Instead, we're giving you a two-step method to braise a boneless chuck roast, and then, we add in some oh-so-yum mushrooms and barley! It's packed full of the same beef and barley soup flavor, but it's also the perfect one-pot dinner to bring comfort right to the table.

1 tablespoon vegetable oil
1 (3-pound) boneless beef chuck roast
1 teaspoon salt
1/2 teaspoon black pepper
1 onion, chopped
3 garlic cloves, minced
1 3/4 cups beef broth
1 teaspoon dried tarragon
1 bay leaf
1 cup quick-cooking pearl barley
1/2 pound mushrooms, cut in half
1 (9-ounce) package frozen peas, thawed
1/3 cup sour cream

Steps:

  • In a soup pot over medium heat, heat oil until hot. Sprinkle roast with salt and pepper.
  • Sear 4 to 6 minutes, browning on all sides. Remove roast to a platter.
  • Add onion and garlic to pot. Sauté 5 to 7 minutes or until onion is lightly browned. Add broth, tarragon, and bay leaf, then return roast to pot and bring to a boil.
  • Reduce heat to low, cover tightly, and simmer 1-1/2 hours. Stir in barley and mushrooms, cover, and cook 15 minutes or until barley is tender.
  • Remove roast from pot and keep warm. Remove and discard bay leaf then add peas and sour cream to barley mixture, stirring constantly over low heat just until heated through. Carve roast and serve with barley mixture.

Add barley. Cover and simmer for 45 minutes or until meat and barley are tender. Add peas; cover and simmer for 5 minutes or until peas are tender. , Discard bay leaf. Set the roast and barley aside; keep warm. Skim fat from pan juices. If desired, add sour cream to the pan juices; stir until heated through over low heat (do not boil). Slice roast; serve with barley and gravy.

1 1/4 pounds boneless beef chuck (in one piece)
1 cup pearl barley
1/2 pound cremini mushrooms, quartered
4 stalks celery, quartered
6 medium carrots, quartered
2 medium leeks, sliced (white and light green parts only)
1 sprig thyme
4 cups low-sodium beef broth
1 tablespoon soy sauce
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
Horseradish, for serving (optional)

Steps:

  • Combine the beef, barley, mushrooms, celery, carrots, leeks, thyme, beef broth and soy sauce in a slow cooker. Add 1 cup water, 1 teaspoon salt and 1/4 teaspoon pepper. Cover and cook on low, undisturbed, 8 hours. Uncover and skim off any excess fat. Transfer the beef to a cutting board, let cool slightly and slice or shred by hand into bite-size pieces. Thin the vegetable-barley mixture in the slow cooker with some water, if desired. Divide among shallow bowls and top with the beef. Serve with horseradish, if desired.

Stout Braised Short Ribs with Barley image

4 1/2 pounds bone-in short ribs, cut into 4-inch pieces
Kosher salt and freshly ground black pepper
1/4 cup canola oil
2 medium carrots, roughly chopped
2 celery ribs, sliced
2 medium onions, roughly chopped
4 cloves garlic, sliced
6 sprigs fresh thyme
2 bay leaves
2 sprigs fresh rosemary
Two 12-ounce bottles dark stout beer, such as Guinness
One 14.5-ounce can low-sodium beef broth
One 14.5-ounce can diced tomatoes
1 cup pearl barley
1 teaspoon dry mustard powder

Steps:

  • Set a large pot or Dutch oven over high heat. Sprinkle the short ribs all over with a generous amount of salt and some pepper (no flour required here!). Add the oil to the pot and brown the short ribs well on each of the 3 meaty sides, about 15 minutes total. Work in batches so as to not overcrowd the pot. You want a deep brown color on the meat as this will give the stew its rich flavor and color when braising. Remove the ribs and set aside.
  • Add the carrots, celery and onions to the pot. Saute the vegetables until caramelized and wilted, 8 to 10 minutes. Add the garlic and toss to combine and heat through. Return the ribs to the pot and nestle in amongst the vegetables. Add the thyme, bay leaves, rosemary, stout beer, broth and tomatoes. Season lightly with salt and pepper, then stir and bring to a boil. Reduce the heat, cover with a lid and simmer the ribs 2 1/2 hours. Periodically skim any excess fat on the surface and discard.
  • After 2 1/2 hours, mix in the pearl barley and dry mustard powder, then cover once more and cook 45 more minutes. When done, remove the bay leaf, thyme and rosemary stems. Taste and season the braise with salt and pepper and serve.

