ORANGE CAKE
Orange Cake is so easy to make, we start with a box mix and use whole navel oranges to make it moist and amazing!

Steps:
- Combine cake mix, butter, eggs, and orange puree and combine with an electric mixer.
- Pour into two greased 8 inch round baking pans and bake on center rack at 350F for about 30 minutes, until a toothpick comes out clean. Allow to cool completely.
- For the icing, while cake is cooling, whisk together 1 can of icing and 1 cup of powdered sugar. Add to a piping bag.
- For the glaze, in a small bowl add 1 cup of powdered sugar and vanilla extract. Then whisk in orange juice until you reach your desired consistency.
- When cake is cooled, spread remaining can of icing between layers. Then pipe powdered sugar/icing mix on outside of cake. To pipe rosettes, start in the middle then move the tip in a counter-clockwise spiral around the center.
- When the sides are covered, pipe a circle on the top of the cake, at the outermost edge, to keep the glaze from spilling over.
- Pour glaze on top of cake, and garnish with a slice of orange.

- Heat oven to 350°F. Grease and flour 12-cup fluted tube cake pan.
- In large bowl, beat cake mix, dry pudding mix, oil, water and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. Pour into pan.
- Bake 38 to 40 minutes or until toothpick inserted in center comes out clean.
- Meanwhile, in medium bowl, mix powdered sugar, melted butter and orange juice until powdered sugar dissolves.

- Preheat oven to 350 degrees F (175 degrees C). Grease a large bundt pan.
- Combine the cake mix, pudding mix, water, oil, and eggs together. Mix with an electric mixer on medium speed for 2 minutes. Pour batter into bundt pan.

- Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix and cold water with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. (Do not use fluted tube cake pan or 9-inch angel food pan or batter will overflow.)
- Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and are not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle until cake is completely cool, about 2 hours.
- Meanwhile, in 2-quart saucepan, beat egg yolks, sugar, cornstarch, orange juice and salt with wire whisk until blended. Add butter; cook 2 to 3 minutes over medium heat, stirring frequently, until boiling. Boil 3 to 5 minutes, stirring constantly, until thickened and mixture coats the back of a spoon. Immediately pour orange mixture (orange curd) through fine-mesh strainer into medium bowl. Cover with plastic wrap, pressing wrap directly onto surface of orange curd. Refrigerate about 1 hour or until completely chilled.
- In medium bowl, beat whipping cream on high speed until stiff peaks form. Fold whipped cream and grated orange peel into orange curd.
- On serving plate, place cake with browned side down. Cut off top 1/3 of cake, using long, sharp knife; set aside. Scoop out 1-inch-wide and 1-inch-deep tunnel around cake. Set aside scooped-out cake for another use. Spoon 1 1/3 cups orange cream into tunnel. Replace top of cake to seal filling. Frost top and side of cake with remaining orange cream. Refrigerate at least 2 hours before serving. Garnish with orange twists. Store covered in refrigerator.

- 1. Move your oven rack to the bottom position. Preheat oven to 350. Empty mix in mixing bowl. Add orange jello. Pour in orange juice. Mix per package directions. Bake 35 minutes. Turn upside down on a bottle and cool completely.
- 2. When cake is completely cooled remove from pan w/a filet or boning knife. Measure 1 c. of powdered sugar in a 2 c. measuring cup, add 2 tsp. of orange juice and reserved orange zest, mix. Drizzle over the top of the cake letting some drizzle down the sides for effect =)

- 1. Preheat oven to 325. Generously grease and flour bundt pan, set aside.
- 2. Add all the cake ingredients as listed above, mix on medium speed for 2 minutes. Pour batter into baking dish. Bake for 1 hour. Watch carefully... everyone's oven may be different, could be less, then again could be more.
- 3. Cool 10 minutes before removing from pan. Meanwhile whisk together powdered sugar, orange juice and orange zest. Place cake on cake plate, prick the cake with a fork..then pour glaze evenly over cake. Allow to cool completely before serving.
- 4. If desired...melt some chocolate and drizzle on top of the cake. and, Or.....serve with a dollop of whipping cream! I love whipped cream, so I want it on everything..LOL!
- 5. TIPS: You can also make this in a 9 x13 pan, if desired to do so. It is important that you grease and flour your bundt pan..this cake is very moist and has a tendency to stick if not greased properly. If making in a 9 x 13 pan you don't have to remove the cake, poke holes just as above and pour glaze over the top.

- 1. Preheat oven to 350
- 2. Mix first four ingredients together until smooth.
- 3. Spray bottom of bundt cake pan. Put pecans in bottom and pour cake batter over pecans. Bake 50-60 min.

- In a large bowl, using an electric mixer to combine the cake mix, pudding mix, vegetable oil, orange juice, and eggs. Mix for about 2 minutes. Pour the cake mix into the prepared pan.
- Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean and the cake is just starting to pull away from the sides of the pan. Allow the cake to cool in the pan while you make the glaze.
- In a small sauce pan, combine the powdered sugar, orange juice, and butter. Cook over medium-low heat until the butter has melted, stirring frequently.
- Use a skewer or toothpick to poke holes in the cake. Pour the warm glaze over the cake while it is still in the cake pan. It's going to seem like a lot of glaze, but just keep pouring. Allow to cool for 15 to 20 more minutes, or until the cake is cool and most of the glaze has been absorbed, then invert the cake onto a serving platter. Allow to cool completely before serving. This cake is best served after it has rested for about 8 hours.

- HEAT OVEN TO 325.
- Spray Bundt Pan with non-stick spray (Canola Oil) then pour 1 cup of pecans in the pan.

This recipe was given to me by a co-worker's mother who lives in Alabama. It is a refreshing cake that is a big hit everytime I make it! It is very easy to prepare and the results are amazing!
