SOY-GLAZED SHIITAKE MUSHROOMS

Steps:
- Bring 3 cups dried shiitake mushrooms (about 3 ounces), 1/3 cup reduced-sodium soy sauce, 1 tablespoon raw or brown sugar, and 1 cup water to a boil in a small saucepan. Cover pan; reduce heat to medium-low. Simmer, stirring occasionally, until mushrooms are softened and all liquid is absorbed, 12-15 minutes.
- Let mushrooms cool slightly, then thinly slice. Transfer to a small bowl, add 1/2 teaspoon toasted sesame seeds, and season with freshly ground black pepper.
SAUTEED BABY SPINACH WITH GARLIC, MUSHROOMS AND BEANS
This is one of my favorite, feel good meals. It's quick, healthy and delicious. I usually use cannellini beans, but any beans are good - garbanzos, navy beans, black beans. I just think the white beans look nice. All amounts are approximate. This is a very flexible recipe. Add more garlic, less garlic, Just remember that the spinach will shrink down even more than you might expect it too - so I use plenty of spinach. I like this as a vegetarian lunch, but it would be good as a side dish as well.

Steps:
- Heat oil in large skillet.
- Add chopped garlic and stir a minute or two. Add sliced mushrooms and stir until garlic begins to turn golden. Add spinach and cannellini. Continue to stir until beans are warm and spinach is wilting. Remove to a plate and season to taste. Serve immediately.

SPINACH SALAD WITH SEARED SHIITAKE MUSHROOMS
Shiitakes, which are sold in my supermarket along with cremini and button mushrooms, are powerhouse mushrooms. Along with the B-vitamins and minerals that all mushrooms contain, the shiitake contains all 8 amino acids, unusual for a plant, and the essential fatty acid linoleic acid, as well as an immune-boosting chemical component called lentinan. When you pan-cook them over high heat, as you do here, the flavor is very intense, because of the natural msg that all mushrooms contain.

- Mix together the vinegar and lemon juice with the garlic, salt, pepper, and Dijon mustard using a fork or a small whisk. Whisk in the olive oil and the yogurt or buttermilk if using. Set aside.
- Combine the spinach, nuts, celery, and goat cheese in a salad bowl.
- Heat a pan over medium high heat. Add 1 teaspoon oil and when very hot, add the mushrooms. Shake the pan once, then let the mushrooms cook without moving them around until they begin to sweat and soften (watch closely). After about a minute or two, when they have begun to sear and release moisture, you can move them around in the pan. Cook for about 5 minutes, season to taste with salt and pepper and remove from the heat. Add to the spinach mixture and toss with the dressing. Serve at once.

SPICED UP SOYA BEANS
I love my soya beans! I can only get the frozen type which are ready shelled. This makes them a great little side dish and if served cold go great with a cold beer.

- Cook the soya beans in boiling water for 5 minutes. Drain well and pat dry with kitchen paper.
- Heat the oil in a frying pan, add the garlic and fry for 1-2 minutes.
- Add the salt, chilli powder and fry for a further 2-3 minutes until aromatic.
- Tip in the beans and toss well in the seasoning. Serve hot.

- In a large skillet, heat 1 tablespoon oil over medium. Add mushrooms; season with salt and pepper. Cook, stirring occasionally, until browned, 8 to 10 minutes. Transfer to a plate (reserve skillet).
- Heat remaining tablespoon oil in skillet. Add as much spinach as will fit; season with salt and pepper. Toss spinach, adding more to skillet as room becomes available. Cook until tender, about 2 minutes. Remove from heat, drain off any excess liquid, and stir in vinegar. Top spinach with mushrooms.

Steps:
- Place the beans in a saucepan with plenty of cold water. Bring to the boil and boil rapidly for 10 minutes., then reduce the heat, cover and simmer for 1 hour, or until tender. Drain, reserving 150ml/1/4 pint of cooking liquid.
- Heat the oil in a large frying pan. Fry the garlic, ginger and chillies for 3 mintutes then add the mushrooms and fry for a further 5 minutes.
- Add the tomatoes, beans, reserved liquid, soy sauce and sherry and bring to the boil. Cover and simmer for 15 minutes.
- Stir in the spinach and cook for about 3 minutes until the spinach is tender.
- Serve with noodles.
