BRAISED CABBAGE WITH GOAT CHEESE (HOUSTON'S COPYCAT)
Houston's Restaurant makes a fabulous Braised Red Cabbage. I found a copycat recipe for it on "Nibbles of Tidbits, a Food Blog"

- Add the Vinegar, Water, Butter and Sugar to a Dutch Oven. Heat all on the stove for about 5 minutes. When the Sugar is dissolved, add the chopped Red Cabbage.
- Stir all together, then cover and braise in the oven at 325° for 2 hours.** Stir every half hour or so. If the liquid completely evaporates, just add a little extra Water. **I was in a hurry so i let it cook on the stove top for about 10-15 min and then put it in the over for an hour and it turned out great.
- Serve with a dollop of Goat Cheese.

Steps:
- Preheat oven to 325°F
- Place vinegar, water, butter and sugar into a Dutch oven.
- Place over medium heat and cook for about 5 minutes.
- When butter is melted and sugar has dissolved, remove from heat.
- Add chopped red cabbage. Stir all together. Cover with lid.
- Place Dutch oven in preheated oven. Braise in the oven for 2 hours, stirring every 1/2 hour or so. If the liquid completely evaporates, add a little extra water.
- Remove from oven and spoon cabbage onto a serving platter or individual serving plates.
- Top with 8 - 12 dollops (or 1 or 2 dollops per serving, if doing individual servings) goat cheese (see photo above).
- Serve hot.
BRAISED RED CABBAGE

- Cut out core of cabbage and discard any tough or discolored outside leaves.
- Slice cabbage in half or quarters, then slice lengthwise into 1/8-inch shreds.
- You should have about 12 cups.
- Toss cabbage and onion in large nonstick skillet and add currants, vinegar, sugar, salt, pepper, oil and stock.
- Bring to boil over high heat, then cover.
- Reduce heat to medium and braise, stirring occasionally, until there is only a small amount of liquid left and cabbage is moist and just slightly crunchy, about 40 to 45 minutes.
- (If skillet starts to dry before cabbage is done, add a little more stock and continue cooking.) Adjust seasonings and serve.
- Comments: You can vary this dish to suit your taste or ingredients on hand.
- Use regular or savoy cabbage; add minced garlic, apple slices or caraway seeds; or use part red wine or apple cider in the braising liquid.

- Thinly shred the cabbage and let it soak in a bowl of water.
- While the cabbage is soaking, chop the bacon and onion.
- Peel and core the apple, then slice it.
- Add the bacon (or vegetable oil) to a large pot and sauté until browned (or oil is heated).
- Add the onion and sauté until golden.
- Add the apple vinegar to deglaze the pan.
- Add the honey, spices, apple, and salt.
- Drain the cabbage and add to the pot, a handful at a time, stirring as you ad it until it wilts a little.
- Braise the cabbage for up to an hour and a half until the cabbage is soft. If there is liquid left, you can let the cabbage absorb the liquid.

- Preheat oven to 475°F.
- Cook bread crumbs in 1 Tbsp oil with salt and pepper to taste over moderate heat, stirring until golden brown.
- Transfer to bowl and toss well with horseradish.
- Pat pork dry and season with salt and pepper. Brown pork in remaining oil, about 5 minutes or until well browned. Transfer to a baking pan.
- Mix mustard and mayonnaise. Coat top and sides evenly with mixture and press bread crumb mixture evenly onto meat.
- Place roast in the middle of oven. Roast until a meat thermometer inserted in center registers 145F degrees, 25 to 30 minutes.
- Let rest and cut into 1/4 inch thick slices.

QUICK BRAISED CABBAGE
Cabbage is an underrated food, maybe because it is often overcooked to the point that it is limp. In this recipe it is quickly braised and full of flavors. Adapted from Floyd Cardoz.

Steps:
- Cut cabbage into 2-inch wedges (you'll have 6 to 8 of them), leaving the core intact so that the wedges stay together while they cook.
- Heat a heavy skillet, over medium heat, and add 1/4 cup oil; heat this until it shimmers, then add cabbage.
- Cook cabbage, turning once, so that it is browned on both sides, abut 2 to 3 minutes per side; transfer to a plate and set aside.
- Reduce heat in skillet to medium low, add remaining tablespoon oil; add cloves, mustard seeds, curry leaves, bay leaf, shallot, and garlic, cooking and stirring 1 minute.
- Add ginger, turmeric, 1 tablespoon jalapeno, tomato, and broth; season with salt (you can add more jalapeno to taste).
- Increase heat to medium high and bring to a boil; return cabbage, cover, reduce heat to medium, and braise until tender, about 10 minutes (turn once halfway through braising).
- Remove and discard cloves, curry leaves, and bay leaf.
