken broth has been absorbed, add the coconut milk, and then add enough of the braising liquid until the risotto is cooked to your taste. Fold in the remaining 1 tablespoon butter, papaya, tomato, and herbs. Serve immediately.
  • Place the risotto in the center of a plate and place 2 veal cheeks on top. Garnish parsnip chips or fried shallots, if desired.

A gentle braising ensures that squid is soft--not rubbery, as it can be if overcooked on higher heat. Rice is then cooked in the broth, the starch making the liquid creamy. Squid ink provides unusual color and a hint of pleasant briny flavor.

1 cup homemade or low-sodium store-bought fish stock
1/2 cup (1 stick) unsalted butter
1/2 cup olive oil
2 medium onions, finely chopped
2 garlic cloves, minced
3 tablespoons finely chopped fresh flat-leaf parsley, plus more for garnish
1 1/4 pounds cleaned squid, cut into 1-inch rings
1 cup dry white wine
3 ounces dried hot chorizo, finely chopped
1 cup Arborio rice
1 teaspoon squid ink
1 1/2 teaspoons coarse salt

Steps:

  • Bring stock and 4 cups water to a boil in a medium saucepan. Turn off heat.
  • Melt 1/4 cup butter in another medium saucepan over medium heat. Add 1/4 cup oil, half the onions, the garlic, and 1 tablespoon parsley. Cook, stirring occasionally, until onion is translucent, about 6 minutes. Add squid; cook, stirring, 1 minute. Add 1/2 cup wine; reduce heat to medium-low. Cook, stirring occasionally, until squid is tender, about 45 minutes.
  • Cook chorizo in a dry skillet over medium-low heat, stirring occasionally, until golden brown, about 4 minutes. Using a slotted spoon, transfer to a plate lined with paper towels.
  • Melt remaining 1/4 cup butter in a large saucepan over medium heat. Add remaining 1/4 cup oil and remaining onion; cook, stirring occasionally, until onion is translucent, about 4 minutes. Add rice, and cook, stirring constantly, until edges of grains are translucent, 2 to 3 minutes. Raise heat to medium-high. Add remaining 1/2 cup wine; cook, stirring constantly, until wine has evaporated.
  • Add squid and braising liquid; cook, stirring, until liquid has been absorbed. Add 4 cups stock, 1/2 cup at a time, stirring constantly, waiting for each addition to be absorbed before adding the next. Stir in squid ink after 20 minutes. Cook, adding 1/2 to 1 cup more stock in the same manner as above, until liquid is creamy and grains are cooked through but centers are still slightly firm (total time will be about 25 minutes).
  • Remove from heat; stir in remaining 2 tablespoons parsley and the salt. Serve topped with chorizo and more parsley.

Salina is known for its capers, and as her family have grown them for generations, Nonna Franchina is totally in tune with how to make the most of them in her cooking. This dish is a wonderfully tasty example of that.

25 grams (1 ounce) baby capers in brine
100 grams (3.5 ounces) coarse stale breadcrumbs
1 large free-range egg
Olive oil
15 grams (0.5 ounce) pecorino or Parmesan cheese, plus extra to serve
1 clove of garlic
1/2 a bunch of fresh flat-leaf parsley (15 grams [0.5 ounce])
1 red onion
10 ripe cherry tomatoes
One 680-gram (24-ounce) jar of passata
4 medium squid, cleaned, gutted, from sustainable sources (300 grams [10 ounces] total)
300 grams (10 ounces) dried spaghetti
2 sprigs fresh basil

Steps:

  • Place half the capers in a bowl with the breadcrumbs, egg, 1 tablespoon of oil and 2 tablespoons of water. Finely grate in the pecorino, peel the garlic, finely chop with the parsley (stalks and all), then scrunch it all together.
  • Peel and finely slice the onion and place in a casserole pan on a medium heat with 2 tablespoons of oil, stirring occasionally. Now, a great nonna trick: squeeze the tomatoes while submerged in a bowl of water to remove the seeds (and prevent them going everywhere!). Add the tomatoes to the pan with the passata. Simmer on a low heat while you stuff the squid.
  • Keeping the tentacles to one side, just over half-fill each squid tube with the breadcrumb mixture, pushing it right down into the tube but being mindful not to pack it too tightly. Use a cocktail stick or toothpick to seal or, like Franchina learnt from her grandparents, use a needle and thread. Stir the remaining capers into the sauce, then add the stuffed squid and tentacles. Simmer on a low heat for 25 to 30 minutes, or until tender.
  • Meanwhile, cook the pasta in a pan of boiling salted water according to the packet instructions. Use tongs to move the squid pieces to a board. Removing the sticks or thread, slice the tubes to reveal the filling, then arrange on a platter, spoon over a little sauce and pick over the basil. Drain the pasta, reserving a mugful of starchy cooking water, then toss with the remaining sauce, loosening with a splash of cooking water, if needed. Serve with a grating of pecorino, alongside that tasty braised squid.

Steps:

  • Rinse squid under cold water and pat dry. Halve any large tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/2-inch-wide rings.
  • Chop enough parsley to measure 2 tablespoons and reserve. Chop remaining parsley and garlic together. Heat oil in a 4-quart heavy pot over low heat until hot, then cook parsley-garlic mixture and red-pepper flakes, stirring, until garlic begins to sizzle, about 2 minutes. Increase heat to medium-high and add squid, then cook, stirring occasionally, until squid is barely opaque, about 1 minute. Add wine and briskly simmer, uncovered, stirring occasionally, until slightly reduced, about 10 minutes. Add tomatoes with their juice, water, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper and simmer, covered, stirring occasionally, until squid is very tender, 30 to 40 minutes.
  • Season with additional salt and pepper and stir in reserved parsley.
