1 (3 to 4 pound) piece beef chuck roast, trimmed of excess fat
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
1 cup canned crushed tomatoes
1 cup water
2 red onions, halved
2 garlic cloves, chopped
8 carrots, sliced
2 celery stalks, sliced
1 cup button mushrooms, stems removed
2 sprigs fresh rosemary
4 sprigs fresh thyme
2 bay leaves

Steps:

  • Season all sides of the beef with a fair amount of salt and pepper. In a large Dutch oven or other heavy pot that has a tight cover; heat 2 tablespoons of the oil over moderately high heat. Brown the meat on all sides, taking the time to get a nice crust on the outside. Pour in the tomatoes and the water. Scatter the vegetables and herbs around the pot roast, season with salt and pepper; and drizzle with the remaining tablespoon of oil. Cover the pot and reduce the heat to low. Braise for about 3 hours, basting every 30 minutes with the pan juices, until the beef is fork tender.
  • Slice the pot roast and arrange on platter surrounded by the vegetables. Serve with the pot juices.

3 tablespoons unsalted butter
1 1/2 cups chopped onion
1 cup carrots, chopped
1/4 cup vegetable oil
5-pound beef roast, (chuck, rump or bottom round) covered with a layer of fat and tied
2 cloves garlic, each cut into slivers
2 tomatoes, chopped
Bouquet garni parsley, leeks, bay leaf, celery stalk, sprig thyme or teaspoon dried thyme
Salt and pepper

Steps:

  • Preheat the oven to 350 degrees. In a casserole large enough to hold the meat, heat the butter. When foaming subsides add the onions and carrots and saute for about 10 minutes or until they take on some color. With a slotted spoon remove them and reserve for later.
  • Add the oil to the casserole and heat over high heat. Add the beef and brown the meat on all sides; this should take 15 minutes to get a deep golden color. Return the vegetables to the casserole, stuffing them underneath the meat. Add the garlic, tomatoes, bouquet garni. Heat the casserole until you hear it sizzle, drape the meat loosely with aluminum foil, cover the casserole tightly and place it in the lower third of the oven.
  • Cook for 1 hour, turn the meat over, lower the heat to 325 and continue to cook until the beef is tender, another 1 1/2 to 2 hours. Remove the meat to a platter. Strain cooking juices into a saucepan, pressing down hard on the vegetables to extract their liquid. Let liquid settle for a minute, then skim off surface fat. Heat the liquid and reduce slightly; adjust seasoning. Slice the roast and spoon the gravy over the top. Serve with braised carrots and boiled parslied potatoes (make extra for cold potato salad and beef salad next day).

6 garlic cloves
15 fresh sage leaves or 2 tablespoons dry sage
8 tablespoons olive oil
3 tablespoons red-wine vinegar
1 tablespoon lemon juice
1 teaspoon kosher salt
Freshly ground pepper to taste
6 pounds lean brisket of beef
2 garlic cloves, slivered
1 large onion, sliced
4 cups chicken stock
2 tablespoons soy sauce
Salt and pepper to taste
2 pomegranates or 2 pounds small seedless grapes (see note)
Parsley for garnish

Steps:

  • Place the garlic cloves, sage, six tablespoons of oil, the vinegar, lemon juice, kosher salt and freshly ground pepper in a food processor. Process until all the ingredients are finely chopped.
  • Place the meat in a roasting pan. With a knife make several incisions in the meat and insert the slivers of garlic. Then pour the marinade over the meat. Cover the pan with foil and refrigerate overnight.
  • The following day, heat the remaining two tablespoons of oil in a pan large enough to hold the meat. When the oil is hot, add the sliced onion and saute them until they are lightly golden. Remove the meat from the marinade and brown on all sides over high heat. Then add the marinade, chicken stock, two cups of water, soy sauce and salt and pepper to taste. Bring to a boil, lower the heat and simmer for two and one-half hours or until the meat is easily pierced with a fork. Remove the meat from the pan and cool.
  • Meanwhile, degrease the sauce. Then cut the pomegranates in two and remove the seeds. Add the seeds to the meat sauce.
  • Slice the meat and return to the saucepan. Reheat gently.
  • With a spatula, remove the meat to a large platter. Pour some sauce with pomegranate over the meat. Garnish with parsley and serve the remaining sauce in a gravy boat.