This hearty dish uses a thrifty cut of meat. Marinate, then slow cook for a tender finish and serve on a soft, creamy risotto

3 beef cheeks, sinew removed
500ml dark ale
2 garlic cloves
1 bunch fresh thyme
1 bay leaf
750ml beef stock
500ml dark ale
3 small white onions , unpeeled
olive oil
25g butter
1 ¼l chicken stock
250g pearl barley
6 garlic cloves
300ml double cream
50g grated parmesan
few drops lemon juice

Steps:

  • Put the beef cheeks in a dish, cover with the ale and add the garlic, thyme and bay leaf, then leave to marinate for at least 6 hrs - or overnight.
  • Heat oven to 140C/120C fan/gas 1. Strain off the cheeks and transfer the marinating liquid, garlic and herbs to a large flameproof casserole dish and bring to the boil. In a frying pan, brown the beef cheeks in a little oil until caramelised on both sides. Add the cheeks to the casserole dish with the marinade and pour in enough beef stock to cover. Bring to the boil, cover, then braise in the oven for 4 hrs until the cheeks are very tender. Every so often, skim off any fat from the surface to keep the stock clean.
  • While the beef is in the oven, make the malted onions. Put the ale in a frying pan, add the whole onions, cover and simmer until the onions are tender, about 20 mins. Leave to cool completely, then remove the skin and slice the onions into sixths and set aside.
  • Once the beef is cooked, remove the cheeks, herbs and garlic and set aside, then reduce the stock rapidly until it is syrupy. Return the cheeks to the pan and glaze with the sticky reduction, then keep warm until needed.
  • Roughly 40 mins before you're ready to serve, make the risotto. Put the chicken stock in a large pan and bring it to the boil. Add the barley, then cook for 15 mins. Remove from the heat, strain, then tip the barley into a medium-sized pan.
  • Place the garlic in a small pan with the double cream and bring to the boil. Simmer for 3 mins, then transfer to a food processor and blend until smooth. Set aside about 50ml of the garlic cream and pour the remainder over the barley. Keep warm over a low heat.
  • Meanwhile, separate the layers of malted onions and finish by frying in a hot pan, with a little oil and butter, until golden.
  • Just before serving, add the Parmesan and lemon juice to the barley risotto and salt, to taste. Spoon on to the centre of each plate, then slice the cheeks and arrange on top of the risotto. Place 3 malted onion wedges around the side and drizzle over the reduced ale stock.

This is a recipe of my mother, Mary Marble Wettergreen, which she often prepared in the oven. But I have found that lamb shanks are ideally suited to the crockpot,. Assemble the crockpot version the night before or very early in the morning.

4 (8 ounce) lamb shanks
2 tablespoons olive oil
3 fresh garlic cloves (or 1 tsp. garlic powder)
1 medium onion, chopped fine
2 bay leaves
1/2 teaspoon dried thyme (or 2 tsp. fresh thyme)
1 pinch nutmeg (optional)
2 tablespoons salt
3/4 cup pearl barley
1 (14 ounce) can tomatoes, chopped
1 tablespoon tomato paste
1 cup water
1/2 cup dry red wine (such as burgundy (or substitute water)

Steps:

  • In heavy skillet or dutch oven, brown lamb shanks in hot olive oil. Remove shanks and set aside.
  • Saute onion, garlic and spices in oil until onion is soft.
  • At this point you can transfer the entire dish to the crock pot, or cook it in the dutch oven. Add salt, barley, tomatoes, tomato paste, water (and wine if desired) to shanks. Make sure all the barley is immersed in liquid.
  • TO BAKE: Cover Dutch oven closely and bake in a 325 degree oven for 3 hours or until shanks are very tender and falling off the bone.
  • CROCKPOT: Cook the dish on "Low" for at least 8 hours. I found it easiest to assemble the night before and then just plug in the crockpot when I leave for work in the morning.
  • In either case, turn off the heat and let the dish sit uncovered for 10-20 minutes. Use a tablespoon and skim off any excess fat from the top before serving.

