CIDER-BRAISED PORK CHEEKS



Cider-Braised Pork Cheeks image

You'll probably need to order pork cheeks from your butcher, but the resulting slow-cooked meaty goodness is so worth it. This is delicious served over buttery mashed potatoes with lots of the gravy.

8 (4 ounce) pork cheeks
salt and freshly ground black pepper to taste
½ cup all-purpose flour for dredging, or as needed
2 tablespoons clarified butter
2 tablespoons apple cider vinegar
2 cups hard apple cider
2 cups homemade or low-sodium chicken broth
1 teaspoon finely chopped fresh sage leaves
1 teaspoon finely chopped fresh rosemary leaves
1 small yellow onion, diced
1 small carrot, diced
1 rib celery, diced

Steps:

  • Season both sides of pork cheeks with salt and pepper. Sprinkle with flour and press it into the meat to coat thoroughly.
  • Heat clarified butter in a pan over medium-high heat. Sear meat on both sides until richly browned, adjusting heat lower if necessary. When cheeks are browned, reduce heat to medium. Transfer cheeks to a plate to rest.
  • Remove all but 2 tablespoons fat from the skillet. Add onions, carrots, and celery to skillet. Cook and stir until softened and sweet, seasoning with a pinch of salt. Add vinegar and stir to deglaze the pan. Pour in the cider and chicken stock. Bring to a simmer. Add sage and rosemary. Reduce heat to low and transfer cheeks back to pan. Cover. Cook until fork tender but not falling apart, 2 to 3 hours depending on the size of the pork cheeks. Transfer to a plate.
  • Bring liquid to a boil over high heat, skimming off fat as it rises to the surface. Reduce volume of liquid by about 60 to 70%. Sauce will start to thicken up. Taste for salt and season as needed. Transfer cheeks back to liquid. Continue to cook over medium-low heat until cheeks are heated through and tender and sauce is thick enough to coat cheeks.

One-Pot Braised Chard With Gnocchi, Peas and Leeks image

Adding a package of prepared potato gnocchi to a pot of braised greens turns a side dish into a vibrant one-pot meal fit for weeknights. The chard stems, leeks and peas are nubby and colorful next to the pillowy gnocchi, while a combination of butter and white wine makes the sauce rich and tangy. For extra creaminess, serve this with dollops of fresh ricotta stirred in at the last minute. Or skip the ricotta for a lighter meal.

4 tablespoons unsalted butter
3 leeks, white and light green parts, sliced thinly into half-moons
1 pound chard, preferably rainbow or red (about 2 bunches), stems thinly sliced and leaves coarsely chopped
3 garlic cloves, minced or finely grated
2 teaspoons chopped thyme leaves
Kosher salt and black pepper
3/4 cup dry white wine
3 cups vegetable or chicken stock
1 pound potato gnocchi (fresh, frozen or shelf-stable all work)
2 cups peas, fresh or frozen
2 tablespoons chopped fresh tarragon leaves
1 cup torn parsley leaves and tender stems, for serving
Grated Parmesan, for serving
Lemon wedges, for serving
Fresh ricotta, for serving (optional)
Red-pepper flakes, for serving (optional)

Steps:

  • In a 5- or 6-quart Dutch oven, melt butter over medium-high heat. Add leeks and chard stems, and cook until tender and lightly brown, 7 to 10 minutes.
  • Stir in garlic, thyme and a large pinch of salt and black pepper, and sauté until fragrant, about 1 minute longer. Add wine, scraping up the brown bits at bottom of pot, and let the wine reduce by half, 2 to 4 minutes. Pour in stock and 3/4 teaspoon salt, and bring to a simmer.
  • Stir in gnocchi and chard leaves. Cook, partly covered, for 15 minutes, until the chard is soft. Add peas and tarragon, and continue to cook, partly covered, until gnocchi are cooked through, another 5 to 10 minutes. Taste and add more salt, if needed.
  • To serve, top with parsley, a generous shower of Parmesan and a big squeeze of lemon. If you like, you can also add a dollop of ricotta and some red-pepper flakes.

2 1/2 pounds 1-inch cubes trimmed pork shoulder (such as boneless pork butt)
1 tablespoon coarse kosher salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick) butter
1/2 cup all purpose flour
1 medium white onion, chopped
1 large carrot, chopped
1 large celery stalk, chopped
1/4 pound pancetta (Italian bacon),* chopped
2 cups dry white wine
4 cups whole milk
2 28-ounce cans plum tomatoes in juice, pureed with juice in blender in batches until smooth
Semolina Gnocchi

Steps:

  • Place pork in large bowl. Mix 1 tablespoon coarse salt and cinnamon in small bowl. Sprinkle salt mixture over pork, tossing to coat evenly. Cover and chill overnight.
  • Preheat oven to 350°F. Melt butter in heavy medium saucepan over medium heat. Whisk in flour. Reduce heat to medium-low and cook 2 minutes, whisking often (do not allow roux to brown). Remove from heat; cover and let stand until ready to use.
  • Using on/off turns, blend onion, carrot, and celery in processor until finely chopped. Cook pancetta in large ovenproof pot over medium-high heat until beginning to brown and fat is rendered, about 6 minutes. Add vegetables to pot and sauté until beginning to brown, about 6 minutes. Add pork and sauté until brown, about 7 minutes. Add wine and bring to boil, stirring up browned bits. Add milk and bring to simmer. Add tomato puree, then whisk in roux. Simmer 5 minutes, whisking occasionally.
  • Cover pot. Place in oven and braise pork until very tender, about 2 hours. Uncover; let pork cool briefly. Chill pork, uncovered, until cold, then cover and chill overnight.
  • Rewarm pork over low heat, stirring often. Season to taste with salt and pepper.
  • Place 1 gnocchi square in center of each plate. Top with pork and sauce.
  • An Italian bacon cured in salt; available in the refrigerated deli case of many supermarkets and at Italian markets.

1 1/2 lbs. pork cheeks, patted dry and seasoned with salt and pepper
Two medium carrots, peeled and chopped
One medium onion, peeled and chopped
6 cloves garlic, smashed with a chef's knife
2 stalks celery, chopped
1/2 bunch fresh thyme
1 t. whole black peppercorns
One bottle red wine, preferably Italian
One bunch fresh oregano
One recipe gnocchi, blanched
Gnocci
2 large russet potatoes, scrubbed
2 large egg yolks at room temperature
1/2 cup 00 flour, plus more for dusting

Steps:

  • Preheat an All-Clad 12" fry pan to medium high. When the pan is hot, add 2 tablespoons of olivie oil, then the pork cheeks. Brown the meat well, turning to cook all sides. Remove to the All-Clad Slow Cooker insert. In the same fry pan add vegetables and sauté for about 5 minutes or until browned. Add thyme, peppercorns, and the red wine. Bring to a boil scraping up any browned its on the bottom of the pan. Transfer contents to the insert and combine with pork cheeks. Set the slow cooker to high setting and cook for five hours, or until meat shreds easily and is completely tender. After five hours, remove pork cheeks to a plate. Pour liquid remaining through a fine-mesh strainer positioned over a large bowl. Pour remaining liquid into a 6 or 8 quart All-Clad stock pot. Shred pork cheeks with a fork and add to stock pot. Bring mixture to a bubbling simmer and add gnocchi. Cook over medium until liquid is reduced and syrupy and gnocchi are tender. Just before serving, pick leaves off oregano and add to gnocchi. Toss.