2 (4 1/2 lb) boneless chuck roast
2 tablespoons kosher salt
2 teaspoons kosher salt
2 tablespoons fresh ground black pepper
20 garlic cloves

1 teaspoon fresh rosemary, minced
1/2 cup olive oil
1 quart beef stock (or low-sodium canned beef broth)
1 (12 ounce) can Coca-Cola
2 tablespoons tomato paste
2 cups carrots, chopped into 2-inch pieces
2 cups celery, chopped into 2-inch pieces
2 cups onions, diced cut 2-inch dice
1/4 cup flour

Steps:

  • Preheat the oven to 325 degrees F.
  • Season the roasts well on all sides with 2 teaspoons of the salt and the pepper each. Using a paring knife, make 10 small, thin slits total into each of the roasts on all sides, and fill the holes with the garlic cloves. Spread the rosemary amongst the 2 roasts and also stuff into the slits.
  • Heat a saute-pan over medium-high heat and add two tablespoons of the olive oil. When the oil is hot, working one at a time, sear the roasts until very well browned on all sides, 4 to 6 minutes per side.
  • Place the roasts in a roasting pan. Add the vegetables, the stock, and cola and tomato paste and blend well. The liquid should come about 1/2 way up the sides of the roast. Cover the pan with foil, place in the oven, and roast until the meat is falling apart-tender, about 3 to 4 hours, adding extra water as necessary to keep the liquid level at about 1/3 up the sides When the meat is fork-tender, remove the roast from the oven and carefully transfer the roast to a serving platter. Cover loosely to keep warm.
  • Skim off as much of the fat from the surface of the cooking liquid as possible. Reserve 1/4 cup of the fat in a small bowl and add the flour. Stir to make a smooth paste. Slowly whisk this mixture into the hot cooking liquid that remains in the roasting pan and place over high heat on the stovetop. Cook, whisking frequently, until mixture comes to a boil and thickens. Continue to cook for about 5 minutes or until the sauce is thick enough to coat the back of a spoon. Taste and adjust seasoning, if necessary.

3/4 cup dry red wine
1/2 cup dark balsamic vinegar
1 tablespoon sugar
1 tablespoon olive oil
2 1/4 lbs chuck roast, about
1 teaspoon kosher salt, divided
1 teaspoon ground black pepper, divided
2 medium red onions, halved,peeled and thinly sliced
2 tablespoons finely chopped garlic
1 (14 1/2 ounce) can peeled and diced tomatoes, undrained
1/2 cup dark raisin
4 slices lemons, zest of, each about 1/2 by 2 inches
1 (14 ounce) can beef broth
1/3 cup pitted kalamata olive, chopped
1/4 cup chopped parsley
1 teaspoon finely grated lemon, zest of
1 cup orzo pasta or 1 cup egg noodles

Steps:

  • Preheat oven to 325 degrees.
  • Stir together the wine, vinegar and sugar; set aside.
  • Heat the olive oil in a heavy Dutch oven over medium heat.
  • While the pan is heating, dry the meat with paper towels.
  • Sprinkle with about 1/2 teaspoon each salt and pepper.
  • Place in the pot and brown well, about 8 minutes per side.
  • Remove from the pan.
  • Turn the heat to medium-low.
  • Put the onions into the pan and sauté until translucent and golden, about 10 minutes.
  • Add the garlic; sauté 1 minute.
  • Stir in the wine mixture.
  • Bring to a boil and continue cooking at a low boil 3 minutes.
  • Stir in the undrained tomatoes, raisins, strips of lemon zest and beef broth.
  • Bring to a boil, reduce the heat and simmer 5 minutes.
  • Put the pot roast back into the pan.
  • Bring the liquid back to a simmer, cover and place on center oven rack of preheated oven.
  • Cook 1 hour.
  • Turn the meat, recover and continue cooking about 1 1/2 hours longer, or until the meat is very tender, offering little resistance when pierced with a fork.
  • While the meat is cooking, put the olives, parsley and grated lemon zest on a cutting surface and chop together finely.
  • Refrigerate until ready to use.
  • Remove the roast from the oven.
  • Transfer the meat to a cutting surface and cover with a piece of aluminum foil.
  • Degrease the cooking juices.
  • Purée about 1 1/2 cups and pour back into the remaining juices.
  • Add more salt and pepper if needed.
  • Cut the meat across the grain in thin slices.
  • Put into the sauce.
  • Keep warm on low heat.
  • Cook the pasta according to package directions.
  • Drain well.
  • Pour into a large serving bowl.
  • Toss with the olive mixture and some of the sauce.
  • Spoon onto serving plates along with the meat.
  • Serve extra sauce to the side.
  • Note: Use a vegetable peeler to remove strips of the lemon zest, removing only the yellow part of the peel.

Braised Flanken With Pomegranate image

I'd always thought that flanken was specific to boiled beef or soup. But a little research divulged that the brawny cut is hugely popular in braises (and pot-roasting is arguably the same as braising), especially in Germany, Austria and Hungary. It also shines in Asian cuisines, particularly Korean, in which it's seared and served rare. Arthur Schwartz, in his book "Jewish Home Cooking" (Ten Speed Press, 2008), extols the virtues of flanken. He points out that it's from the same part of the animal as short ribs, cut across rather than along the bones. But while short ribs have achieved culinary stardom and high prices, flanken remains cheap and obscure. And just as tasty.