1 Tbsp. plus 2 tsp. kosher salt
1 Tbsp. freshly ground black pepper
1 Tbsp. (or more) canola or vegetable oil
5 garlic cloves, crushed
2 Tbsp. tomato paste
1/2 cup red or white wine vinegar
1 1/2 cups (or more) beef or chicken stock
4 dried bay leaves

Steps:

  • Season beef on all sides with salt and pepper. Let sit at room temperature at least 45 minutes or up to 1 hour.
  • Preheat oven to 275°F. Heat 1 Tbsp. oil in a large Dutch oven over medium-high. Working in batches and adding more oil if needed, sear meat until browned on all sides, 4-5 minutes per side. Transfer to a plate.
  • Add garlic and tomato paste to hot pot and stir to coat. Cook over medium-high heat, stirring, until fragrant, 1-2 minutes. Add vinegar and scrape up browned bits from bottom of pot. Stir in stock and bay leaves, then nestle short ribs back into pot. The liquid should just cover the meat; if it doesn't, add more stock or water until it does. Transfer to oven and braise until meat falls apart easily when shredded with a fork, 3 1/2-4 hours. Let cool in liquid.
  • Do Ahead: Beef can be cooked up to 5 days ahead. Store in braising liquid (to keep it from drying out) in an airtight container and chill, or freeze up to 2 months. Before reheating, break off and discard fat cap that forms on top.
  • Cooks' Note: To cook in a slow cooker, transfer to a slow cooker instead of oven and cook on high for 4 hours or on low for 8 hours.

2 pounds (1kg) boneless beef chuck roast, cut into 1 1/2-inch steaks, or 3 pounds (1.3kg) bone-in beef short ribs, ribs removed and reserved (see note)
Kosher salt and freshly ground black pepper
1 tablespoon (15ml) canola oil
3 large carrots (10 ounces; 280g), diced
1 large yellow onion (12 ounces; 340g), diced
2 ribs celery (6 ounces; 170g), diced
4 medium cloves garlic, roughly chopped
3 quarts (3L) homemade or store-bought chicken stock (see note)
Sachet of 2 sprigs fresh thyme, 1 bay leaf, and about 5 whole black peppercorns
1 cup pearled barley (7 ounces; 200g)
1/2 teaspoon (3ml) Asian fish sauce (optional)
Minced fresh parsley, for garnish

Steps:

  • Season beef with salt and pepper. In a large pot or Dutch oven, heat oil over high heat until lightly smoking. Working in batches if necessary, add beef and cook, turning occasionally, until well browned on all sides, about 5 minutes per side. Transfer to a large platter.
  • Add carrot, onion, celery, and garlic to pot and cook, stirring and scraping up any browned bits from the bottom, until lightly browned, about 6 minutes. Scrape vegetables into a heatproof bowl and set aside. Add stock to pot, return to heat, and scrape up any browned bits from bottom of pot.
  • Meanwhile, cut beef into chunks and add to pot, along with reserved bones, if using, and herb sachet. Bring to a simmer, then reduce heat to maintain a low simmer and cook until beef is tender, 1 to 2 hours; skim any foam that rises to the top.
  • Discard bones and herb sachet. Add barley, reserved vegetables, and fish sauce, if using, and simmer until barley and vegetables are tender, about 30 minutes. Season with salt and pepper. If soup is too dry, top up with water to achieve desired consistency. Serve, garnishing with parsley.