4 pounds flanken ribs
1/2 teaspoon salt, more to taste
1/2 teaspoon freshly ground black pepper, more to taste
2 tablespoons extra-virgin olive oil
3 medium carrots, peeled and diced
3 medium celery stalks, diced
2 leeks, white and light green parts, cleaned, quartered lengthwise and chopped
2 garlic cloves, finely chopped
1 shallot, chopped
1/2 cup pomegranate juice
1/3 cup dry red wine
2 cups chicken stock, or as needed
3 thyme branches (see note)
1 rosemary branch
1 bay leaf
3 whole cloves
1 1/2 tablespoons pomegranate molasses (optional)
1/3 cup pomegranate seeds
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 325 degrees. Season meat generously all over with salt and pepper. Heat a large ovenproof Dutch oven over medium-high heat. Sear meat in batches until dark golden, 3 to 4 minutes a side. Transfer meat to a platter.
  • Add oil to pan and sauté carrots, celery, leeks, garlic and shallot until vegetables are softened and slightly caramelized, about 5 minutes; season lightly with salt and pepper. Add pomegranate juice and wine, and cook, scraping browned bits from bottom of pan, until most of the liquid is evaporated, about 2 minutes. Stir in the stock, thyme, rosemary, bay leaf, cloves, 1/2 teaspoon salt and 1/2 teaspoon pepper. Return meat to pot. Liquid should reach halfway up sides of meat. If not, add a little more stock or water.
  • Cover pot and transfer to oven. Cook, turning meat every 30 minutes until fork tender, about 2 hours.
  • If you have time, let meat cool and chill overnight. The next day, remove fat from surface, then reheat over low heat. Stir in the pomegranate molasses if using, and sprinkle with pomegranate seeds and cilantro just before serving.

1 teaspoon salt

Add turnips, sweet potato and garlic; cook 1 minute longer., Add wine, stirring to loosen browned bits from pot. Stir in broth, vinegar and herbs. Return roast to pot; bring to a boil. Bake, covered, 2-1/2 to 3 hours or until meat is tender., Remove beef and vegetables; keep warm. Discard herbs from cooking juices; skim fat. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir 2 minutes or until thickened. Serve with pot roast and vegetables.

I have divided this recipe in half for a 3-4 pound roast but, as written here, this delicious pot roast serves 15-20 people. Perfect because it's best when made 1-2 days before serving. It will pick up additional flavor from sitting in its braising juices, will slice more neatly because the meat fibers will have compacted as they cool and will hold together nicely when reheated. Great tasting pot roast for 6 or 20. Prep and cook times include reheating.

10 -12 lbs trimmed whole bottom round beef roast
vegetable oil
6 tablespoons flour
4 cups beef stock, about
2 teaspoons salt
2 carrots, roughly chopped
2 large onions, roughly chopped
1 large celery rib, roughly chopped
4 cloves garlic, unpeeled
1 large bouquet garni, tied in cheesecloth (10 parsley stems,4 bay leaves,1 tsp thyme, 6 allspice berries)
1 bottle healthy young wine, zinfandel,chianti or of like quality

Steps:

  • Tie roast firmly with string; brush all sides with oil and set on a jelly roll pan; brown slowly on all sides under the broiler; watch closely and do not burn.
  • In a heavy saucepan, stir 5 T oil with the flour; continue stirring over moderate heat until roux turns a dark nutty brown,about 10 minutes, do not burn;remove from heat, let cool a bit and stir in beef stock; set aside.
  • Preheat the oven to 350°; using 2 tsp (less if using salted bouillon), salt the meat on all sides and set fat side up in a large, covered roaster or roasting pan with 3"-4" high sides.
  • Place the vegetables, garlic and herb bouquet around the roast and pour in the wine and stock/roux mixture; add more stock if necessary to come almost halfway up the meat.
  • Bring to a simmer on top of the stove; cover (use aluminum foil if necessary) and set in the lower third of the oven; bake 1/2 hour or until sauce is bubbling quietly; baste with the gravy and turn heat down to 325°.
  • The gravy should continue bubbling gently throughout the cooking so regulate oven accordingly; baste and check every 1/2 hour for another 2 hours; begin testing for doneness with a meat thermometer; remove pan from oven.
  • Allow roast to rest 1/2 hour, basting every 10 minutes and turning it several times; remove roast from pan; sieve contents of roaster into a saucepan and squeeze juices out of the braised vegetables into the saucepan.
  • Simmer liquid and skim fat from its surface for 1/2 hour; simmer down until the sauce coats a spoon as it will the meat; taste for seasoning and strength; if necessary thin with more stock or thicken with 2T or more of potato flour or cornstarch stirred into several spoons of stock or wine, simmer for 2-3 minutes.
  • (Roast may be carved and served at this point but is better if cooked several hours or a day in advance).
  • If not serving immediately, pour the sauce around the meat, cover with foil and refrigerate; the roast may be reheated whole or sliced and sauced.
  • To reheat whole, cover the meat closely and place in a 300° oven or simmer it over very low heat on top of the stove, turning it every 15 minutes until internal temperature is 120°, about 30-40 minutes; just before serving, cut and discard the trussing string.
  • To reheat sliced and sauced, return the sliced beef and sauce to the roaster or a large baking pan; cover; baste with the sauce every 10 minutes and warm through slowly in a 300° oven.
